Kefir pie with jam. Step-by-step recipe with photos

Probably, many people like tea with something tasty, for example, with a pie. Dessert made with kefir is often prepared quickly and does not require any special investment. You can also add jam to it, which will make the dough even more rich and tender. You can use any filling according to the chef’s taste. Variants with sourness, for example, currant, are perfect. A quick kefir pie with jam can be an excellent recipe for a busy housewife, because it is so easy to prepare. There are really a lot of recipes. Some require thick jam, others require thin jam. And in some versions, they use already fermented berry delicacy, which reacts with soda and makes the dough tender and fluffy. This dessert is not only easy to eat, but also enjoyable to prepare.

Pie with currant jam

Due to the color of the berry, the dough itself may not turn out to be a very appetizing color, so cocoa is added to it. Light sourness goes well with the rich base and chocolate aroma. For this recipe for a quick kefir pie with jam you need to take:

  • a glass of kefir with a fat content of 2.5 percent;
  • a glass of jam;
  • one egg;
  • a teaspoon of baking soda or one small packet of baking powder;
  • a tablespoon of cocoa;
  • three tablespoons of sugar;
  • half a glass of vegetable oil;
  • 400 grams of flour;
  • 20 grams of powdered sugar to decorate the finished cake.

You can make this quick kefir pie with jam in any baking dish. A detachable one would also work great.

Useful cooking tips

  1. If you don't have baking powder on hand, you can replace it with baking soda. Just don’t extinguish it with vinegar, this is a mistake due to which the dough will not turn out crumbly. This trick works with recipes that contain an acidic environment (berries, kefir, apples, lemon juice). Baking soda reacts chemically with the acid and acts as a leavening agent. For recipes without an acidic component, it is still better to purchase industrial baking powder for leavening;
  2. It is very convenient to melt chocolate in a polyethylene culinary cornet. To do this, you need to break the chocolate, put it in a cornet, tie it tightly and immerse it in boiling water. This way the chocolate will never overheat or become lumps;
  3. If a recipe uses apples to decorate baked goods, it is best to keep them in lemon juice between cooking stages. This will prevent them from darkening when exposed to air.

How to make currant pie?

Kefir is poured into a bowl. It must be chilled. Add all the jam to it and mix with a whisk. As a result, both ingredients should combine. Beat in the egg and mix again. Add sugar and pour in sunflower oil. Continue mixing the products. If the jam is very sour, you can slightly increase the amount of sugar, and vice versa.

Add soda and stir. After this, the color of the dough for a simple kefir pie will change. Add cocoa and mix thoroughly again. After this, sifted flour is introduced in batches so that no lumps form.

Grease the mold for a quick kefir pie with jam. Pour out the dough. Please note that the cake will double in size during baking. Prepare the baked goods in the oven at 190 degrees for forty minutes. Final readiness can be checked with a match. The finished cake is allowed to cool, and then removed from the mold, sprinkled with powder and cut into portions.

Yogurt pie with chicken and herbs

Ingredients:

  • curdled milk - 1 cup
  • egg - 3 pcs.
  • butter - 100 g.
  • baking powder - 10 gr.
  • sugar - 1 tsp.
  • salt - 1 tsp. (without slide)
  • soda - 1 tsp.
  • flour - 4 tbsp.

Pie filling:

  • chicken fillet - 300 g.
  • cheese - 100 g.
  • onion - 2 heads.
  • spices, oil.
  • greenery
  • salad pepper - 2 pcs.

First, let's prepare the filling. Wash the chicken fillet and cut into small cubes. Boil. Chop the onion into half rings and fry in a preheated frying pan with oil. Fry the onion until golden brown. Then add the fillet and fry over low heat for about 2 minutes. There is no need to fry it too much, otherwise the cake will turn out too dry. Season the filling with pepper and leave to cool. When the filling has cooled, add cheese, previously cut into cubes or grated.

When the filling is ready, proceed to the dough. Add soda to the yogurt and leave for 5 minutes. Next, take eggs, sugar and salt, and beat until thick white foam. Gradually introduce yogurt and soda. Pour preheated butter into the dough. Add flour mixed with baking powder. Bring the mass until smooth. Don’t forget that the jellied dough should have the consistency of sour cream; perhaps it will take a little less flour.

Pour half of the dough into the mold and level it out. Lay out the fillet, add herbs and lettuce peppers. Pour in the remaining dough and bake. Preheat the oven to 180 degrees, bake the cake for 40 minutes.

I really love and often make shortbread cookies and shortcrust pastry pies. Traditionally, margarine or butter is used for their preparation. I respect the latter very much and, moreover, love it. But if you cook with it often, it will be a bit greasy (in every sense of the word). A lot has already been said about margarine and spreads, but I think it would be worth recalling that the transgenic fats they contain lead to an increase in the level of “bad” cholesterol in the blood, disrupt the normal functioning of cell membranes, contribute to the development of vascular diseases, etc. Therefore I completely excluded these “products” from my kitchen. Now I make shortbread dough using vegetable oil. Completely safe, tasty and healthy. And what is important is even cheaper and faster than with margarine! And a few more words about margarine. Margarine lovers are more likely to develop angina pectoris, myocardial infarction, arrhythmia and heart failure. It was invented in France to feed the army and the poor - a cheap product for sandwiches and frying. All this happened at the end of the century before last; people had different ideas about food and life. I want to warn you that products made from this dough are a BIT tougher than those made from margarine or butter, but is it worth ruining your blood vessels for the sake of a small difference???

Baking based on sour milk or yogurt is good because you can quickly prepare it and find the right recipes. Indeed, unlike yeast, soda helps to loosen the dough in a matter of minutes, and it is precisely this advantage that attracts many housewives. I have recipes for dessert dishes, and I suggest you familiarize yourself with them right now.

In a separate bowl, mix flour and baking powder. Sift the dry ingredients into the kefir and knead into a homogeneous dough.

Before serving, it is cooled and then decorated, for example, with powdered sugar.

Kefir coffee cake with berry jam in the oven

For people who are partial to chocolate, there is a recipe for a pie based not only on berry jam, but also on cocoa powder. These components combine perfectly with each other, resulting in a culinary masterpiece. To enjoy its taste, you will need to prepare the following ingredients:

  • Wheat flour – 300 g;
  • Berry jam (preferably cherry) – 400 g;
  • Cocoa powder – 100 g;
  • Kefir (at least 3.2%) – 250 ml;
  • Pure drinking water – 150 ml;
  • Olive oil – 150 ml;
  • Cream – 75 ml;
  • Granulated sugar – 150 g;
  • Baking powder for dough – a pack (10-15 g);
  • Milk chocolate – 50 g (1/2 bar).

The cooking time, including kneading the dough and baking, will be 1 hour 45 minutes, and the calorie content per 100 g of the dish will be 588 kcal.

The preparation of this pie should begin by mixing all the dry ingredients together. So, you need to mix wheat flour, cocoa powder, baking powder and granulated sugar.

As for the liquid mixture, you need to shake kefir and water, adding oil to them. Mix the resulting mixture with dry ingredients and cherry jam. The dough is considered ready only if all the ingredients are thoroughly beaten together and do not create lumps.

The result must be distributed over the mold, be it a silicone mold for the oven or a multi-cooker bowl. It is better to treat the container with oil. If you use a multicooker for cooking, the time until done will be 1 hour 15 minutes, but in the case of an oven, 45 minutes will be enough.

While the future baked goods are not yet ready, you can start making chocolate glaze. After all, it will make the pie more presentable for serving. To prepare it, you need to heat the cream over the fire, and then add milk chocolate to it. Use the mixture to brush the surface of the finished pie, as well as its sides.

The fastest pie recipe

What's good about this recipe? It doesn't use many ingredients. In addition, if you take already fermented jam, the structure of the pie will only become more interesting and more porous. So you can safely use the leftover jam. Currants, apples, and pears are perfect. You can also take several types of jam. What do you need to make a simple tea pie with kefir jam? You will need the following products:

  • two glasses of flour;
  • a glass of kefir;
  • 250 ml jam;
  • two eggs;
  • a teaspoon of baking powder;
  • a couple of teaspoons of soda.

Add soda to the jam and mix thoroughly and vigorously. Leave it like this for an hour. It will react. Now add both eggs, kefir, baking powder and flour. After each ingredient, stir the dough. Grease the mold with oil and pour in the dough. If desired, the top of the pie can be sprinkled with vanilla sugar or cinnamon for flavor. Bake at 180 degrees for about half an hour. Cool before serving. You can also decorate the finished cake with powdered sugar.

Quick kefir dough pie with jam

Often, hungry guests may arrive by chance, and if you want to treat them to something special, you can use this recipe for whipping up baked goods.

It may not have a chic design, but its taste is not very different from the original preparation. Thus, you will need:

  • Wheat flour – 400 g;
  • Kefir (at least 3.2%) – 300 ml;
  • Chicken egg – 1 piece;
  • Fruit or apple jam – 1 glass;
  • Granulated sugar – 150 g;
  • Soda, slaked with vinegar - 1 teaspoon.

The cooking time, including mixing the dough and baking, will be 1 hour, and the calorie content per 100 g of the dish will be 338 kcal.

First of all, you need to extinguish the soda using table vinegar. Then add the resulting mixture to the jam, the temperature of which should correspond to the room temperature. Otherwise, its consistency will not be suitable for the pie. Therefore, if the jam has been in the refrigerator for a long time, it should be left for a couple of hours.

Having broken 1 egg, you need to shake it thoroughly, for which you can use a fork rather than a mixer. Then add granulated sugar to it and shake again. Add the egg-sugar mixture to the jam.

The last thing you need to add to the pie dough is wheat flour. Since the jam will most likely be thick, it is advisable to add flour gradually, stirring.

All that remains is to immerse the future baking for tea in the oven for so long until it acquires a ruddy hue.

Half an hour is enough for this.

Pie with a “decorative” top

In this recipe, jam is placed on top. It serves as a wonderful decoration. It is better to take homogeneous options or even jam. Currants, blueberries, raspberries, as well as jams of bright colors look good. For this “elegant” pie you need to take:

  • two glasses of flour, if the dough turns out liquid, then add another third of a glass;
  • half a glass of sugar;
  • the same amount of kefir;
  • 150 grams of margarine;
  • one egg;
  • 100 grams of jam;
  • a quarter teaspoon of salt;
  • a teaspoon of soda.

This pie turns out beautiful and delicious. It cooks very quickly, but you should combine the jam and soda in advance. It is this step that allows you to end up with a tender dough.

Jellied kefir pie with jam in a slow cooker

It is the aspic cooking option that is most common among housewives. By baking a pie this way, you don’t have to spend a lot of effort. However, what you receive will exceed the expectations of your family and guests. To bake a pie you need:

  • Wheat flour – 400 g;
  • Granulated sugar – 150 g;
  • Chicken egg – 1 piece;
  • Kefir (at least 3.2%) – 300 ml;
  • Berry or fruit jam - 1 glass;
  • Soda, slaked with vinegar - 1 teaspoon.

The cooking time, including kneading the dough and baking, will be 45 minutes, and the calorie content per 100 g of the dish will be 338 kcal.

First you need to mix the jam and kefir together with a mixer. It is better to do this in a deep bowl, then the likelihood that the mixture will spill while whipping will be reduced. In addition, if the jam contains large pieces of fruit or berries, you will need to first beat it in a blender.

Afterwards, you need to add soda to the mixture, slaked in advance with vinegar, as well as an egg beaten with granulated sugar. As a result, the dough should be well mixed. To complete it, all that remains is to add wheat flour, which should be done gradually.

One of the excellent baking options would be a multi-cooker. You will need to pour the dough into its bowl, and then set the pressure cooker to the required mode (“Baking”). It should take an hour for the pie to turn golden brown.

Preparing dessert

Flour, salt, soda and sugar are mixed in one bowl. Separately combine kefir and egg. Margarine is chopped into pieces and added to flour. Pour everything with a mixture of kefir and eggs. Knead the dough. It should be quite dense, but soft. The oven is heated to 180 degrees. Grease the baking dish with a piece of butter. Place the dough and level it. Place jam on top. Using a spoon, lightly press it down to create beautiful streaks. Bake the jam pie for 35 minutes. If the top starts to burn during cooking, cover the pan with foil. This pie is served cooled. It's good even on the second day. In addition, this dessert does not require additional decoration.

Pies are a great addition to tea and coffee. However, it is generally accepted that they are difficult to prepare. This is wrong. Kefir pies are always quick. No need to add yeast or make dough. Soda reacts well with fermented milk products, allowing you to get a pie with porous dough. You can also diversify the pie by adding jam. It can be kneaded into dough, decorated with a finished dessert, or used as a filling.
