General principles
Fruit pie dough can be anything you like. The filling of apples and pears goes well with a yeast and biscuit base; you can use puff pastry or shortbread dough. In any case, the baked goods will turn out delicious.
Fruits for the filling can be taken in different proportions, but it is better if there are approximately equal numbers of apples and pears, then the taste of the fruit will be combined as harmoniously as possible. It is better to cut the skin off the fruit, but if it is a summer fruit with a thin skin, then you don’t have to peel the fruit.
Pies with apple-fruit filling can be open or closed. You can add additional ingredients to the fruit filling - other fruits, dried fruits, nuts. Such additives will diversify the taste of baked goods.

Recipe for “Pear and Apple Pie”:
Peel two large juicy pears and applesauce, cut into slices and add lemon juice.
From the total amount of powdered sugar, leave one spoon for sprinkling. Beat the eggs with the rest of the powdered sugar, add milk and flavourless sunflower oil.
Add the rest of the lemon juice, soft cottage cheese and flour mixed with baking powder. Knead the dough. Grease a mold (mine with a diameter of 25 cm) and sprinkle with flour. Lay out the dough and smooth it out.
Arrange fruit slices, alternating apples with pears. Sprinkle brown sugar on top.
Bake in a preheated oven at 170 degrees for about 40 minutes, check your oven. Ready to test with a match. Cool the finished cake in the pan, then remove from the pan and sprinkle powdered sugar around the edge.

Pie with apples and pears “Invisible”
Classic French pie “Invisible”, which has the maximum amount of filling and very little dough. When baked, the dough turns into a delicate and aromatic vanilla cream.
The pie is very simple to make, all ingredients are available. You can use only apples, or only pears.
Ingredients:
- Apples and pears – 800 g
- Milk – 100 g
- Melted butter – 30 g
- Flour – 70 g
- Baking powder – 1 tsp.
- Egg – 2 pcs.
- Sugar – 50 g
- Vanilla sugar – 10 g
- Salt – 1 pinch
Streusel:
- Flour – 80 g
- Sugar – 30 g
- Vanilla sugar – 10 g
- Soft butter – 40 g
- Salt – 1 pinch
Preparing the pie:
- Beat eggs with sugar, vanilla sugar and a pinch of salt. Add milk, butter, flour and baking powder.
- Peel pears and apples from skin and core. Cut into very thin slices.
- Dip the slices into the dough so that each slice is coated on all sides.
- Grease the mold with butter and line with parchment. You can take a round, square or rectangular shape. The size of my form is 10 by 22 cm.
- Place the apples and pears in the pan and pour the remaining batter on top. Bake for 30 minutes at 180-190 degrees.
- For the streusel, mix flour, sugar, vanilla sugar, salt, and grind into crumbs. Sprinkle the pie with this crumb, bake for another 20 minutes.
How to make “Invisible Pie” from apples and pears
Prepare the ingredients to make the pie.
Break the eggs into a bowl.
Beat the eggs with a mixer or whisk.
Add sugar and beat eggs with sugar until fluffy white foam.
Pour in the melted butter.
Pour in the milk.
Pour flour into a bowl.
Mix all dough ingredients. It will be liquid.
Wash the apples and pears, peel and cut into thin slices.
Add baking powder to the dough.

Fruit pie baked from yeast dough turns out airy and soft. We will prepare it using instant dry yeast.
For the pie you need:
- 200 ml milk;
- 12-14 tablespoons of flour;
- 1 packet (11 g) instant yeast;
- 2 eggs;
- 180 gr. sugar and an additional 4 tablespoons;
- 150 ml vegetable oil;
- 0.5 teaspoon salt;
- 1 small apple;
- 1 large pear;
- 1 tablespoon juice squeezed from lemon.
Advice! When purchasing yeast, make sure that it is instant. This version of yeast is mixed with flour. Active yeast granules are mixed with liquid and allowed to rise.
The dough for this pie is prepared with yeast, but it turns out quite liquid. It cannot be kneaded with your hands or rolled out; its consistency is similar to that of pancake dough.
Beat the eggs, add milk and sugar, add butter and flour mixed with yeast. Transfer the semi-liquid dough into a greased pan and let it stand in a warm place for about 1 hour. Cook in the oven (180 degrees) for forty to forty-five minutes. We take out the finished base, place it on a wire rack and leave until it cools completely.
Chop the fruits and sprinkle with lemon juice. Pour 2 tablespoons of water into a frying pan and a saucepan with a thick bottom and add twice as much sugar (4 tablespoons). Let the mixture boil, then pour the fruit into the syrup and boil until soft. Let the filling cool.
Cut the finished base in half crosswise, place the filling on the bottom crust, cover with the top of the pie, pressing lightly. Grease the top part with caramel syrup, which remains after cooking the fruit.
French pie with apple and pear filling
The French tart is delicious and beautiful - an open shortbread pie with apple and pear filling.
Ingredients for this bake:
- 70 gr. butter;
- 130 gr. flour;
- 50 gr. powdered sugar (you can use sugar, but powder makes the dough softer);

Thinly slice the peeled fruits. Place the dough in a greased baking dish and begin to level it with your fingers, forming something like a bowl with sides. Sprinkle the bottom with half the amount of brown sugar. Then lay out the fruit, alternating slices of apples and pears. Sprinkle a mixture of cinnamon and brown sugar on top. Cook for about 25 minutes at 200 degrees. Cool slightly and decorate with colored marmalade cut into small pieces.
Nut apple and pear pie
Prepare nut apple and pear pie with ground almonds.
For the base of this baking you need:
- 1 cup flour;
- 0.5 cups sugar;
- 100 gr. butter;
- 1 teaspoon baking powder;
- 50 gr. ground almonds;
- 3 eggs;
- 2-3 spoons of milk;
- 2 teaspoons vanilla sugar.
For filling:
- 1 apple and 1 pear;
- 40 gr. Sahara;
- 50 gr. butter;
- 0.5 teaspoon of cinnamon.
Let's start by preparing the filling. Melt the butter in a frying pan, add sugar and let it melt. Add diced fruits. Cook until the fruit is soft. Pieces of apples and pears need to be turned over frequently so that they are covered with caramel on all sides.
Now you can prepare the base. Sift the flour with the addition of baking powder and mix with ground almonds. In a separate bowl, beat eggs with sugar, gradually adding soft butter, vanilla sugar and milk. Pour the sifted mixture of flour and baking powder into the well-beaten mixture and knead the dough.
We put it in a mold and place caramelized fruit on top. Cook the dessert for about forty minutes at 180 degrees.
Pear pie with frangipane
Pear pie, like any pastry, is especially good when piping hot. But even if the guests didn’t finish the pie, don’t be upset - the next day it will also be very tasty, thanks to the frangipane.
Ingredients
For the test
- Wheat flour - 250 g
- Butter - 125 g
- Sugar - 50 g
- Salt - 1 pinch
- Ground cinnamon - 1 pinch
For filling
- Pears - 4 pcs.
- Brown sugar - 3 tbsp. l.
- Butter - 50 g
- Almond flakes - 1 tbsp. l.
For the frangipane:
- Butter - 75 g
- Sugar - 75 g
- Egg - 1 pc.
- Wheat flour - 20 g
- Ground almonds 75 g
- Vanilla extract
1. For the dough, mix flour with cold butter, cut into pieces, in a bowl, grind the mixture with your hands (you can also use a food processor) until the consistency of bread crumbs. Add sugar, salt and cinnamon. Pour in a little (about 50 ml) water and knead the dough.
2. Make a ball out of the dough, wrap it in cling film and put it in the refrigerator for 30 minutes.
3. For the filling, cut the unpeeled pears into quarters, remove the seeds, and cut each quarter in half. Heat 2 tbsp in a frying pan. l. sugar with butter, when the mass starts to bubble, add the pears. Cook over medium heat for a few minutes until the pears soften and the sauce thickens slightly.
4. Remove the pears and put the sauce in the refrigerator.
5. For frangipane, beat softened butter with sugar until fluffy, add lightly beaten egg, flour, almonds and vanilla. Beat well again.
6. Grease the baking sheet with butter or cover with a cooking mat (you can use baking paper).
7. Roll out the dough into a layer no thicker than 4 mm and place on a baking sheet. Spread the frangipane over the dough, leaving 2cm from the edges. Add the pears and sprinkle them with the remaining brown sugar and flaked almonds. Bake for 20 minutes in an oven preheated to 200°C until the edges of the dough are lightly browned.
8. Let the cake cool for 10-15 minutes. Serve pie with chilled sauce. You can add a scoop of ice cream.
Jellied pie with apples and pears on kefir

- 2 eggs;
- 9-10 tablespoons of flour;
- 120 gr. butter;
- 5 tablespoons of sugar;
- 200 ml kefir;
- 1-2 apples;
- 1 large pear;
- 2 teaspoons of ready-made baking powder (baking powder);
- 1 teaspoon cinnamon.
Let's prepare a heat-resistant dish in which we will bake our dessert. The inside of the dishes should be greased with a thin layer of oil and lightly “powdered” with flour or semolina.
Chop the fruits arbitrarily, but not large, and mix. Heat the oil and cool slightly. Mix kefir and eggs with butter, add sugar and beat. When the mass becomes homogeneous, start adding flour little by little, without stopping whisking. The dough will be thin and runny.
Pour some batter into the bottom of the prepared pan. Distribute it so that it covers the entire bottom with a thin layer. Lay out half the fruit slices and sprinkle with cinnamon. Pour a little more dough on top so that the fruit layer is completely covered. Place the remaining fruit and sprinkle with cinnamon again. Finally, pour in all the remaining dough and smooth it out.
Cook for 50 minutes. Then turn off the heat and open the oven door. After 20 minutes, remove the mold and cover it with a folded towel. All these manipulations are aimed at ensuring that the cake cools slowly. This will prevent the baked goods from settling and the cake will remain soft and fluffy.
Lush charlotte with apples and pears
There is hardly a housewife who does not have a charlotte recipe written down in her notebook. This simple dish helps us out when we want to prepare dessert quickly and at no extra cost. Classic charlotte is baked with apples, but you can replace them with other fruits or berries.

- A simple charlotte is a sponge cake, so there is no need to add baking powder. - Preheat the oven to 180 degrees Celsius.
- If the apples have tough skins, remove them. Cut the fruit into cubes.
- Grind the yolks with a couple of tablespoons of sugar, beat the rest of the sugar with the whites until stiff foam.
- Mix the yolks and whites with a spoon, adding flour little by little. Add apples and mix.
- Grease the pan with oil and lightly dust with flour, removing excess.

Apple and pear pie "Charly"
INGREDIENTS
Dough
chicken eggs | 2 pcs. |
sugar | 3 tbsp. l. |
flour | 5 tbsp. l. |
butter | 150 g |
baking powder | 1 ½ tsp. |
sea salt | 1 pinch |
Filling
pears | 2 pcs. |
apples | 1 PC. |
cardamom | 1 tsp. |
nuts | 1 handful |
Additionally
flour | 1 tsp. |
butter | 10 g |
step 1/7 Turn on the oven at 155°C. French shirt: grease the mold with butter and dust the top with flour.
step 2/7 Chop the pears and apple quite coarsely.
step 3/7 Beat butter with sugar, add eggs, beat again. Add flour, salt, baking powder. Whisk everything quickly.
step 4/7 Place the filling in the mold, sprinkle with cardamom and nuts. Any nuts will do. I have walnuts.
step 5/7 Lay out the dough. Place in the oven for 30–45 minutes. Baking time depends on the capabilities of your oven.
step 6/7 Remove from oven.
step 7/7 Enjoy your tea!
Apple and pear pie with meringue
A thin layer of dough and a lot of filling is an airy delicacy that all your household and guests will appreciate after a festive dinner.
Ingredients for 5 servings:
- 3 pcs. chicken eggs.
- 1 tbsp. Sahara.
- 0.5 tbsp. warm butter.
- 2 tsp. baking powder.
- 0.25 kg. flour.
- 2 pcs. large juicy apples.
- 2 pcs. ripe and firm pears.
Recipe:
- Cream the butter, gradually adding a little sugar. Then add two yolks, one egg and beat again. Gradually add flour with baking powder. The dough should not stick to the countertop. Add more flour if necessary.
- The mold must be greased with oil or covered with special paper. Then spread the dough in a thin layer.
- Peel pears and apples from skins and seeds. Then cut into medium-sized pieces and place on top of the dough. The pie must be placed in an oven preheated to 180ºC. At this temperature it will bake for about 30 minutes.
- Beat the whites of two eggs until stiff foam. Add sugar and beat again. Remove the cake from the oven after 30 minutes. Spread the foam over the top of the pie and return to the oven for 15 minutes. It is advisable to lower the temperature to 140 ºС.
Let the pie cool and you can serve it on the holiday table.
