Gougères - French cheese buns
This savory pastry can be an alternative to bread, perfectly complementing soups and other first courses.
The Gougerov test includes:
- 130 ml water;
- 50 g butter;
- 130 g flour;
- 3 g salt;
- 3 g rosemary;
- 2 eggs;
- 150 g hard cheese.
Recipe step by step:
- Place water, salt, rosemary and butter in a small saucepan over heat. When the mixture boils, pour flour into it in one go, stir and continue to keep on fire, stirring constantly.
- When a thin film appears at the bottom of the saucepan and the dough comes together into a lump, remove it from the heat and let it cool to about 60 degrees. Then stir in the eggs and grated cheese one at a time (a little of this product should be left for decoration).
- Form the dough into balls no larger than a walnut, place them at a considerable distance from each other on a baking sheet, sprinkle with the remaining grated cheese.
- Bake “Goujères” at 220-240°C until the volume increases and a golden crust appears for 10 minutes, then kept at 180-190 degrees.
Recipe: Rose cheese buns with garlic and nuts
In this case, you can use the filling for the buns without adding garlic or nuts. It’s just that these components in this combination can give an amazing taste.
Knead the dough according to any recipe, but it should not be sweet. But I advise you to pay attention to this recipe.
Ingredients: 300 ml water; 7 gr. yeast; 160 gr. cheese; 4 branches of dill; sugar; salt; oil; 4 tbsp. nuts; flour; 3 cloves of garlic.
Cooking algorithm:
- A few hours before preparing the buns, you should knead the dough. It should be stable and rise several times. The water needs to be heated and yeast added to it. After a few minutes you need to add 1 tbsp. sugar, 0.5 tsp. salt, flour. You need to add more plant to the batch. oil in an amount of 20 ml. I leave it aside until it expands in volume.
- I grate the cheese, pour it into a bowl, chop the nuts, chop the garlic and a couple of dill branches. You can even cook using dry herbs or eliminate this component altogether. Mix with cheese.
- I put the dough on the table, roll it into a rectangular layer and cover it with butter. Sprinkle with cheese filling.
- I form a roll, cut it into pieces of 2-3 cm. I form roses and place them on a silicone mat or on parchment paper with a deck. It is important to leave the distance between the pieces approximately 3 cm.
- I bake the buns for about 15 minutes, as indicated in the recipe provided.
- When kneading bun dough, you need to add flour correctly. You should not pour it over, otherwise the baked goods will not be soft. There should also not be enough flour, otherwise the dough will stick to your palms. The ideal option is a soft, smooth mass with a homogeneous composition.
- It happens that the dough does not rise at all, maybe the yeast is bad. Then you should add another portion of yeast, diluting it in a portion of milk or water. The liquid should be warm. In this case, you will need to add more flour to the batch.
- Plant-based cheese fat does not melt well, does not fry until golden brown and is not at all suitable for cheese baking. Don't buy cheese product for buns!
From yeast dough
Fans of yeast baked goods will love cheese buns made with yeast dough, which is prepared in a quick, straight-forward way.
To bake these buns, you need to prepare:
- 250 ml warm water;
- 7 g dry instant yeast;
- 5 g sugar;
- 5 g salt;
- 350-400 g flour;
- 250-300 g of hard cheese (including approximately 50 g for sprinkling);
- 1 egg (or 1 yolk and 2 tablespoons of milk).
Let's prepare it step by step:
- Dissolve sugar, salt and yeast in water. Adding flour and cheese shavings alternately in small portions, knead into a soft dough, which is left for an hour and a half in a warm place.
- Punch down the doubled dough, divide into ten buns, place them on a greased baking sheet, top with beaten egg and sprinkle with grated cheese. Allow the molded products to rest for 30-40 minutes. Then bake them at 200 degrees until done.
A simple recipe with kefir
Even without using yeast or brewing dough, you can bake soft, and most importantly delicious, cheese buns with kefir.
For such a simple recipe you need to take:
- 230 ml kefir;
- 40 g melted butter;
- 5 g baking powder;
- 260-280 g flour;
- 3 g salt;
- 100-120 g hard cheese;
- 20-30 g dill;
- 1 yolk for greasing the buns.
Baking method:
- Heat kefir to room temperature, add salt and pour melted butter into it. Then stir in the flour mixed with baking powder in small parts and knead the dough, which is soft but does not stick during kneading.
- For the filling, finely chop the washed and dried dill. Make large shavings from the cheese. Mix these products and the filling is ready.
- Form the dough into a rectangular layer and spread the cheese filling on it in an even layer. Wrap everything in a roll and cut into individual buns, which are placed on a baking sheet lined with baking paper.
- Brush the top of the pastry with beaten yolk and place it in the oven, heated to 180 degrees, and after half an hour you can enjoy hot and fragrant homemade cakes.
Recipe for buns with sausage, mushrooms and cheese

Custard cheese buns
Cheese buns made from choux pastry can be so not only thanks to the cheese in the dough. This dairy product can be used as a filling for hollow choux buns.
In this case, the dough is prepared from:
- 125 ml water;
- 50 g butter;
- 3 g salt;
- 20 g starch;
- 100 g flour;
- 3 eggs;
- 100 g hard cheese.
The cheese filling of the buns will include:
- 50 g hard cheese;
- 12 g garlic;
- 90 g mayonnaise.
Progress:
- Pour water into a saucepan, add salt, cut the butter into cubes and place in a saucepan. Heat these foods until the butter is completely melted and boiling. Mix flour and sift with starch, then pour into boiling water and brew.
- Mix the slightly cooled dough with the eggs, beating them in one at a time, and small cheese shavings. Form buns with a teaspoon, place them on a baking sheet, and then bake at 220 degrees.
- Pass the cheese for filling and garlic through a very fine grater, mix and season with mayonnaise. Fill the cooled, finished buns with minced cheese and garlic through a cut in the side or using a pastry syringe.
Cooking buns
If you use this recipe, then you will not have a question about how to prepare cheese buns. First you need to take a fairly deep bowl and pour flour and baking powder into it, then stir them. Separately, in another bowl, you need to grind the eggs with cottage cheese, add the cheese grated through a fine grater, pour in sour cream, add a little salt and mix all the ingredients thoroughly.
Combine the resulting cheese mixture with flour. Mix well. The dough will come out moist and soft. Next, you need to turn on the oven and prepare a baking sheet. It must be lubricated with oil. From puff pastry
Using ready-made puff pastry, you can prepare delicious cheese curlicue buns in a matter of minutes.
The list of ingredients for this recipe will not be long:
- 500 g ready-made puff pastry;
- 150 g hard cheese;
- 1 egg;
- sesame seeds to taste.
How to bake:
- Let the puff pastry thaw at room temperature, and in the meantime pass the cheese through the finest grater and beat the eggs with a fork until smooth.
- Then roll out the dough layer very thinly, brush it with egg using a silicone brush and sprinkle generously with cheese shavings. Roll the dough into a tight roll, which is cut into rounds 1.5-2 cm thick.
- Place the buns cut side up on the prepared baking sheet, brush the tops with egg and sprinkle with sesame seeds. Bake for 20-30 minutes, the standard temperature for such baking is 180 degrees.
Buns with different types of cheese
To create them you will need:
- bread flour – 2 cups;
- wheat flour – 2 cups;
- warm water – ¼ cup;
- active dry yeast – 8 grams;
- egg - 1 piece;
- cream cheese – 200 grams;
- blue cheese – 100 grams;
- smoked sausage cheese – 100 grams;
- salt – 1 teaspoon;
- water – 2/3 cup;
- any semi-hard cheese – 15 – 20 cubes;
- oil for lubrication.
To create buns you need:
- Pour two types of flour into a bowl and mix well until they are completely combined.
- Form a hill out of them, make a hole on top and pour warm water into it, pour yeast into it.
- Leave at room temperature for 5 - 10 minutes so that the yeast dissolves and bubbles appear on the surface of the liquid mass.
- After this, knead the dough well, gradually adding salt, egg, grated cream cheese and 2/3 cup of water to the mixture.
- Finally add the crumbled blue cheese. Knead the dough. If necessary, you can add a little water to it.
- Place the finished dough in a greased bowl, cover with a clean napkin or plastic wrap and leave to rise at room temperature. When it approximately doubles in size, you need to divide it into 15 - 20 equal parts.
- From each portioned piece, form a round thick pancake and place a piece of your favorite semi-hard cheese in it. Seal the edges and shape the dough into a bun.
Place the buns, seam side down, on a baking sheet lined with baking parchment and greased with vegetable oil. Cover them with a towel and leave to “rest” for 30 minutes.
Preheat the oven to 180 degrees. Before baking, the surface of the buns can be brushed with beaten egg. Bake for 30 minutes and be sure to serve warm.
Scones with onions and cheese
British scones can not only be a delicious addition to tea, but also replace the usual bread for Sunday lunch. Moreover, the dough for them is kneaded faster than the oven has time to heat up.
Ingredient proportions:
- 350 g flour;
- 10 g baking powder;
- 3 g dried paprika;
- 3 g ground allspice;
- 3 g salt;
- 120 g butter;
- 70 g hard cheese;
- 30 g green onions;
- 180 ml kefir;
- 1 egg and coarse sea salt for baking.
Algorithm of actions:
- Mix flour, table salt, spices and baking powder thoroughly. With this mixture, chop the ice-cold butter into crumbs as quickly as possible.
- Add cheese shavings and chopped green onions to the butter crumbs, mix. Add cold kefir in small portions and gather the dough into a ball.
- Roll out the finished dough into a 1.5-2 cm flat cake, cut it with a round die or a glass of buns, place them on a baking sheet, having previously covered it with parchment.
- Brush the formed products with beaten egg on top and sprinkle with coarse salt. Next, put the buns in the oven and after 15-20 minutes at 190 degrees, the cheese “Scones” will be ready.
Bun with ham made from yeast-free dough
If you want to make your breakfasts varied, but you are tired of typical sandwiches, take a closer look at the recipe for puff pastries with cheese and ham. For preparation, it is recommended to buy sheet yeast-free dough in the store or prepare it yourself. You will need the following ingredients:
- 2 plates of yeast-free dough;
- egg;
- 250 grams of ham, you can take chicken fillet or sausage, give freedom to your imagination;
- 400 grams of cheese, both ordinary Russian and more exotic, for example, Suluguni, will do;
- 2-3 spoons of poppy seeds or sesame seeds.
The cooking process consists of the following steps:
- First, cut the ham (sausage) into 8 slices. This is exactly how much is required for a portion of two sheets of dough. Also cut or grate the cheese. If you want to prepare puff pastries for breakfast in a limited time, it is better to grate them, so the cheese will quickly reach the desired consistency.
- Prepare the dough; it should be at room temperature.
- Roll out a sheet of dough 1-2 mm thick and cut it into 4 parts. From two plates you will get 8 squares.
- Place a slice of cheese or grated cheese on each square, and a piece of ham (sausage, meat) on top.
- Fold the squares in the shape of an envelope, pinch the edges, you can make them curly. To prevent them from coming apart, moisten them with water.
- Brush the buns with beaten egg. This is necessary so that they become golden after baking.
- Sprinkle poppy seeds or sesame seeds on top.

Brazilian cheese buns
Traditional Brazilian buns are baked from choux pastry prepared with special flour – tapioca. Tapioca is a flour (or starch) extracted from the roots of the tropical cassava plant. This product is distinguished from the usual wheat flour by the absence of fats, proteins and gluten.
You can replace this flour with another, but these will no longer be Brazilian cheese buns, for which you need to take:
- 500 g tapioca flour;
- 300 ml water;
- 250 g hard cheese;
- 150 ml vegetable oil;
- 2 eggs;
- 7.5 g salt.
Preparation:
- Bring milk, butter and salt to a boil, add tapioca flour to the boiling mixture and cook like a regular choux pastry.
- When the base has cooled a little, add eggs and small cheese shavings. Stir everything with a spoon until the cheese is evenly distributed in the dough.
- Turn on the oven to warm up to 180 degrees. Prepare a baking sheet by greasing it with butter and lightly dusting it with flour.
- Next, with wet hands, take small pieces of dough, roll them into balls and place them on a baking sheet. The Brazilian buns are baked for about 25 minutes until golden brown.
