    Ingredients

    1 kg lean beef 3 cups red currants 1.5 teaspoons granulated sugar 1 teaspoon salt 1/2 teaspoon ground black pepper vegetable or olive oil (to taste)

    Wash the meat, cut into small cubes. Wash the red currant berries as well; small branches and stalks do not need to be removed. The currants must be squeezed through a sieve, then put the cake into a bowl, add about half a glass of water, mix and squeeze again. Heat the oil over high heat in a frying pan or saucepan with a thick bottom and sides, then add the chopped meat there. Without reducing the heat, fry it for about 7-10 minutes until the liquid has evaporated and it is lightly browned. Then add currant juice, sugar, pepper and salt to the meat. Bring to a boil and reduce heat to low. Simmer until done, covered, stirring occasionally. Best served with boiled potatoes.

    In principle, for the recipe for stewed pork with gravy, meat from absolutely any part of the pork carcass is suitable, but I prefer to cook from lean pieces of pork. I know that some people, on the contrary, love it when they come across pieces of fat on meat and even specifically look for such fatty pieces in the fryer. So, if necessary, defrost the pork, wash it thoroughly, if possible, trim the film from a piece of meat and cut it into cubes the size of a medium-sized walnut.

    Next, take a roasting pan (I have a glass one) or any other container suitable for stewing. Heat it thoroughly and add 50 ml of sunflower oil. Then we put the meat in the frying pan and, stirring it from time to time, fry until the meat juice has completely evaporated. This procedure will take you approximately 6-8 minutes. Fire is medium.

    At this stage of cooking the pork stew and gravy, we should add onions to the roasting pan with the meat. Cut a large peeled onion in the way you prefer - into feathers or small cubes. I love to feel the taste and aroma of onions in meat dishes, but I don’t like to contemplate them. Therefore, I chose this method of chopping onions for myself: I rub it on a fine grater. At the same time, juice and gruel are obtained from the onion. I'm quite happy with this. Such onion gruel will imperceptibly spread throughout the entire dish, leaving no trace of the onion. All that remains of the onion is taste and aroma.

    Most of the liquid has evaporated and the pork has begun to brown distinctly. It is this moment that is important not to miss. At this stage of cooking the stewed pork with gravy, the pieces of meat acquire their final color and appetizing appearance. If you do not bring this process to the desired condition, the stewed pork will be pale and look simply boiled. If you overcook it, it’s also not very good, the meat will dry out and be tough.

    So, here is my pork, it has been brought to the desired condition. Moreover, the closer to the moment, the more often the meat should be stirred.

    We have reached the stage of adding water to the dish. You will need just enough of it so that the pork is completely covered with it. Also add a bay leaf to the roasting pan. Reduce the heat to low, cover the roasting pan with a lid and simmer the pork. Periodically check the water level in the fryer. As soon as half of it boils away, add it to the previous level.

    After 1.5 hours from the moment of adding the first portion of water, the stewed pork with gravy will be ready. But we are in no hurry to turn off the fire. All that remains is to add salt and pepper to the dish. You will need approximately half a tablespoon of salt or a little more, depending on your taste. Also with ground black pepper. Half a teaspoon is just right. Let the stewed pork simmer for another 5-7 minutes over low heat. After this, the stewed pork with gravy is ready.
