  • Pour in kefir, beat the eggs with it.

To bake with kefir you need:

  • 2 chicken eggs;
  • 1 cup of sugar;
  • 1 glass of kefir;
  • half tsp soda;
  • 2 cups of flour;
  • half a glass of vegetable oil;
  • 2 apples;
  • 2 pinches of cinnamon.

Cooking in stages:

  1. Using a mixer, beat the eggs and sugar into a fluffy foam. Pour in kefir, add soda. The soda will be quenched with kefir, so there is no need to quench it separately. Mix until smooth.
  2. Sift flour into the kefir-egg mixture and add vegetable oil. Stir thoroughly so that no flour lumps remain.
  3. Core washed apples and cut into cubes. Grease the mold and dust with flour.
  4. Pour a third of the dough into the bottom of the mold. Place apple cubes on top and sprinkle with cinnamon. Pour in the remaining dough. Spread the dough into the pan using a spatula.
  5. Bake in a preheated oven at 180 degrees for 45-50 minutes. The finished pie should have a golden crust, and the wooden stick should come out dry, without any dough residue.

  • Pears for charlotte are cut into slices or cubes. Place the pieces either on the bottom or on top of the dough. Sometimes they act as a layer.
  • To give the pears the missing sourness, you can sprinkle them with lemon juice. Often the pears in the filling are supplemented with more sour fruits and berries. Apples, cherries, black currants, and cranberries work well.

  • Pies are easier to remove from silicone molds; they don’t even need to be greased.
  • Before placing the form with dough in it, the oven should be preheated to 180–200 degrees. Bake the dessert at the same temperature for 30–40 minutes. Baking time depends on the composition of the dough, the thickness of the charlotte, and the individual characteristics of the oven. Check the readiness of the pie using a wooden toothpick. If it remains dry after dipping into the dough, the cake is ready.
  • The oven must not be opened while the charlotte is baking, otherwise the cake may settle.
  • If you sprinkle the charlotte with brown sugar 10 minutes before it’s ready, it will be covered with a caramel crust, which will make it very appetizing.

Charlotte can be served warm or cold. It is usually offered with tea or coffee, but it also makes a good pairing with cold milk. You can also eat pear charlotte separately.
