Features of yeast-free bread

As the name implies, this bread is made without the use of baker's yeast. The dough is kneaded using yogurt or kefir, brines with the addition of soda, which ensures fermentation in an acidic environment. Even more often, special starters are used. It is these products that lift the dough and increase its volume, due to which the bread becomes soft and elastic.

Fans of a healthy lifestyle categorically do not welcome the presence of live yeast in their diet. And such baking is really very healthy. Bread contains cellulose, which has a beneficial effect on peristalsis - you will get rid of the feeling of heaviness in the stomach after eating and normalize metabolism.

Yeast-free bread is really very healthy

Note! The low acidity of yeast-free bread is beneficial for those who have problems with the gastrointestinal tract: gastritis or ulcers. Vitamins B and PP contained in this product will relieve you of troubles with your facial skin, hair and nails.

In addition, yeast-free bread, prepared independently, is stored much longer than usual, bought in a store. Of course, if they don’t eat it as soon as they take it out of the oven (most likely, this will happen, I assure you).

A few recommendations

Homemade yeast-free bread with kefir, cooked in the oven, will bring pleasure from eating if you not only follow its recipe correctly, but also listen to recommendations that will improve the quality of baking.

  1. Flour of any grade and type should be sifted before kneading the dough.
  2. Soda can be added in two ways: either to sifted flour or to kefir. In the latter case, when extinguishing occurs, you need to leave this process for 7-10 minutes.
  3. Don't get carried away with kneading the dough. It should not be dense, soft and elastic, but not the same as for dumplings, for example.
  4. To enhance the taste of bread without yeast, you can add seeds, sesame seeds, olives, etc. to it.
  5. Bread made from dough should always be placed in a well-heated oven. Moreover, initially it is better to warm it up to 230 degrees, and after the first 10 minutes of baking, reduce the temperature to 200 °C.
  6. Be sure to make 3-4 cuts on the workpiece. This is so that the baked goods bake better inside. But they should not be too deep, otherwise the bread will “spread”.
  7. If you end up with a large loaf, there is a risk that the crumb inside will not be baked. Then, to eliminate risks, place a heat-resistant dish with boiling water in the oven under a baking sheet. This will help steam the bread and make it 100% ready. Moreover, it will be baked inside, and the crust on top will be crispy, but not stale.

Preparing the dough

I prepare the dough in the evening. And here everything is very simple: you need to mix active rye starter, water and rye flour. Therefore, I now weigh 20 g of rye sourdough at 100% humidity into a bowl, add 80 g of room temperature water to it. And lightly stir the starter in the water.

Then I add 90 g of peeled rye flour.

Now you need to mix everything until smooth. I cover the dough for sourdough bread with film and leave it in the oven under the light on for 7-8 hours.

You need to wait until the dough doubles in size and becomes loose and porous. This may take 7-8 hours, or more or less time. Therefore, periodically monitor the dough. As soon as it is ripe, start kneading the dough.

What ingredients are needed? Simple recipe

A simple recipe for yeast-free bread with kefir, cooked in the oven, can be done by everyone, even beginners, the main thing is to stock up on the necessary ingredients.

  • Wheat flour - 300 grams (but do not remove the flour too far, you will need a little more for mixing).
  • Kefir of any fat content - 300 ml.
  • Sugar and salt - a teaspoon each.
  • Cumin - teaspoon.
  • Soda - 12 teaspoons.

Next, follow the cooking steps, and a fresh, flavorful loaf will appear on your table.

Recipe for yeast-free bread with kefir in the oven

  1. Sift the flour into a deep bowl, preferably twice.
  2. After this, add all the bulk ingredients, with the exception of soda.
  3. Pour kefir into a tablespoon. The specified amount of soda is added to it. That is, the extinguishing process is carried out. After this, the contents of the tablespoon are added to a common bowl.
  4. Stir, pour in the remaining kefir.
  5. Using a spoon, stir the dough in a bowl, then pour a little flour onto the work surface (table) and dump the dough onto it.
  6. To prevent the dough from sticking to your hands, grease them a little with vegetable oil.
  7. Knead the dough with your hands, adding flour in small portions. This is necessary so that the dough sticks together better. But you shouldn’t overdo it with flour, otherwise the dough will turn out too dense, and this will affect the bread.
  8. Once the dough is sufficiently kneaded, it is molded into round-shaped bread.
  9. Cover it with cling film or a towel so that it can “rest” a little. Half an hour will be enough. During this time, you can preheat the oven at 220°C.
  10. After 30 minutes, the dough is kneaded again a couple of times, shaped into a “bun”, and two crosswise cuts are made on top.
  11. Place the future bread on a baking sheet, sprinkling a small amount of flour on top to give it a crispy crust.
  12. Place the dough in the oven for 50 minutes. The temperature is not reduced yet.
  13. After 20 minutes, the temperature is reduced to 200 degrees.
  14. After time has passed, take out the bread and check its readiness with a toothpick. If it remains dry, the bread is completely baked. If not, then return it back to the oven that has not yet cooled down for 10-15 minutes.

After this, yeast-free kefir bread, baked in the oven, is ready.

Any dish will become more nutritious and tastier if you serve it with regular bread. Modern technology allows you to prepare a real rye or wheat loaf without wasting time and effort - the recipes allow you to conduct culinary experiments and delight your family and friends. Fragrant yeast-free bread in a bread machine at home is not a fantasy, but a reality.

The modern housewife knows that a slow cooker or bread maker is not just an addition, but a full-fledged participant in the cooking process.

Sometimes baking bread or buns is required to maintain health, since a person can eliminate some components that cause discomfort or allergies, limit the amount of fats or carbohydrates, which is why the recipe for yeast-free bread is popular.

A little about the history of bread

The usual flour addition to dishes has been known for several millennia. The original bread was a paste made from cereal grains; later people learned to cultivate and grind them. Then came the baked flatbread, which was first prepared in ancient Egypt.

The bread recipe was reminiscent of a modern one, that is, it assumed that the product would be prepared from dough. Interestingly, it was “suited” without the use of yeast, through a special, natural fermentation.

You can replace yeast with regular baking soda or baking powder, which was created about 150 years ago and is still one of the main components in the preparation of many dishes using dough and flour, as well as baked goods.

Baking powder is a powder that consists of baking soda, salts, and starch. It begins to interact with the components that make up the dough only when water is added.

The operating principle of baking powder is based on the fact that during the heating process, when the bread is directly baked, carbon dioxide is released, forming bubbles, making the finished product light and fluffy.

As a result of adding baking powder, the dough rises evenly and bakes well.

Yeast-free rye bread prepared in a bread machine has only 195 kcal/100 g of product. The composition includes proteins in the amount of 5g, fats – 8g and carbohydrates – 25g. Cooking time is about 120 minutes.

The benefit of yeast-free bread is that there are no ingredients that can harm digestion - in fact, the yeast itself. Many people cannot consume them precisely for health reasons; first of all, those who experience kidney problems are prohibited from using yeast. Allergies to yeast are common.

Meanwhile, the absence of yeast will not make the bread less appetizing or fluffy. Much depends on the right recipe.

Baking should not be unleavened, so salt is added to the container; its amount is on average 0.5 teaspoon, but you can reduce or increase the amount according to your own preferences; the recipe allows you to deviate from the recommendations.

After the salt, add sugar, all ingredients are mixed well to obtain a homogeneous mass.

Baking butter bread

My preparations were proofed for 2.5 hours and now they are ready for baking. By this time, my oven has already warmed up to a temperature of 240C and I can send the forms into the oven.

This bread needs to be baked with steam. Therefore, I immediately pour 200 ml of boiling water onto the lower baking sheet and close the oven.

Baking for the first 15 minutes at +240C with steam. Then you need to release the steam and reduce the temperature to +180C and continue baking for another 35 minutes.

Since this bread contains a lot of sugar and milk, the top of the bread will be well tinted. Therefore, if you see that the top of the bread is getting very dark, then cover it on top with foil.

I immediately remove the finished bread from the molds and transfer it to a cooling rack.

I often make this rich sourdough bread especially for breakfasts. A slice of rich bread with jam and a cup of tea – it’s so delicious! Make this bread and write your impressions of this recipe! I look forward to your comments and will be happy to answer all questions!
