Apple and Chinese pear pie. Pie with apples and pears in a juicy filling. How to make chocolate caramel pear pie

General principles

Fruit pie dough can be anything you like. The filling of apples and pears goes well with a yeast and biscuit base; you can use puff pastry or shortbread dough. In any case, the baked goods will turn out delicious.

Fruits for the filling can be taken in different proportions, but it is better if there are approximately equal numbers of apples and pears, then the taste of the fruit will be combined as harmoniously as possible. It is better to cut the skin off the fruit, but if it is a summer fruit with a thin skin, then you don’t have to peel the fruit.

Pies with apple-fruit filling can be open or closed. You can add additional ingredients to the fruit filling - other fruits, dried fruits, nuts. Such additives will diversify the taste of baked goods.

You can serve apple pie with pears by simply sprinkling powdered sugar on top. You can also serve the baked goods with whipped cream or ice cream.

Jellied pie with apples and pears on kefir

It’s easy to prepare a jellied apple and pear pie mixed with kefir. Even a novice home pastry chef can easily handle the preparation of this delicious dessert.

The dough cooks quickly, so you should start cooking when you turn on the oven. While we are working with the ingredients, it will have time to warm up to 190 degrees.

Let's prepare the necessary ingredients:

  • 2 eggs;
  • 9-10 tablespoons of flour;
  • 120 gr. butter;
  • 5 tablespoons of sugar;
  • 200 ml kefir;
  • 1-2 apples;
  • 1 large pear;
  • 2 teaspoons of ready-made baking powder (baking powder);
  • 1 teaspoon cinnamon.

Let's prepare a heat-resistant dish in which we will bake our dessert. The inside of the dishes should be greased with a thin layer of oil and lightly “powdered” with flour or semolina.

Chop the fruits arbitrarily, but not large, and mix. Heat the oil and cool slightly. Mix kefir and eggs with butter, add sugar and beat. When the mass becomes homogeneous, start adding flour little by little, without stopping whisking. The dough will be thin and runny.

Pour some batter into the bottom of the prepared pan. Distribute it so that it covers the entire bottom with a thin layer. Lay out half the fruit slices and sprinkle with cinnamon. Pour a little more dough on top so that the fruit layer is completely covered. Place the remaining fruit and sprinkle with cinnamon again. Finally, pour in all the remaining dough and smooth it out.

Cook for 50 minutes. Then turn off the heat and open the oven door. After 20 minutes, remove the mold and cover it with a folded towel. All these manipulations are aimed at ensuring that the cake cools slowly. This will prevent the baked goods from settling and the cake will remain soft and fluffy.

Lush charlotte with apples and pears

There is hardly a housewife who does not have a charlotte recipe written down in her notebook. This simple dish helps us out when we want to prepare dessert quickly and at no extra cost. Classic charlotte is baked with apples, but you can replace them with other fruits or berries.

Useful tips

Any housewife knows how to cook charlotte, but we will remind you of some secrets of its preparation:

  1. A simple charlotte is a sponge cake, so there is no need to add baking powder. To achieve fluffiness, divide the eggs into whites and yolks, separately grind the yolks with a small amount of sugar, and beat the whites with a mixer with the remaining sugar until a fluffy foam that holds well on the whisk without losing its shape. Make sure that there is not a drop of yolk left in the whites.
  2. If you are not confident in your ability to prepare biscuit dough, add a little soda, but do not overdo it so that the taste is not noticeable.
  3. To make the charlotte dough fluffy and airy, sift the flour. This way you will not only rid it of possible impurities, but also saturate it with oxygen.
  4. The charlotte should be in the oven, preheated to 180–200 degrees, for about half an hour. You can check whether the dough is baked using a wooden stick.
  5. Vanilla and cinnamon are great flavoring options.
  6. In old recipes it is recommended to cut the apples into pieces and mix with the dough. A very beautiful option is to place the apples, cut into thin slices, at the bottom of the mold and fill with dough.
  7. You can use different varieties of red and green apples, some sour, some sweet.
  8. Do not look into the oven for the first 20 minutes; temperature changes may cause the dough to settle.

Autumn pear crunch

Do you prefer crispy baked goods?
Then prepare the pear crumble. Cut 3-4 pears into thin slices and place in ceramic molds greased with butter. Sprinkle the fruit with lemon juice, sprinkle with sugar and cinnamon. Grate 120 g of frozen butter and grind with 2 tbsp. l. Sahara. Add 70 g of flour, 200 g of oatmeal, vanilla and nutmeg to taste. Knead the crumbs with your hands and fill the molds with fruit. There is no need to compact it - the pear should “breathe”. You can sprinkle nuts and pumpkin seeds on top. Place the molds in the oven at 180°C for half an hour. A golden brown crust will indicate that the crumble is ready and you need to quickly brew the tea. Late ripe apples and pears can decorate any homemade baked goods. Cut into cubes with a side of 1 cm and sprinkle with the juice of half a lemon to prevent them from darkening.

Melt butter in a saucepan. Add fruit, cinnamon and sugar. Cook, stirring, until the apples are soft. Turn off the fire.

Prepare the dough. Sift flour with baking powder into a large bowl. Add ground almonds and mix.

In a separate small bowl, lightly beat the eggs with the milk and vanilla essence with a fork.

Cream butter and sugar until creamy. Add the flour and egg mixtures alternately, beating thoroughly after each addition. You need to start and finish with flour (some flour - part eggs - part flour - part eggs - part flour).

Place the dough in a greased form (mine is 23 cm). Distribute the fruit evenly on top.

Place the pan in an oven preheated to 180 degrees and bake for about 40 minutes until dry. Remove from the oven and cool. Cut into pieces and serve.

Ingredients for making apple and pear charlotte:

  • 3 fresh medium-sized eggs;
  • 1 cup wheat flour;
  • 1 cup granulated sugar (if you don’t like sweets, you can use 3/4 cup or less);
  • 1 medium apple;
  • 1-2 medium pears;
  • 0.5 teaspoon vanilla sugar;
  • 0.5 teaspoon baking powder;
  • Powdered sugar (for sprinkling).

How to cook charlotte with apples and pears

First, break the eggs into a deep cup, not forgetting to wash them first. Then add a glass of sugar (or a little less) there.

We begin to thoroughly beat everything with a mixer. First at low speed, gradually increasing it. As a result, after 3-4 minutes our mixture should turn white and the sugar should completely dissolve.

Then pour a glass of flour into the same cup.

It is advisable to sift the flour through a sieve to saturate the mixture with oxygen. It is with this method that baked goods turn out especially fluffy and tasty. Beat the mixture at low speed until all the flour is well incorporated.

Then add a little vanilla sugar and baking powder. If there is no baking powder, no problem. It can be replaced with regular baking soda slaked with vinegar. 0.5 teaspoon of soda is enough for our volume.

Mix our mixture thoroughly until smooth.

The next step is cooking the apples and pears. We cut them into small pieces. It is advisable to take pears for charlotte that are very ripe and aromatic; for example, a variety like “Duchess” is perfect. You can take any apples. The main thing is that they are juicy and slightly sour. If the apples have a very dense and tough peel, then it is best to cut it off.

Then take a baking dish. In our case, this is a silicone mold with a diameter of 25 cm. Lightly moisten it with cold water and wipe dry. Pour a little more than half of our mixture onto the bottom, leveling it.

Then carefully place pieces of apples and pears on top of the dough. Make sure the filling is distributed evenly.

Teaser network

And the final touch - pour the remaining dough on top, spreading it slightly with a spoon. It is advisable that pieces of apples and pears do not peek out of the dough, otherwise they may burn too much.

Place the pan in an oven preheated to 180°C. Bake at this temperature for 30–35 minutes. It is better not to look into the oven during the first minutes, as this may cause the cake to fall. We check the readiness of our baked goods using a wooden skewer or toothpick. You need to pierce the dough and touch the stick. If it is raw, then the pie is not ready yet. If the stick is dry, the charlotte can be removed. It is best to remove the cake from the silicone mold immediately, otherwise it may “sweat.” First turn it over onto one plate, bottom up. Then - to something else. Now you need to wait until the cake has cooled down and you can decorate. For example, the sides can be decorated with fresh apples, and the middle with powdered sugar. Just don’t immediately sprinkle the charlotte with powder - it will simply melt on the warm dough. Our delicious charlotte is ready!

Charlotte can be prepared not only with apples and pears. This simple recipe allows you to use other fruits and berries for the filling. Moreover, both fresh and frozen, which is very convenient in winter. These could be, for example, peaches, plums, raspberries, blackberries, cherries, etc. Just do not forget that some berries strongly color the dough. For example, if you use black currants, the cake may turn out blue. Charlotte can also be prepared with cottage cheese, which goes well with apples. It can be added directly to the dough or used as an addition to the apple filling. Cinnamon gives charlotte a piquant flavor. If you love this spice, then be sure to try using it in baking.

Pie with apples and pears in the oven - recipe with photo

:

Let's start preparing the pie with shortcrust pastry: sift the flour through a sieve into a suitable deep container, filling it and enriching it with air. You can immediately add a pinch of salt, vanillin and baking powder.

We take the butter for the pie out of the freezer (in extreme cases, from the refrigerator, but not at room temperature!), chop it directly into the flour into small pieces.

Now beat the egg into the hole and add half a glass of sugar. Chop the butter with a knife or mash it with a fork, mixing it with other ingredients along the way.

When the butter pieces become smaller, grind them into crumbs and fasten the shortbread dough into a ball. You can entrust such labor-intensive work to a food processor (iron blade attachment). The dough ball should be placed in the refrigerator immediately. At all stages of cooking, do not allow the dough to melt and release oil - this will cause your baked goods to be tough and tasteless.

Since we need at least half an hour to cool the freshly prepared shortcrust pastry, we have time to prepare the assorted fruit filling of apples and pears, as well as sour cream filling. We peel apples and pears from the cores; if desired, and depending on the variety, we peel them. We cut it into large slices of arbitrary shape and place it in a frying pan.

Sprinkle apples and pears with sugar (2-3 tbsp) and cinnamon. Slowly heat the pan until the sugar begins to melt, then stir in the caramel-cinnamon mixture to coat the fruit pieces, turning them from side to side with a spatula. As soon as the fruit softens a little, turn off the heat and let cool.

To prepare sour cream filling, mix sour cream, egg, remaining sugar (or add enough sugar to make it sweeter), sift starch through a sieve.

Beat with a whisk, giving the filling a bubbly and airy structure, about 2-3 minutes.

It's time to put all the ingredients together: for the base of the pie, take 2/3 of the entire portion of chilled shortcrust pastry, form it into a thin layer with small sides in a springform pan.

We transfer apples and pears from the frying pan; if there is a small amount of juice, pour it over the fruit.

Pour sour cream over caramelized apples and pears with cinnamon.

Use the remaining 1/3 of the dough to form pie decorations using cookie cutters. We lay out the figures on the filling and fruit.

Bake the pie with apples and pears in the oven for about 40-45 minutes at 180.

Then remove, cool and dust with fine powdered sugar.

Having familiarized yourself with the original versions of closed and upside-down pies filled with apples, as well as delicious confectionery products with nut and pear fillings offered on this page, you will be able to replenish your culinary piggy bank.

Apples and pears are best consumed fresh. At the same time, fruits grown in your own garden have one important advantage over purchased ones. Before delivery to the store, fruits are usually covered with a layer of wax for better preservation, so it is best to peel them.

And you don’t need to cut the skin off your own apples and pears, and this is a serious plus, because it is under it that most of the beneficial substances are found. When properly stored, the fruits do not lose their aroma and taste, and most importantly, they retain all their vitamins.

But enjoying fresh fruits does not exclude preparing light and healthy dishes. To make them look beautiful, quickly sprinkle the cut apples and pears with lemon juice, then their flesh will not darken, but will remain light.
