Due to the fact that Irish dishes were often mentioned in chronicles, their recipes were not lost and have reached us unchanged. Moreover, scientists were able to reconstruct the process of preparing a soup called fulata fia, which appeared in the 6th century and was used until the 17th century. To do this, shallow holes were dug in the ground, lined with stones and filled with water. After this, it was possible to cook meat in them by throwing hot stones into the water until it boiled.

Of course, in Ireland you are unlikely to be offered such exotic things at present. However, other Irish dishes are unlikely to leave you indifferent. For example, Irish stew is traditional and one of the most popular dishes in the country. It consists of lamb, potatoes, onions, seasoned with parsley and cumin. The meat is cut into small pieces, the vegetables into large pieces, after which they are placed in a pan and stewed for an hour.

The most famous of Irish cheeses, Cashel Blue, is made from pasteurized cow's milk on the dairy farm of Jane and Louis Grubb in County Tipperary, like many other types of rennet cheeses. The production of this type began in 1984, it is made entirely by hand from whole milk, in cross-section the structure has blue veins, which gives it an original, unusual look.   • A can of canned green peas (400 grams).
  • Jamon (50 grams). In principle, any dried ham can be substituted. Or jerky. If you wish, you can even use non-cured ham.
  • Olive oil (2-4 tablespoons).
  • Lemon juice (1-2 tablespoons). Can be replaced with grape vinegar. Or sherry vinegar - it may turn out even tastier than with lemon juice.
  • Ground black pepper (to taste).
  • Salt (as needed, usually not needed).

Cooking Irish salad

It's very fast and simple. Just four steps.

  1. Place the peas in a bowl of appropriate size.
  2. Finely chop the jamon. Add to the peas.
  3. Season with two tablespoons of olive oil and one tablespoon of lemon juice (you can add more oil and lemon juice if desired).
  4. Let's pepper it. Let's try. If necessary, add salt. Or oil, lemon juice, pepper - whatever suits your taste. Don't get carried away, by the way.
