1. In order to prepare an unusual apple dessert like jelly, you should first soak the gelatin in cold tea for 40 - 50 minutes according to the instructions on the package.
2. Wash the apples, cut out the core and place them in a glass form or on a large plate in one row, cut side down. I had “Antonovka” - the most suitable variety of apples for making baked goods and desserts.
3. Place the pan in the microwave at maximum power for 4 to 6 minutes until the apples are completely softened.
4. Cool the apples slightly, scrape the pulp from the peel with a spoon and grind it with a blender until smooth.
5. Add sugar, cream and almond essence (optional) to the applesauce and beat everything with a mixer into a fluffy mass.

Important! Gelatin should never be boiled, otherwise it will lose its gelling properties, so it is recommended to dissolve it in a water bath. However, to simplify this procedure, I prefer to heat the pan with it over very low heat, stirring all the time and making sure that it does not boil, and if necessary, quickly remove the pan from the heat and stir until the granules are completely dissolved. If there are still small lumps of gelatin left in the pan, you can pass it through a fine sieve.
7. Pour gelatin into the apple mixture in a thin stream and beat everything again.
8. Pour the apple dessert into bowls and refrigerate for 1.5 – 2 hours until completely set.
9. Meanwhile, prepare caramel sauce for the apple dessert. To do this, pour sugar into a small frying pan, add water and place over medium heat.
10. Cook for 5 - 10 minutes, shaking the pan occasionally, until brown caramel forms.
Attention! It is important not to overheat the caramel so that it does not burn. Once the sugar syrup starts to brown, you need to be prepared and remove the caramel from the heat after a few seconds.
11. With constant stirring, first add butter to the caramel, and then gradually pour in the cream. Mix very thoroughly with a wooden spatula until all components are completely combined into a homogeneous mass. At this stage, lumps of caramel may form, but they can be dissolved by vigorously stirring the contents of the pan over low heat.
12. Coarsely chop the roasted almonds. You can also use any other nuts of your choice.
13. Generously pour cooled caramel sauce over the frozen baked apple jelly and sprinkle with nuts. The most delicate apple dessert with caramel and fried nuts is ready!
