  • yeast – 10 g;

    • One and a half tablespoons of granulated sugar;
    • A couple of onions;
    • 25 grams of live yeast;
    • 2 eggs;
    • A glass of warm water.

    Preparation:

    First dissolve sand and salt in water. Stir in the yeast immediately. Break the eggs and stir everything until smooth. Now add flour to the liquid mass and knead into a soft and non-sticky dough.

    But there is another faster and easier way to knead a gorgeous dough that is ideal for pies.

    You can fill them with regular minced meat, fried with onions. But it will be much more interesting with the addition of carrots. A feathery green onion will add brightness and the aroma of spring freshness. If desired, you can also add aromatic dill.

    Ingredients:

    • Minced meat – 350 gr.
    • Flour – 300 gr.
    • Carrots, onions – 200 gr.
    • Feathered green onions – 100 gr.
    • Pressed yeast – 20 gr.
    • Milk – 1 glass.
    • Egg, yolk – 1 pc.
    • Sunflower oil – 3 tbsp. l. + 4 tbsp. l.
    • Granulated sugar – 1/2 tsp.
    • Meat broth, ground pepper, salt - to taste.

    Preparation:

    1. Heat the milk to 35 degrees over very low heat or in the microwave. And in these few minutes we manage to combine the flour with a pinch of salt and sift it immediately into a deep bowl for dough. Add sugar and yeast, previously crumbled into small pieces, to the heated liquid. Dissolve them thoroughly and immediately pour them into the bulk mass.

    2. We begin to mix with a spoon so that both consistencies begin to combine. In the process, pour in oil (3 tablespoons) and beat in a fresh egg.

    3. As soon as it becomes inconvenient to use a spoon, place the dough on the table surface. Knead the plastic mass thoroughly for at least 10 minutes so that it becomes very elastic and stops sticking to everything. Then we put the tender ball back into the bowl and, covering it with cling film, leave it to rise for about forty-five minutes near the radiator.

    4. Peel the vegetables and start chopping them: chop the onion into small pieces with a knife, and pass the carrots through a grater. After heating the oil (2 tbsp) in a frying pan, add the slices first, and after a couple of minutes the orange shavings. Simmer them together until fully cooked (about 10 minutes) and put them in a bowl.

    5. In the vacated frying pan, cook the minced meat in the remaining butter (2 tablespoons) for about 5-8 minutes, so that it is completely fried, but remains juicy and crumbly. Combine both roasts into a single mixture.

    6. Chop the onion feathers, and then season the filling with salt and ground pepper. Let this delicious mixture cool.

    7. By this time the dough has already risen and has at least doubled in size. Gently knead it and divide it into 10 identical balls. Using a rolling pin or your hands, turn them into rounds on a floured surface. We put a couple of spoons of filling on them and, pinching them at both ends, give them the shape of elongated “boats”.

    Pies with fish and potatoes on kefir without yeast

    Fish and potato pie turns out very tasty, juicy and tender. Just try it. And for variety, I suggest kneading kefir-based dough

    Ingredients:

    • 350 grams of fish fillet;
    • Ground pepper to taste;
    • Approximately 5 potatoes;
    • Salt to taste;
    • A pair of medium onions;
    • 7 tablespoons of vegetable oil;
    • Approximately 4 cups flour;
    • A teaspoon of soda;
    • One raw egg;
    • 350 grams of warm kefir.

    Preparation:

    Peel the potatoes and set them to boil. Add some salt to the water. Then we will make puree from it.

    We take any fish, fresh. Cut the fillet into very small pieces.

    Finely chop the onions. Fry them in vegetable oil until lightly browned.

    Now we put it, along with the oil, in a bowl with fish and puree. Salt and season

With fish, everything is simple: boil the salmon (trout, salmon) for 2-3 minutes after the water boils, drain the broth, wait for it to cool and remove the bones and skin, then mix with cream and salt. This version of the filling turns out to be a little drier than when using raw fish fillet, however, due to the fact that the pies after baking are additionally moistened with broth or butter, it turns out just fine.

    To fill the pie with meat, you must first boil the beef (pork) fillet until fully cooked, cool and grind through a meat grinder. Then peel the onion, cut into cubes and fry in vegetable oil until light golden brown. Mix the minced meat and onion, add salt and pepper.

    Remove the dough from the bowl, knead it and place it on the board.

    Tear off into small pieces and form into balls.

    We flatten each ball into a flat cake with our hands.

    Place some filling on top of the flatbread.
