Ingredients:
- 220 grams of flour;
- six sweet apples;
- 200 grams (or less) sugar;

How to cook:
- Separate the yolks from the whites. Lightly beat the egg whites and sugar until the mixture foams.
- Add yolks, soda to the mixture, add sifted flour. Beat until lumps disappear.
- Wash the apples and cut them into thin slices, removing the core.
- Grease the baking dish with oil, lay out the prepared apples, sprinkle with cinnamon.
- Fill the fruit with dough.
- Place the pan in an oven preheated to 220 degrees and cook for 25 to 30 minutes.
If you like a balloon, then put half the amount of apples specified. To prevent the apples from darkening, sprinkle them with lemon juice after slicing.

The filling for apple pie can be made from cottage cheese or soft cheese. This pastry is best prepared using shortcrust pastry (1 stick of butter, 2 cups of flour, 2 eggs), which must be prepared and lightly baked in advance.
For the curd filling you will need:
- cottage cheese 180-200 g, preferably soft so that there are no lumps in the finished product;
- 70 g sour cream;
- 50 g granulated sugar;
- white of 1 egg.
Mix cottage cheese and sour cream with sugar until smooth, add whipped egg whites to the mixture, and carefully combine with the rest of the mixture.
Thinly slice two peeled apples, sprinkle with a mixture of sugar (1 tbsp) and cinnamon (0.5 tsp) and place on the prepared sand base. Pour the curd mixture, level the surface, place in the oven and bake at 180°C for about 40 minutes. Cool the finished product completely, cut into portions and serve.

Ingredients:
- 100 grams of sugar;
- 200 grams of flour;
- three eggs;
- 3-4 apples;
- 3 tbsp. l. condensed milk;
- 15 grams of butter;
- 5 grams of baking powder;
- a bag of vanilla sugar;
- powdered sugar;
- 1 tbsp. l. cinnamon.
Preparing the pie:
- Break the eggs into a dry bowl, add condensed milk and sugar. Whisk.
- Add vanilla sugar and baking powder and beat again.
- Without ceasing to beat, add the sifted flour to the mixture. The dough should have a homogeneous consistency, without flour lumps.
- Peel and core the apples, cut into slices, circles, cubes: whatever you like.
- Place the fruit in an oiled pan and sprinkle with a teaspoon of cinnamon.
- Pour in the dough and sprinkle the top with the remaining cinnamon.
- Bake at 200 degrees for about 35 minutes.
- Cool the cake right in the pan, then cut it and transfer it to serving plates. Sprinkle with powdered sugar.

By choosing crumbly shortcrust pastry as the base, you can prepare different pies: a quick apple pies using ready-made puree or jam, or a more complex version using fresh apple filling.
For a simple open pie you will need the following ingredients:
- A small stick of butter (180 g).
- Wheat flour (2 cups).
- Eggs (2 pieces medium size).
- Baking powder.
- 3-4 ripe apples.
- Sweet thick applesauce or fruit jam (1/2 cup).
- Granulated sugar mixed with cinnamon (1 tbsp).
The butter must be frozen first, preferably left in the freezer overnight. The frozen block should be grated and chopped with sifted flour. After adding eggs and baking powder to the mixture, knead the semi-finished product well, cover with cling film and place in the refrigerator for half an hour.
The dough is baked separately from the filling; first you should place it in the mold, forming the bottom and sides and filling the space for the future filling with peas or other neutral weight laid out on paper.
The shortbread base is baked for about 15 minutes, cooled, after which it can be filled with puree or jam, on top of which lay out a pattern of fresh apple slices, sprinkle with a cinnamon-sugar mixture and place in the oven at a temperature of 180-190 degrees. Bake for 15-20 minutes.

Ingredients:
- 200 grams of flour and sugar;
- baking powder packet;
- a bag of vanilla sugar;
- three eggs;
- a tablespoon of softened butter;
- a tablespoon of cinnamon;
- half a kilo of apples;
- half a kilo of pears;
- a pinch of nutmeg;
- a handful of chopped nuts;
- a tablespoon of fruit liqueur.
Cooking process:
- Beat the eggs until foamy, add granulated sugar and vanilla sugar, beat for 3-4 minutes until fluffy.
- Add cinnamon, baking powder and nutmeg. Whisk.
- Pour in the liqueur, sift the flour. Beat again.
- Cut thoroughly washed and peeled apples and pears into thin slices and place in the prepared dough. Mix.

- Water 40±10 ml

If the dough remains crumbly and does not combine into a total mass, add a little water - 10-15 ml.
- Let the dough rest for 5-10 minutes. In order for the dough to roll out better, you can wrap it in film and put it in the refrigerator for 15-20 minutes.
- Roll out the dough to a thickness of 3-4 mm.
- Place the rolled out dough into the mold and form the sides. The size of the pan in which this cake was baked is 24x32 cm.
- Place the apples on the dough and pour the syrup that formed when cooking the apples on top.
- Sprinkle with flax and sesame seeds, but this is optional. You can sprinkle with crushed nuts.
Bake the pie in a preheated oven at a temperature of 160-170°C for 30-35 minutes until cooked.- Cool the cake in the pan. If you try to remove the pie while it is still hot, there is a very high chance that it will break.
