The list of ingredients includes:

  • plums, 500 g;
  • sour cream, 125 g (about half a glass);
  • eggs, 3 pieces;
  • flour, 240-260 g (heaped glass);
  • soda, 1 tsp;
  • citric acid, 2 g;
  • sunflower oil, 2-3 tbsp. l.

To make the pie aromatic, it is recommended to add cinnamon to the dough. If you don't like it, replace the spice with vanilla. However, even without aromatic additives the pie turns out delicious. The algorithm for its preparation is similar to the principles by which apple charlotte is prepared.

Beat eggs with sugar until fluffy.

To make the process go faster, add half a spoonful of hot water to the ingredients.

Add sour cream and knead the dough. Then pour in the oil and stir again.

Add flour, citric acid and soda. Whisk the dough until smooth. The consistency should be similar to pancake batter, maybe a little denser.

Cut clean plums into halves and remove the pits.

Line a mold or frying pan with parchment and grease it with oil. Pour half the dough and smooth it out.

Place the plum halves, cut side up. If you intend to flavor your work of culinary art, sprinkle the fruit with cinnamon.

Spread the second half of the dough on top. Leave gaps here and there so that the plums “peek out” from the dough. This will make the pie look more beautiful.

Place the pan in an oven preheated to 200 Celsius. Bake the pie for 30-40 minutes until it is lightly browned.

Remove the treat from the mold when it has cooled completely.

Useful tips

  • Instead of soda, you can use baking powder. Mix it with flour and sift.
  • Since the juice already contains quite a lot of sugar, its amount can be reduced slightly.
  • It is better to take refined, odorless vegetable oil for dough.
  • You can use a mixer with a whisk attachment to mix the ingredients.
  • There is no need to cover the silicone mold with parchment.
  • For the pie, you need to take plums with an easily separated pit. These are Hungarian, prune, and raisin varieties. But cherry plum is not suitable for this purpose.
  • If you have frozen plums, defrost them before cooking, but so that they remain slightly frozen and keep their shape.
  • For the filling, you can use any fruits and berries – fresh or frozen.
  • After removing the cake from the oven, transfer it from the pan to a cooking rack to prevent the bottom of the cake from steaming.
  • You can bake portioned pies by pouring the dough into greased muffin tins and beautifully placing 2-3 halves of plums on top.
  • This lean dough makes good not only pies, but also muffins.
  • You can add vanilla, nutmeg, cinnamon, cocoa, raisins, coconut flakes, nuts, ground poppy seeds to the dough and filling - this will only improve the taste of the pie.

Plum Cake: Recipe from The New York Times

If you believe the legend, this publication has published a recipe every year since 1983 - numerous American housewives literally begged the editors for this. In 1995, the editor-in-chief's patience ran out. In his address, he offered an ultimatum to cut out this plum pie recipe, laminate it and hang it on the refrigerator.

So that you don’t have to look for the original source and struggle with translation, we offer instructions in Russian.

Ingredients:

  • regular sugar – ¾ cup;
  • cane sugar, brown – 2 tbsp. l.;
  • flour – 1 glass;
  • eggs – 2 pieces;
  • salt - a pinch;
  • baking powder – 1 tsp;
  • cinnamon – 1 tsp;
  • butter – 115 g;
  • medium-sized plums - 15 pieces.

Remove the butter from the refrigerator and wait until it softens. You cannot melt or speed up the process in the microwave! Cream the butter and sugar (regular), then beat the mixture until fluffy. Add the eggs one at a time, beating the mixture thoroughly each time until it lightens.

Combine flour with baking powder and sift it into a bowl with the base. Mix all ingredients until smooth.

Place the dough in the prepared pan, greased with a piece of butter, and smooth it out. Place the plum halves into the dough with their backs down so that they rise slightly above the surface.

Mix cane sugar and cinnamon and sprinkle the mixture over the cake. It should spend 40-50 minutes in the oven at a temperature of 180 °C. You can take it out immediately, but it’s better when at least the mold has cooled down - there’s less chance that the delicacy will fall apart. It's quite tender.

Now appreciate why American women so fiercely demanded this recipe for a delicious plum pie from the editors.

Preparation

We prepare all the necessary ingredients. The butter must be removed from the refrigerator an hour or two beforehand so that it has time to soften. We also take the eggs out of the refrigerator half an hour before cooking; they need to warm up so that the sugar dissolves better. Or you can heat the eggs in hot water for a couple of minutes.

Using a mixer or whisk, beat the butter with 150 g of sugar. At this stage, the sugar will not completely dissolve, this is normal.

Add eggs one at a time, beating each time until the mixture is smooth. Add salt and mix again.

Sift the flour and baking powder and stir with a mixer at low speed or with a spoon. The dough turns out quite thick. Turn on the oven at 180°C.

Grease the baking dish with butter and sprinkle with flour, so the cake will not stick to the bottom and walls. Place the dough into the mold and smooth it out.

Cut the plums into halves, remove the pits and place, without pressing, the plum halves on the dough, cut side up. During baking, the dough will begin to rise, fill the empty space under the plums and absorb them a little. At this point the cake becomes truly plummy.

Mix 2 tablespoons of sugar and 1 teaspoon of cinnamon. Sprinkle the pie evenly. Place in an oven preheated to 180°C and bake for 45 minutes.

After baking it looks very beautiful; before serving, you can sprinkle it with powdered sugar; with it, baking almost always looks better. If desired, you can also serve with a scoop of vanilla ice cream. And after standing overnight in the refrigerator, the pie becomes even tastier. Well, that's my taste. Bon appetit!

If you consider yourself a lover of all kinds of fruits and berries (especially plums), then this article is just for you! And it is dedicated to preparing simple and very tasty plum pies.

There are so many options for plum pies! Open, closed, made from different doughs and with different fillings, where plum can be either the only ingredient or part of some assortment.

You can’t bring everything up and try it all at once, and there’s no need to do that. It is better to master the general principles of cooking, and then come up with your own variations that suit your personal taste preferences.

Below are 5 step-by-step recipes with photos of the finished dish. You can also watch the attached videos, which show the entire cooking process as clearly as possible.

Plum pie - puff pastry recipe

Not all amateur cooks have a trusting relationship with dough. Sometimes, no matter how hard you try, you end up with an indistinct “something” instead of a foundation. No need to be upset. You can bake a plum pie, the recipe for which involves using ready-made dough.

It requires:

  • puff pastry - 400 g;
  • plums - approximately 250 g;
  • potato starch, 3 tbsp. l.;
  • sugar - 100 g;
  • powdered sugar - 2 tbsp. l.;
  • milk - 2 tbsp. l.

Step by step recipe:

  1. Roll out the thawed dough thinly into a rectangular elongated layer. It is better to do this on a sheet of parchment.
  2. Place the plum halves in the center. Sprinkle them with a mixture of starch and sugar.

  3. On both sides of the plum row, cut the dough diagonally. You should get strips no more than 2 cm wide. They need to be wrapped over the plums and intertwined with each other so that the fruits are mostly covered with dough.

  4. Gently coat the pie with milk and place it in the oven for half an hour at a temperature of 200°C.
  5. When ready, sprinkle the dessert with powdered sugar. It will turn out like grandma’s classic plum “braid.” With the only exception, puff pastry was previously prepared independently.

Fruit and curd pie with plums

A very tasty pie, the consistency of the filling is reminiscent of cheesecake. This recipe is more suitable for those who do not like too sweet desserts, although the amount of sugar can be increased if desired.

Components:

  • flour – 290 g;
  • testicles – 4 pcs.;
  • water – 60 ml;
  • spread – 150 g;
  • sugar – 60 g;
  • curd mass – 250 g;
  • plums – 6 pcs.;
  • apples – 4 pcs.;
  • sour cream – 200 g;
  • vanillin.

Step-by-step instructions:

  1. Mix flour and granulated sugar in a large container.
  2. Add the cold spread and water and stir thoroughly.
  3. Add 2 eggs, mix and quickly knead the dough.
  4. Leave the dough in a cold place for half an hour.
  5. Roll out the dough so that it is 1 cm thick.
  6. Place the dough on the pan and make edges from the edges, the height of which should be at least 2 cm.
  7. Beat the curd mass with sour cream, remaining eggs and sugar.
  8. Wash the berries, remove the bones, cut into halves.
  9. Apples need to be peeled, cored, and cut into 4 pieces.
  10. Pour the filling onto the sand base, arrange the berries and fruits.
  11. Place the pie in the oven for 50 minutes, temperature 180°.
  12. For decoration, you can use powdered sugar or coconut flakes.

Curd plum pie - recipe

Another simple plum pie recipe. Moreover, it is very useful, since cottage cheese strengthens bones. And the treat itself improves your mood. So two benefits in one dish.

You will need:

  • 3 eggs;
  • 300 g of cottage cheese (any fat content, so you can bake a relatively dietary pie);
  • half a glass of sugar;
  • half a glass of flour;
  • 1 tsp each baking powder and butter;
  • 0.5 kg plums;
  • 1 tbsp. l. breadcrumbs;
  • 2 tbsp. l. vegetable oil (ideally olive).

It is better to take fine-grained cottage cheese. If you don’t find one, first rub the fermented milk product through a sieve or grind it through a meat grinder.

Step by step your actions will be as follows:

  1. Beat eggs with sugar with a mixer. The final consistency should be creamy.
  2. Add the cottage cheese and use the mixer again. Beat until the mixture becomes smooth.
  3. Add oil; this time it is enough to mix the dough mixture with a spoon or whisk. But the oil should be distributed evenly over it so that there are no streaks left.
  4. Combine flour with baking powder and gradually add the mixture into the previous mixture, stirring constantly. Knead a fairly dense, but not tight dough.
  5. Grease the baking dish with butter and sprinkle with breadcrumbs - this will make it easier to remove the pie. At the same time, crackers will not affect the taste of the dessert.
  6. Place the dough in the mold and make sides out of it. Distribute the plum halves over the bottom of the future pie with their backs facing up. Half an hour in the oven (set the temperature to 170 degrees) - and the addition to your morning coffee is ready.

Regular plum pie: recipe in a slow cooker

As for baking in a slow cooker, it turns out very soft, fluffy, juicy, does not burn and bakes perfectly.

Components:

  • plum – 490 g;
  • margarine – 200 g;
  • sour milk – 200 ml;
  • testicles – 4 pcs.;
  • granulated sugar – 240 g;
  • flour – 290 g;
  • ammonium – 5 g.

Step-by-step instructions:

  1. Peel the plums, remove the bones, cut into 4 parts.
  2. Separate the whites from the yolks.
  3. Beat the whites until a stiff foam forms.
  4. Mix the yolks with sugar.
  5. Melt the margarine in a water bath and mix with the yolks.
  6. Add flour, ammonium, sour milk to the creamy-egg mixture, mix everything.
  7. Gradually add the whites into the dough, stirring from top to bottom.
  8. Grease the mold and pour out the dough.
  9. Arrange the berries so that they are buried in the dough.
  10. Activate the “Baking” mode, set the timer for 60 minutes.

You can make an upside down cake in a slow cooker. To do this, place the berries on the bottom and pour the dough on top.

Kefir idea

A very good recipe using kefir, which will especially appeal to those who don’t like sugary-sweet dishes.

The list of ingredients includes:

  • sugar - 200 g;
  • kefir - 200 ml;
  • vegetable oil - 150 ml (regular, unrefined sunflower oil will do);
  • eggs, 3 pieces;
  • flour (wheat, premium) - 320 g;
  • plums - 500 g;
  • vanilla sugar and baking powder - 1 tsp each.

Prepare the plums in the usual way - they need to be washed, dried (or wiped), cut into halves, and the pit removed. Additional work includes sifting flour and heating the oven to 180°.

Whisk sugar and eggs in a bowl. There is no need to try hard, just enough so that the mass does not separate. Add butter, kefir, vanilla sugar to it. Knead until you are satisfied with the appearance of the dough piece. Add flour in portions, little by little. You need to stir the dough after each addition. It should be brought to the consistency of thick, as they used to say, “bazaar” sour cream.

The amount of flour can vary - it depends on the size of the eggs and the fat content of kefir. So listen to your culinary instincts during the kneading process. It develops quickly even for a novice cook.

When the dough is on the verge of being ready, add baking powder and mix the mass thoroughly again. Prepare the mold and pour the dough into it. Place the fruit on top and immediately return the bowl to the oven. Baking at 180 Celsius will take 40-45 minutes. However, the time can vary within a wider range; it depends on the diameter of the mold: the smaller it is, the thicker the cake and the longer it needs to be kept in the oven. So periodically check the degree of readiness with a toothpick. Keep in mind that the dough is wetter next to the fruit; pierce the pie closer to the edge or to the center.

After cooling, sprinkle the baked goods with powdered sugar, it will become more aromatic and tastier.

Plum pie: shortcrust pastry recipe

For many people, a delicacy is not a joy if its base is not shortbread dough. For you personally, here is another version of plum pie.

You will need:

  • drain - 700 g;
  • sugar - 1 glass;
  • high-quality butter - 150 g;
  • flour - 2 cups;
  • one egg;
  • starch 3 tsp. (no special frills required, regular potato starch will do);
  • cinnamon 1 tsp.

Simple preparation:

  1. Combine softened butter with an egg and half a glass of sugar. If the butter is unsalted, season the mixture with a pinch of salt. Add flour and knead the dough - it should be quite elastic and should not stick to your palms.
  2. Wrap the dough in cling film and put it in the refrigerator for 20 minutes. While it's cooling, prepare the fruit - you'll need plum halves.
  3. Roll out a third of the dough into a thin layer. From it you can cut figures to decorate the top of the pie (stars, hearts, etc.) or strips - we will use them to decorate a wicker “lid” for dessert at the end of cooking.
  4. Use the rest of the dough to form a deep basket with high sides. It needs to be sprinkled evenly, but not too much, with starch. This step will prevent the dough from becoming soggy due to the fruit juices. And at the same time it will help thicken the juice - and it will not drain from the pie slices after cutting.
  5. Place the plum halves on the bottom of the “basket”, cut side up. Sprinkle the fruit with the remaining sugar. Half a glass will definitely be enough, even if you are generous with the filling. But if the plums are too sour, the proportion of sugar can be increased.
  6. Crush the fruit with cinnamon. Don't overdo it, this spice has a rather strong aroma.
  7. Make a mesh of strips of dough over the structure. Or arrange the prepared figures according to your taste. Aesthetes can coat the stripes/figures with egg, then the decoration will become shiny and rosy.
  8. According to this recipe, the plum pie needs to stay in the oven for 30 minutes. And the oven should be preheated to 200-220 degrees. It comes out of the mold easily. But keep in mind: the filling is juicy, and the shortbread dough is fragile. So it's better to wait until the cake has cooled completely. Then you will remove it from the mold and transfer it to a dish without compromising its appearance.

If you are baking a pie from shortcrust pastry, it is not necessary to grease the pan with fat or oil - the base itself contains enough lubricant. You just need to sprinkle the bowl with flour to make it easier to take out the dessert.

Whatever recipe you choose - with or without oil, with kefir or sour cream, a quick recipe or one that requires a lot of trouble - you can be sure that the result will please you. Plum pie just can't go wrong! Moreover, even novice cooks can handle its preparation. And if you are inspired to make such a pie “out of season,” look for frozen fruits in supermarkets; they also look worthy in dessert. Just defrost the fruits in a colander. However, when frozen, ice crystals grow on them, which give the fruit unnecessary wateriness and the pie - lethargy.

And don't be afraid to experiment. Any of the recipes for plum pie is not the ultimate truth. The filling can be supplemented with other fruits and nuts, and interesting innovative ideas can also arise regarding the dough. So bon appetit and delicious experiments!

Plum muffins: recipe with frozen plums

You don’t have to wait until autumn to enjoy delicious plum pastries. Making delicious frozen plum muffins requires minimal effort and time. These look like rosy, fluffy cups with a juicy sweet and sour filling. The dough turns out soft, crumbly with a creamy aroma.

Test components:

  • spread – 90 g;
  • sugar – 110 g;
  • eggs – 2 pcs.;
  • sour cream – 100 g;
  • flour – 160 g;
  • ammonium – 5 g.

For filling:

  • plums – 300 g;
  • sugar – 40 g;
  • oil for lubricating the mold.

Preparation steps:

  1. Mix the soft spread with sugar and eggs.
  2. Add flour, soda to the butter-egg mixture and mix thoroughly.
  3. Wash the berries, remove the seeds, cut into halves.
  4. Grease the pans generously.
  5. Place a little sugar (about 2 g) on the bottom of each mold.
  6. Place the plum halves with the indentation facing down.
  7. Pour the dough on top.
  8. Place the molds in the oven, preheated to 180° for 20-30 minutes.
  9. Sprinkle the finished cupcakes with powdered sugar.

You need to remove the cupcakes from the mold immediately. To do this, run a knife near the wall of the mold, sharply turn it over and shake it. If the cupcakes fall out and the plums stick, use a spoon to remove them and place them in the cupcake.
