Shortbread pie with pear and cottage cheese. Shortcake with pears and cocoa

There are times when you want to drink tea with something sweet and tasty. Pear pie is perfect for such a tea party, especially if you prepare it yourself. This pie is made from ripe sweet pears, which are still firm and juicy. Cottage cheese goes well with ripe pears in such baked goods. You can use shortbread dough as the base, but you can use different shortbread cookies.

Ingredients

  • — pears 3 pcs
  • - cottage cheese 250 g
  • - cinnamon 10 g
  • - breadcrumbs 30 g
  • - vegetable oil 2 tbsp
  • - granulated sugar 2 tablespoons
  • - marmalade 50 g
  • — shortbread cookies 300 g
  • - baking dish

Preparation

This pie with pears and cottage cheese can be prepared in different ways: with and without cocoa, with nuts, with honey, with cardamom, ginger and other seasonings, with orange or lemon zest, from puff pastry, from biscuit dough, from shortcrust pastry, with the addition of corn flour, with the addition of various alcohols to the cream base (rum, cognac, liqueur), etc. The method of preparing the pear pie is of great importance.

To prepare a delicious pear pie, first crush the shortbread cookies. Mix the crumbled liver mass with a glass of water. The result should not be porridge, but a dense thick mass. Grease a baking dish with sunflower oil and sprinkle with breadcrumbs. Then spread out the cookie mixture. If you get gaps somewhere, that’s okay. They can be covered with curd mass. When preparing the curd filling for pear pie with cottage cheese, we mix cottage cheese, sugar and cinnamon. Then place it on top of the cookies and smooth it out. For a simple pear pie recipe, add marmalade if desired. To do this, cut the marmalade into small pieces and stick it into the curd mass, scattering it over the entire surface of the curd.

Next you should prepare the pear filling for the pie. Peel fresh pears and cut lengthwise into small slices. The skin of pears is quite thick, unlike the skin of apples. Therefore, it is better to cut off the peels of pears for a tender and tasty pie with pears of all varieties. For this curd pear pie, we take sweet, ripe, not hard pears. We fan out the pear slices over the entire surface of the pear shortbread pie. Sprinkle the top of the curd pie with pears with sugar and breadcrumbs. Bake the pear pie in the oven for 25-30 minutes at 180 degrees. This pear pie is a quick recipe; you can sprinkle it with grated chocolate at the end of cooking when you take it out of the oven. On a still warm pear pie with chocolate, when the grated chocolate begins to melt, then after trying this shortbread pear pie once, you will want to make it and try it again.

In the video below I suggest you watch the recipe for the original pie with caramelized pears.

  7. Pour the cream over the pie and place it in an oven preheated to 180 C.
  8. Remove Bake for about 40-45 minutes, then remove and let cool for 15 minutes. That’s it, shortbread pie with pears can be served!

Pear pies are considered one of the most fragrant. Baking with this fruit is simply delicious. Pears give the dough an unforgettable taste and tenderness. You should definitely try this!

  • Flour 250 grams
  • Vegetable oil 80 grams
  • Sour cream 15% 60 Gram
  • Sugar 80 grams
  • Vanilla sugar 1 teaspoon
  • Soda 1/2 teaspoon
  • Lemon juice 1 tbsp. spoon
  • Salt 1 pinch
  • Pears 500 grams
  • Condensed milk 130 grams
  • Lemon 1 piece

First of all, you need to make shortcrust pastry for the future pie. To do this, pour butter and sour cream into a clean, dry bowl with high sides, add sugar, vanilla, salt and add lemon juice. Beat the mixture with a whisk.

Now pour the sifted flour into the bowl. You can sift it using a sieve, then it will be saturated with oxygen, and the dough will turn out very soft. Add soda. Knead into an elastic and pliable dough.

Roll the finished dough into a ball, cover with a lid or film and refrigerate for half an hour. Then roll it out into the baking pan, leaving a few centimeters of extra space on the sides.

Line the pan in which you plan to bake the cake with baking parchment. Place the rolled out dough on it. If it breaks in some place, it can be easily “patched.”

Wash the pears, remove the peel and core with seeds. Cut the fruit into small cubes. The pears must be ripe, but not overripe, otherwise they will simply fall apart.

Wash the lemon and grind it in a blender directly with the peel, but first remove all the seeds from it. Add condensed milk and chopped pears to the lemon. Mix the filling thoroughly. Pour it onto the dough. Preheat the oven to one hundred and ninety degrees, bake the pear pie in it for forty-five minutes.

I saw in the photo a very beautiful French pie with pears, even more like a pear tart: a shortbread crust, a golden brown cream filling, and in it there were halves of pears elegantly laid out in fans. This picture looked very tempting, and I began to compose such a pear pie!

As a basis, I decided to use the shortbread crust and filling from the gooseberry pie we recently tried - it has delicious shortbread dough, and the sour cream filling is suitable. And instead of berries, put halves of pears in the crust. By the way, the design of this pear pie reminded me of a shortbread pie with cottage cheese and apples, which I once baked - in its recipe, halves of apples are also cut into thin slices and placed on a sand base in such beautiful fans. Only the filling is not made from sour cream, but from cottage cheese - it’s also healthy and tasty, try it.

The pear pie was a success: crumbly shortcrust pastry, delicate filling and baked pears. I advise you to use ripe pears for this pie - not the kind that melt right in your hands, but not hard either. Strong, unripe pears will take a long time to bake: the dough is already ready, but the fruit will remain hard. Therefore, in order for both the dough and the pears to bake at the same time, take moderately ripe fruits. It would be ideal with the Bere variety - they are so honey-like, sweet, and tender!

How to make a pie with pears and cottage cheese

At the very beginning, set the oven to preheat at 180 degrees.

The butter must be taken out of the refrigerator in advance to warm up so that it is soft. Take butter, 1 egg, 50 g of powdered sugar, a pinch of salt and 1.5 cups of flour and knead a soft, elastic dough.

Wrap the dough in cling film or a new bag and put it in the refrigerator while we make the filling for the pie with pears and cottage cheese.

Shortbread pie with cottage cheese and pears in a slow cooker

Here it is - a simple recipe for making baked goods in a slow cooker, which always works. The aroma of pears will fill the entire kitchen, you just have to wait until the appliance copes with the task! Note to the housewife: according to this recipe, you can bake a pie with cottage cheese with the addition of apples, peaches, plums, or any berries, if there are no pears at home at the moment.

We will prepare a pie from these products:

  • butter – 90 g;
  • premium flour – 200 g;
  • eggs;
  • baking powder – 1 tsp;
  • sugar - half a glass;
  • cottage cheese – 500 g;
  • sugar - half a glass or a little less (to taste);
  • pears – 1 pc.;
  • eggs – 2 pcs.;
  • potato starch - 2 tbsp;
  • cinnamon - pinches.

Cooking the pie sequentially:

  1. We make a pillow for cottage cheese or dough for our pie. First, you need to remove the butter from the refrigerator to soften it.
  2. The butter must be mixed with sugar until white; you can grind it with a tablespoon/fork (as you prefer) or beat it with a whisk.
  3. To the lightened fluffy mass you need to add a separately beaten egg and also add separately mixed flour (sifted) with baking powder.
  4. Knead the dough, it should be soft and elastic, if it crumbles a little, it’s okay. Wrap the dough in cling film and place in the refrigerator for 20-30 minutes.
  5. While the dough is chilling, make the filling. To prepare, you will need a blender, it will make the work easier. You need to put cottage cheese, starch, eggs, sour cream and sugar in a blender bowl. Beat everything until smooth.
  6. If you don’t have a blender, you can do everything by hand: rub the cottage cheese through a sieve (or mash it with a fork), add separately beaten eggs with sugar and starch.
  7. You also need to prepare baking paper to line the bottom. Take 2 strips 10 cm wide, grease the bowl with any oil, but preferably butter, and lay the strips crosswise.
  8. Take a piece of dough out of the refrigerator and divide it into 2 parts: a little larger and a little smaller. We send the smaller one back to the refrigerator, form a layer from a piece of dough directly in the multicooker bowl, and make low sides for the filling.
  9. Spread the filling and smooth it out with a spatula.
  10. Now you need to put more pear slices on top. The fruit needs to be washed, cut into 2 parts, cut out the core, cut into slices, and fanned out in a circle.
  11. Next, you need to take the remaining dough out of the refrigerator and grate it so that the pieces of dough cover the filling. It’s okay if the filling peeks out, it’s even more interesting!
  12. Use cinnamon: take a third of a teaspoon of the spice, mix with a teaspoon of sugar, and sprinkle on the top of the pie.
  13. Then you need to select the “Baking” mode on the display and set the timer for 1 hour. Once baked, open the lid, let the cake adapt for about 5 minutes, then lightly pull the edges of the parchment to remove the cake and place it on a plate.

You can cut into portions when it has cooled down a little, then the filling will not stick to the knife. The pie will turn out aromatic, thanks to the pear and subtle aroma of cinnamon, tender, tender, because it contains more filling than dough.

Baking cottage cheese pie with pear: step-by-step recipe

  • After thoroughly mixing the sugar and butter until the sweet grains dissolve, add the cottage cheese and grind everything until smooth.
  • Add raw eggs at room temperature to the resulting dough base, one at a time. At the end, add the mixture of flour and baking powder in parts, without ceasing to stir.
  • Grease the prepared baking pan with butter (unscented butter or sunflower oil) and put the dough into it and level it out. We decorate everything on top with pear slices. They must first be peeled.
  • The baking time for the dessert in an oven preheated to 170 degrees is approximately 1 hour. Serve the treat by pouring it with pear syrup or generously sprinkling it with powdered sugar.

Ingredients:

For shortbread, mold 24-26 cm:

  • 250-260 g flour (2 cups 200 ml without top);
  • 100 g sugar (0.5 cup);
  • 120 g butter;
  • 1 small egg;
  • 1-2 tablespoons of water;
  • ¼ teaspoon salt.

For filling and sour cream filling:

  • 3-4 medium pears;
  • 100 ml sour cream (0.5 cup);
  • 50 g sugar;
  • 1 medium egg;
  • 1 tablespoon starch;
  • A pinch of vanillin;
  • Powdered sugar for sprinkling.

How to bake:

Prepare the shortbread dough in advance: it needs to be cooled in the refrigerator for half an hour. Sift the flour into a bowl, add sugar, salt, add cold butter, cut into cubes, and rub everything into crumbs with your hands.

Then add the egg and a spoonful of cold water and assemble the dough. If it crumbles, add another spoonful of water. Knead as quickly as possible: speed and cold ingredients are important for shortcrust pastry to be crumbly. We put it in a ball and that’s enough, we press it a little, wrap it in film and put it in the cold.

While the dough is cooling, you can line the bottom of the mold with parchment, grease it with a thin layer of vegetable or butter, wash the pears, cut them into halves and peel them, and turn on the oven and let it preheat to 180C.

Having taken out the dough, sprinkle the table with flour and roll out the cake slightly larger than the diameter of the mold.

Using a rolling pin, transfer it to the mold, lay it out, and make 2 cm sides.

Cut the pears into thin slices.

Carefully transfer them into the mold and place them on the cake slightly at an angle to form a beautiful fan. Sprinkle with (optional) brown sugar or cinnamon sugar mixture.

To fill, beat the egg with sugar using a whisk, add sour cream, vanillin, starch and beat until smooth.

Using a spoon, pour the sour cream filling between the pears and carefully place the pan with the pie in the oven.

Bake at 180C at medium level or slightly higher for 35-45 minutes. The pie is ready when the filling has set and begins to brown slightly, the edges of the cake are golden, and the pears are soft.

Remove the finished pie from the oven and cool in the pan for 10-15 minutes to prevent the crust from breaking when moving. And when it cools down a little, you can open the pan, transfer the pie to a plate and sprinkle with powdered sugar.

Cut the pear pie into portions and try.

Shortcrust pastry pie with pears - recipe

You need to take three medium-sized pears (the “Conference” variety is perfect for this type of pie), and you will also need half a small lemon.

You can take a large pie pan, up to 28 cm in diameter. If you use a smaller pan, the dough will, of course, remain. There is nothing wrong with that, you can put it in the freezer, and then, when the opportunity arises, take it out, defrost it and bake, for example, simple shortbread cookies.

Recipe for making shortbread pie with pears. You need to start, naturally, by kneading the dough. To do this, grind the butter with sugar and vanilla sugar, then add the egg, mix the salt well.

The dough should be smooth, homogeneous and elastic. Wrap the dough in cling film or a bag and put it in the freezer. You need to turn on the oven in advance; the temperature in it should have time to warm up to 200 degrees.

Now you need to boil the syrup. Boil water in a small saucepan, add sugar and, without removing from heat, stir the syrup until the sugar is completely dissolved.

You can put the syrup aside and you can start working on the pears. Peel the pears, cut into quarters and remove the core.

Using a sharp knife, cut the pears into thin long slices and sprinkle well with lemon juice to prevent the pieces from darkening.

Line the mold with parchment and spread the dough over the bottom of the mold about a centimeter thick, do not forget to form the sides, they should be high enough so that the syrup does not spill out during baking. If there is any leftover dough, wrap it in cling film and put it in the freezer.

Place the pear pieces on the dough and pour in the syrup.

Now you can put it in a preheated oven, it will bake for about 40-50 minutes, readiness is usually determined by the sides of the pie, as soon as they are sufficiently browned, the pie can be taken out.

We roll it up and put it in a bag, and then close it in the refrigerator for half an hour.

Is the dough frozen? Great! We take it out of the refrigerator and roll it out on the table as best we can. Now place it in a greased mold. Press firmly to the bottom and form sides.

Mash the cottage cheese thoroughly with a fork, and then mix with sugar, eggs, sour cream and vanilla sugar. You can use a mixer or blender to make the mass more homogeneous.

Wash the pears, remove the cores and seeds, and then cut into thin slices.

Place half the slices on the dough, then add a layer of cottage cheese and sour cream, and then you can decorate with a final layer of pear.

Pear pie with chocolate

A wonderful pie with pears on dough with added chocolate and decorated with grated nuts. It looks, you see, amazing!

Yes, this pie takes longer and is more difficult to prepare. Although, it’s not that long, just a lot of body movements with a lot of ingredients. But the result is worth it!

Ingredients:

For the test:

  • Wheat flour – 235 g.
  • Cocoa powder (dark or mixed with cream) – 30 g.
  • Butter – 130 g.
  • Sugar – 90 g.
  • Eggs – 1 pc.

Cream (fill):

  • Butter – 50 g.
  • Sugar – 80 g.
  • Egg – 1 pc.
  • Baking powder – 0.5 teaspoon;
  • Wheat flour – 80 g.
  • Dark or milk chocolate – 180 g (Two bars of 90 g each);
  • Liquid cream – 180 ml.
  • Ground nuts (any) – 30 g.
  • Pears – 1-2 small;
  • Grated (ground) nuts – 20 g.

Preparation

First, we'll start with the chocolate dough. Accordingly, you need ingredients “for the dough”.

Mix flour with cocoa, add pieces of cold butter and add sugar. Stir, beat in the egg and mix again. Ideally, you need to process it in a food processor, but you can do it with your own muscular hands.

The result was a dense, heavy dough.

This dough should be rolled out thinly with a rolling pin and then placed in a mold, which must first be greased with oil.

Now the dough needs to be put in the refrigerator so that it becomes denser, colder, and in general, so that everything is cool for us. 20 minutes is enough.

Now let's start filling

Essentially, here we prepare the flour mass again, and only then the filling.

Mix warm butter with sugar and egg. The sugar should dissolve.

Combine the flour with baking powder, and then add to the sugar-egg mixture. Mix well - ready!

Well, now we come to the chocolate cream.

Pour the cream into a saucepan, place it on the stove and bring to a boil over low heat. Stir constantly.

Place the chocolate broken into pieces in a separate deep bowl. Pour in the hot cream and stir gently until the chocolate melts.

Now you need to actively beat with a whisk until it has a creamy, fluffy consistency. Add grated or ground nuts.

That's not all! Pour this cream over the previously prepared dough (not the one in the refrigerator!). Mix everything again.

Now the final stage is filling, shaping and baking.

We took out the chilled dough and laid the chocolate-butter dough on it in an even layer.

Wash the pears, remove stems and any seeds. Cut into thin slices or small cubes.

Hide part of the sliced pear deep into the pie, and it is advisable to cover the top with beautiful thin slices, which will give not only taste, but also aesthetics.

All that remains is to sprinkle with nuts (almonds, peanuts, whatever!) and place in an oven preheated to 190 degrees for 30 minutes. You can check readiness with a match. Pierced the pie - did the dough stick to the match? So it's not ready yet!

  • Cardamom – 2-3 pods;
  • Baking powder – 0.5 teaspoon;
  • Salt - a pinch;

Step-by-step preparation

Wash the pears, cut each into 4-5 slices, simultaneously removing the core.

Pour sugar (130 g) into a frying pan and heat it until the sugar gradually melts.

Now put the pears there and simmer them over low heat, turning them over from time to time. They should become softer and also covered with caramel.

Grind the almonds in a blender or grate them on a fine grater.

Remove the cardamom seeds and crush them in a mortar.

Beat the remaining sugar in a separate bowl with soft butter, salt, cardamom, and baking powder. You can use a blender again, or a mixer. Add eggs here, add flour in small portions, add almonds and continue mixing until smooth.

Grease a baking dish with high sides with any oil. Place the pears on the bottom. You need to squeeze pieces of walnuts between the pears.

Pour the remaining caramel thoroughly over the pears.

Now you need to lay the dough evenly on top of the pears so that it completely hides them.

Heat the oven to standard 180-190 degrees, bake the cake for 40-50 minutes.

Then, when the pie is ready, you need to let it cool a little, and then sharply and at the same time carefully turn the mold over some kind of vessel so that the pie rests with the pears facing up.

Pie with pear puff pastry

Open pear pie made from puff pastry. Thin, crispy, bright - simply magnificent! And the most important thing is that preparing this pie will not be difficult! As they say, in a hurry!

Ingredients:

  • Ready-made puff pastry – 500 g. (It doesn’t really matter whether it is yeasted or without yeast);
  • Ripe sweet pears – 3 pcs.
  • Butter – 50 g.
  • Egg – 1 pc.
  • Sugar – 3 tbsp. spoons;
  • Cinnamon powder – 2-3 pinches;

How to make layer cake with pears

If the dough is frozen, then first you need to defrost it, preferably at room temperature, gradually.

Then you need to roll it into a large rectangular layer to fit the size of the baking sheet.

Cover a baking sheet with parchment.

Place the dough on a baking sheet, press the edges to form the edges of the future pie.

Wash the pears, remove the seeds, then slice thinly.

Place the pear slices as in the photo, on top of each other.

Sprinkle sugar and cinnamon on top and scatter thin pieces of butter throughout the pie. It will then melt and, combined with sugar, turn into butter caramel.

Beat the egg yolk and brush the sides of the pie with it, so they will become more rosy and even more shiny.

Heat the oven to 180 degrees, place the pie there and wait 20-25 minutes.

If desired, you can then decorate the top with a small amount of powdered sugar.

Pie with pear and cheese

Delicious pear pie with cheese. In our case, “brie” is used, but if desired, you can replace it with any other cheese product (dor blue, ricotta, etc.). The main thing is that it is tender, creamy, suitable for sweet pastries.

Yes, ricotta, unlike “cheese,” is made from whey, not milk. But I still consider it cheese. I'm so illiterate! Let's move on to the recipe...

Ingredients:

  • Butter – 135 g.
  • Sugar – 85 g.
  • Flour – 270 g.
  • Eggs – 2 pcs.
  • Pears – 2-4 pcs.
  • Soft cheese – 100 g.
  • Fill:
  • Sugar – 4 tbsp. spoons;
  • Sour cream – 3 tbsp. spoons;

How to bake this pie

First we prepare the dough. Beat butter with two egg yolks, sugar, flour. By the way, do not throw away the whites left from the eggs, as they will go into the filling!

Place the dough in the refrigerator for a while. 20 minutes is enough.

For now, you can prepare the pears: wash and chop.

Grease the baking dish generously with any oil. Distribute the dough in it. Place a layer of pears, then a layer of cheese, and the remaining pears on top.

Beat sour cream with sugar and two egg whites, pour this over the pears.

Place the pie in an oven preheated to 180 degrees for 30-40 minutes.

By the way, you can bake the dough in advance (10 minutes at 200 degrees), and then hold the whole pie with filling for another 15-20 minutes at a temperature of 180 degrees.

Pie with caramelized pears

Wonderful pear pie with caramel filling. Real jam! Even on your feet!

For the dough:

  • Wheat flour – 160 g.

  • Ground cinnamon – 1 teaspoon;
  • Nutmeg - a pinch;

For the caramel pears:

  • Fresh pears – 3-5 pcs.
  • Butter – 60 g.
  • Brown sugar – 60 g.
  • Citric acid - a pinch;

Cooking process

Rinse the pears with water, core them and cut into 4-8 wedges. Sprinkle citric acid on them.

Melt the butter in a frying pan, add sugar and “cook” until the sugar dissolves.

Add the pears to them, then turn them over and let the excess liquid evaporate a little to make a thick caramel. Then put it aside and let it cool a little. In the meantime, you need to quickly prepare the dough!

Beat butter with eggs, nutmeg, sugar and flour with baking powder.

Place the pears into the mold and top with the remaining caramel. Now lay out the dough and place it in a preheated oven (180-190 degrees) for 30-35 minutes.

Then, once the cake has cooled slightly, you need to carefully pick it up around the edges with a knife and sharply turn it over onto some kind of vessel. So yes, this is a caramel changeling again.
