Puff pastry pie with apples - general cooking principles

A puff pastry pie with apples can be open, closed, or even decorated with various dough shapes. It all depends only on your imagination.

To prepare you will need:

• Puff pastry – you can make it yourself, but most women prefer to purchase frozen pastry. It can be yeast or yeast-free.

• Apples – any variety will do. But it is best recommended to use sweet and sour apple varieties. But if you take hard varieties, then they must first be caramelized with sugar and cinnamon. This will make them softer. If you don't want to use the peel, cut it off and you'll be left with a soft, smooth filling.

Caramelization process: melt butter in a well-heated frying pan, add apples and, after mixing well, fry for about two minutes. Then sprinkle everything with sugar and fry for another two minutes. After the apples have cooled, they can be used for their intended purpose.

• Vanilla crackers - they can be purchased in specialized stores, or can be replaced with crumbs of buns, dried and ground in a blender, or crumbs of white bread with added sugar. These ingredients are necessary to absorb excess moisture. Those. they will absorb the apple juice and prevent the dough from getting too wet.

• Sugar is used to prepare the dish and powdered sugar is used to decorate it.

• Butter.

• Vegetable oil.

• Cinnamon – optional.

Let the puff pastry thaw at room temperature. In the meantime, let's start preparing the filling, because... it should cool down a little more.

Wash the apples and remove the core. Cut into small cubes of equal size.

Heat the butter in a frying pan and add the apples. Make the fire medium.

Cover with a lid and gradually, as they heat up, they release the juice. Simmer until half cooked, stir occasionally.

If you keep it for a long time, it will turn out to be porridge. I have apples from my garden, so they cooked very quickly, in 8-10 minutes. When I prepare apple filling from store-bought imported fruits, it takes twice as long to stew.

Remove the apples from the heat and pour sugar into them, stir - the filling is ready. At this stage, you can add cinnamon or vanillin. Let the filling cool until warm.

After dusting the table with flour, roll out each layer of puff pastry into large squares about 35-40 cm.

We cut each of them into 6 parts. I do this using a pastry cutter.

On one side of each piece of rolled out dough, make parallel cuts across.

On the opposite side of the pieces, place a tablespoon of filling, trying to take the apples without excess liquid.

Cover the filling with dough, pressing on three sides first with your fingers, then with a fork.

Whisk the egg yolk in a bowl. We grease the pieces so that after baking they have a beautiful golden brown crust.

4. Place all the apples on the dough in a relatively thick layer and sprinkle with sugar.

Ingredients:

• ready-made puff pastry dough (450 grams) – 2 layers. Typically, this dough is sold in the amount of two plates per package;

• medium apples – 3-4 pcs.;

• sugar – 2 tbsp.

Cooking time – 25 minutes.

Cooking method:

1. Cut the apples into small cubes.

2. Defrost the dough, roll it out into a layer of the required size.

3. Grease the prepared pan with butter. It could even be a frying pan.

• baking powder – 2 tsp. If you don’t happen to have it, then baking soda quenched with vinegar will fully replace it.

Cooking time – 1 hour 10 minutes.

1. Grate the apples on a coarse grater or chop them finely.

2. Grease the multicooker bowl with butter.

Arrange the apple slices, then sprinkle them with a mixture of sugar and almonds.
  5. In principle, you can complete the process here, leaving the pie open. If the second layer has defrosted and you don’t want to put it back in the freezer, you can use it for decoration.
  6. Roll out the remaining layer and cut into thin strips. You can make a kind of braid, simply lay it out crosswise or diagonally. The taste will not suffer at all even if you cover it with a whole rolled out layer, pinching the edges. But in this case, do not forget to pierce the top layer with a fork.

  • Cabbage – 300-400 grams;
  • Salt - to taste;
  • Pepper and any other spices - to taste;
  • Onion – 1 piece;
  • Carrots – 1 piece;
  • Vegetable oil - for frying;
  • Egg – 1 piece.

Baking with cabbage couldn't be easier, especially if the cabbage is already prepared. If you need to cook everything from scratch, we do it in several stages:

  1. We leave our dough to defrost while we prepare the filling ourselves. If we have fresh cabbage, then this will take very little time.
  2. peel carrots and onions. Finely chop the cabbage and onion, grate the carrots (choose the size depending on your personal preferences).
  3. Heat sunflower oil in a frying pan and add vegetables, salt and pepper. This point is fundamentally important, because if you put vegetables in cold oil, they will become saturated with it and become too fatty. Simmer until soft and let cool.
  4. You can decorate the pie in several ways: make a closed one according to the principle described above, roll the dough with the filling into small rolls and lay it out like a snail, roll out the layer, making cuts along the edges, put the filling in the center and wrap the top layer with a pigtail.
