Below is a recipe for apple pie with kefir. It’s not difficult to prepare, and the baked goods always turn out incredibly tasty. A soft and juicy pie with a sweet and sour filling will immediately win your heart. Don’t put off preparing it for later - please yourself and your loved ones with a delicious delicacy.
Ingredients:
- Chicken eggs – 3 pcs.;
- Salt - a pinch;
- Vanilla sugar – 1 sachet;
- Sugar – 230 g;
- Kefir – 250 ml;
- Vegetable oil – 100 ml;
- Flour – 300 g;
- Baking powder – 1 pack (10-12 g);
- Apples – 5 pcs.
How to prepare:
- Break eggs into a plate, add regular and vanilla sugar. For contrast, add a pinch of salt and beat the ingredients with a mixer. Add vegetable oil and beat a little more.
- Then pour in kefir. Mix, add 150 flour and a bag of baking powder. Turn on the mixer again and knead the mixture.
- Add the remaining flour and bring the dough to the desired consistency. Peel the apples from the core and cut into slices.
- Add fruit pieces to the dough and mix everything. Grease a heat-resistant form with sunflower oil and place the dough into it.
- Place in the oven, preheated to 180 degrees, for 40 minutes. We cut the apple charlotte and place it on plates. Sprinkle with powdered sugar if desired.
Recipe for apple pie with sour cream: it turns out tastier than charlotte, and easier to prepare
The pie is very simple and homemade, but nevertheless very tender and tasty. It is no more difficult to prepare than the usual charlotte. The recipe is like a lifesaver, because in 40-45 minutes you can prepare something delicious for tea. Especially if you have uninvited guests. Will always help out.
Ingredients:
- Apples - 4 pieces
- Flour, sugar, sour cream - 1 cup each (cup volume 250 milliliters)
- Egg - 1 piece
- Baking powder - 1 teaspoon
- Soda - 1/2 teaspoon
Step-by-step preparation:
1. First, take a baking dish. In this case, we take a mold with a diameter of 26 centimeters, so that later we can easily remove the cake. Line the bottom with baking paper. Lightly grease the sides of the mold with butter. And we sprinkle it with flour.
2. Remove the core from the apples.
If the peel is thick, it is better to peel it.
Cut them into thin slices and spread them evenly along the bottom.
3. Take a bowl and break an egg into it. Beat with a mixer or whisk. Next, add sugar and continue whisking.
4. Then add sour cream. Beat for a couple more minutes. And mix with flour, which must first be mixed with soda and baking powder. Pass through a sieve.
It should be noted that we do not use slaked soda. This is necessary in order to extinguish the acid in sour cream. But if the sour cream is slightly acidic or not sour, then you can use less soda or even abandon it altogether.
5. Fill the apples with dough. And we do it so that they are completely closed. And place the mold in a preheated oven at 180 degrees. Bake until fully cooked, i.e. The top of the pie should be golden. A match pierced in the middle of the pie should come out dry without any dough residue.
The pie is ready. Can be served. Just right for tea.
How to cook apple pie with yeast in the oven
Yeast baked goods are very soft, airy and tasty. Apples perfectly complement the taste of the sweet crumb. The top of the pastries is decorated with a braided braid, so the pie looks very elegant.
Ingredients:
- Warm milk – 250 ml;
- Salt - a pinch;
- Dry yeast – 2 tsp;
- Butter – 50 g;
- Chicken eggs – 1 pc. + 1 yolk;
- Granulated sugar – 50 g;
- Flour – 450-500 g.
For filling:
- Apples (large) – 3 pcs.;
- Zest of 1 lemon;
- Lemon juice – 2 tsp;
- Granulated sugar – 4-5 tbsp. l.
- 1 yolk + 1 tbsp. l. milk - for lubrication.
How to prepare:
- Add a tablespoon of sugar and dry yeast to warm milk. Mix everything and set aside. In a separate bowl, combine eggs, salt, remaining sugar and melted butter. Shake the mixture with a fork.
- Make a small hole in the sifted flour and pour the egg and yeast mixture into it. Knead the dough and transfer it to a plate greased with vegetable oil. Cover with cling film and leave in a warm place for 1.5 hours.
- Punch down the risen dough and divide it into 2 unequal parts. Cut the peeled apples into pieces. Add juice, lemon zest, granulated sugar to them. Mix everything well.
- Roll out most of the dough with a rolling pin and place it on the bottom of a springform pan, which we pre-grease. Place the filling in an even layer on top of the base. Roll out the smaller part of the dough into a thin layer and cut into strips about 1 cm thick.
- We lay the strips on top in a basket-shaped weave. Carefully place a braid of dough along the edges. Lubricate the surface with beaten yolk with added milk.
- Send to bake for 30-40 minutes. Temperature: 180 degrees. The pie turns out incredibly tender, and the filling is simply magical.
Special apple pie with kefir
We need:
For filling:
- 750 g apples (4 large apples)
- 150 g sugar
- 50 g butter
- 2 tbsp. lemon juice
- 2 tsp cinnamon
- 3 tbsp. corn starch
For the test:
- 90 g butter
- 75 g sugar
- 1 piece egg
- 320 ml kefir
- 500-520 g flour
- 15 g baking powder
- salt a pinch
- 1 tsp vanilla extract, vanillin
Preparation:
1.For the filling, cut the apples into small cubes, sprinkle with lemon juice, and set to caramelize. Melt butter in a frying pan, add apples, sprinkle with sugar, cinnamon and, stirring, simmer until juice appears. Sprinkle with starch, stir, cook until the juice thickens, 5-7 minutes. Let cool.
2. Prepare the dough: grind softened butter with salt and sugar. Add egg, vanillin and kefir at room temperature to them, mix everything thoroughly.
3. Add baking powder to the sifted flour and gradually add it to the liquid ingredients. Knead the dough, it should be soft, but not stick to your hands. Wrap the dough in cling film and place in the refrigerator for 30 minutes.
4. Grease a round cake pan with butter.
5. For convenience, divide the dough into two parts, roll one of them into a sausage and cut it with a knife into equal parts.
Knead a piece of dough into a small flat cake, put the filling in the center, and roll it into a bun. And we do this with all the dough.
6. Place the resulting koloboks in a circle in a mold. When the row is full, place another row of buns on top,

7. In a hot oven, put the dough to bake for 45 minutes, temperature 180 degrees. Cool the finished pie in the pan and then turn it over. The result is a pie consisting of individual buns, which can simply be broken without cutting.

Apple “Charlotte” is an original dessert that is not inferior in preparation to cake. Soft and tender dough, sweet and sour apple filling and airy custard are the perfect combination.
The baking recipe was borrowed from Polish chefs and does not use alcohol. You can lightly soak the dough with cognac, as is done in the classic German “Charlotte”.
Ingredients:
- Wheat flour – 230 g;
- Granulated sugar – 100 g;
- Butter (chilled) – 125 g;
- Chicken eggs – 1 pc.;
- Sour cream (20%) – 1 tbsp. l.;
- Baking powder – 0.5 tsp.
For the custard:
- Milk – 400 ml;
- Chicken eggs – 2 pcs.;
- Granulated sugar – 100 g;
- Starch – 40 g;
- Vanilla sugar – 2 tsp.
For filling:
- Apples – 500 g;
- Breadcrumbs – 1 tbsp. l.;
- Powdered sugar for decoration.
What we do:
- In a bowl, mix the sifted flour with baking powder. Transfer the chilled butter, cut into pieces, into the same container. Quickly grind the ingredients into crumbs.
- Then add sugar, a spoonful of sour cream and an egg. Pulse the dough until it becomes moist. We collect the workpiece into a ball and divide it into two parts, which we wrap in cling film. Place most of the dough in the refrigerator for 50-60 minutes, and the smaller part in the freezer.
- We take out most of the dough and roll it out to the size of the mold. We transfer the workpiece to parchment and place it in a split circle. Pierce the base with a fork and place in an oven preheated to 180 degrees. Baking time: 20 minutes, then let cool completely.
- In a bowl, mix eggs, regular sugar and vanilla. Add a little milk and continue whisking the mixture. At the end, pour in the starch and beat until smooth.
- Heat the remaining milk without bringing it to a boil. Pour it into the prepared mixture, not forgetting to stir the mass. Then pour the cream back into the saucepan, put it on the stove and bring to a boil. Cook the mixture over low heat until thickened, about 10 minutes.
- Sprinkle the cooled base with breadcrumbs and lay out the apples cut into small slices. Pour in more hot cream and smooth it out with a spatula.
- Rub the smaller portion of the dough on top using a coarse grater. Bake at 180 degrees for about an hour. Before serving, decorate the Charlotte with powdered sugar.
