Summer holidays are in full swing, we have just arrived or, on the contrary, we are going to go to the sea, and throughout the city, especially in the private sector, the asphalt around the trees is strewn with poles - this is what we call wild apricot on the Don. We drag buckets from the dacha, make preserves, jams, and dry dried apricots. And of course, mom bakes Vanya’s curls. And no matter how much time has passed since then, as soon as crumbling poles appear on the sun-warmed asphalt and yellowed lawns, I open the apricot season - I bake three simple pies one after another - apricot pie with a grated top of Vanina curls, apricot pie with meringue and apricot charlotte.

  • Butter at room temperature - 200 grams

4. The dough must be poured into the mold and leveled. Now fruit is placed on top, it is better to do this with the pulp facing up, slightly pressing a piece of the fruit. Sprinkle the remaining sugar on top.

5. This will create a caramel crust. Place the mold in an oven preheated to 180 degrees for 45 minutes. You can check the readiness of the pie with a wooden stick.

  3. At this time, you need to beat 1 egg and white with sugar (4 tablespoons). Melt the butter (100 g) and add it along with the egg mixture to the dough.

I baked this pie when my dad brought me 2 buckets of apricots. Delicious, sweet and aromatic. I processed one and a half buckets into jam.
