Meatballs in tomato sauce are often called meat balls in Europe, although a meatball in Scandinavia is just a meat flatbread like our cutlet. The worldwide fame of this dish was brought by the resilient Carlson, who built pyramids from this dish in the company of the Kid. Since then, most children (at least those who are familiar with this character) love spaghetti with meatballs in tomato sauce, and strive to build a tower of meat balls, like their favorite hero. Who knows, maybe this wonderful dish contains the inexhaustible source of optimism that permeates “a man in the prime of his life”?
Cooking minced chicken
To cook meatballs in tomato sauce (in a frying pan) according to the recipe of Italian chefs - masters of perfect gravies, you must first deal with the minced meat.
Meat balls made from chicken meat are especially tender, so if you cook for children, then it is in this version. Products you will need:
- 1 kg chicken fillet;
- 4 tbsp. l. heavy cream and the same amount of breadcrumbs. You can mix them initially so that the crumbs are well soaked;
- 2 eggs;
- 1/2 tsp. black pepper, a pinch of nutmeg and salt to taste.
Primary heat treatment
Minced meatballs in tomato sauce are prepared using the usual method: the meat is ground in a meat grinder, mixed with breadcrumbs and spices swollen in cream, and eggs are also added. The whole mass is thoroughly mixed with your hands, and then small balls (the size of a small plum) should be molded from it. It is necessary to carefully knead each lump, making sure that the edges of the meatball are even, otherwise it may fall apart during frying.
Heat a frying pan and fry the balls over high heat in three tablespoons of vegetable oil until richly browned. You can already feel the amazing aroma of meatballs in a frying pan with tomato sauce: they will be simply delicious! Place the finished meat lumps in a wide dish (for example, a baking sheet), if possible in one layer.
How to prepare gravy?
Considering that meatballs are usually cooked in a frying pan in tomato sauce, the gravy recipe could be as follows: finely chop one onion and fry in two tablespoons of vegetable oil until transparent, add one finely grated carrot and 1/2 bell pepper, chopped fine with straws. Fry the vegetables until soft, add 2 tbsp. l. tomato paste diluted in 1 tbsp. warm water (water can also be replaced with orange juice, which will give the gravy a special flavor). Salt to taste, lightly pepper and add 1 tsp. sugar, as well as any spice to your taste: it could be basil, oregano or coriander. Let the gravy simmer over low heat for five minutes.
Also, tomato sauce for meatballs can be spicier, with a rich flavor composition. Chop a large onion and fry in three tablespoons of vegetable oil, add three cloves of garlic, crushed in a press, as well as 1/4 tsp. ground oregano and coriander. Pour two glasses of tomato juice or two tablespoons of paste diluted in one glass of warm water. Let the sauce boil for three minutes, then add 2 tablespoons of hot ketchup and the same amount of thick sour cream. Add salt to taste. Simmer for another three minutes and then use to make spaghetti with meatballs in tomato sauce.

How to cook chicken meatballs in a frying pan
- First we'll tackle our tomato sauce. Pour olive oil into a small saucepan and place it over medium heat.
- Wash the tomatoes, pour boiling water over them, remove the peel and remove the central hard part. Grind in a blender or chop very finely.
- Peel the garlic and finely chop it. Place it in olive oil and fry until golden brown.
- Add dried oregano, chopped tomatoes and a spoonful of tomato paste.
- Simmer for 15 minutes until the sauce thickens, at this time it is better to reduce the heat to low and stir constantly so that the sauce does not burn. Set the prepared sauce aside.
- Now let's make meatballs. Peel the onion and finely chop it, or grind it in a blender. You can also simply grate it on a coarse grater.
- Three parmesan on a fine grater.
- In a deep container, mix minced chicken, chopped onion, breadcrumbs and grated Parmesan.
- Beat the egg and add it to the rest of the ingredients. Also wash the parsley, chop finely and add to the minced meat.
- Salt and pepper the future meatballs, mix well and form small balls with raw hands.
- In a large frying pan, heat a small amount of oil over medium heat, then place our meatballs in it in one layer, leaving a decent distance between them.
- When we notice that the meatballs are already browned at the bottom, turn them over with a flat spatula. When all the minced meat has been more or less taken in, uniform frying can be ensured by constantly shaking the pan - the meatballs will roll around and be well fried on all sides.
- Pour the prepared meatballs with tomato sauce, simmer for another five minutes and remove from the heat to let sit for 10 minutes.
These meatballs are ideal for spaghetti, side dishes of cereals or mashed potatoes. Just before serving, you can grate a little more Parmesan on top of the dish to add even more flavor.
The final touch
When all the meat balls are fried, the gravy is also ready - pour the meatballs with tomato sauce in a frying pan so that they are almost completely covered with the mixture, and put on the stove, the fire should be low. Close the dish with a lid and simmer the dish for eight to ten minutes. You can also optionally add a sprig of fresh basil or thyme to the sauce if you like dishes with the rich aroma inherent in Italian cuisine.
You can also cook meatballs in tomato sauce in the oven, placing them in a form with high sides or on a baking sheet and pouring gravy over them. They are baked for no more than 15 minutes at a temperature of 220 degrees. When serving, you can sprinkle with herbs or cheese.
Fish balls in the oven
In tomato sauce, with aromatic spices and a delicious cheese crust, this dish will not leave anyone indifferent. To prepare, you will need fish fillet (800 grams), which must be ground into minced meat in a meat grinder. You can use pike or pike perch, the more inexpensive hake and pollock will also work. You also need to prepare the following ingredients:
- one hundred grams of milk or cream;
- 3-4 slices of white bread, stale if you have it;
- one small onion;
- two eggs;
- three cloves of garlic;
- 1/4 tsp. grated nutmeg;
- 150 grams of hard cheese.
Mix minced fish with chopped onion and garlic, add spices and salt to taste, beat in the eggs and mix the mixture thoroughly. Using hands dipped in water, form small meatballs and place them on a greased baking sheet at a short distance from each other. Bake in the oven at 230 degrees for fifteen minutes, then pour in the sauce, sprinkle with grated cheese and continue the baking process for another ten minutes.

Every lover of meat cutlets, meatballs and meatballs knows that these dishes are incredibly tasty when they are first fried in a frying pan and then stewed in it with some kind of sauce.
However, such a dish can be taken to a completely different level if you do the same thing in the oven. Baked meatballs in sauce is a truly magnificent dish, for which the most suitable place is a festive table.
Ingredients
For the meatballs
- Minced chicken – 500 g;
- Onion – 2 pcs;
- Chicken eggs – 2 pcs;
- Carrots – 1 piece;
- Wheat flour – 2-3 tbsp;
- Salt and pepper - a pinch.
For the sauce
- Onion – 1 piece;
- Garlic – 3-4 cloves;
- Medium carrots – 1 piece;
- Tomatoes – 3 pcs;
- Concentrated tomato paste – 1 tbsp;
- Sour cream – 5 tbsp;
- Purified water – ½ cup;
- Salt and pepper - to taste;
- Provençal herbs – 1 tsp;
- Bay leaf – 2 pcs.
How to make meatballs from minced chicken in the oven
- Peel the onions and carrots. Grate on a fine grater.
- Heat a little vegetable oil in a frying pan, saute the carrots and onions for 5 minutes over medium heat.
- Beat chicken eggs in a small bowl.
- Place the minced meat in a deep saucepan, pour in the eggs, add the fried carrots and onions, salt and pepper to taste. Mix everything well.
- Place foil on a baking sheet and pour some water. With wet hands, form meatballs and place them on a baking sheet.
- We preheat the oven to 200 degrees and send our meat balls there. They will bake for 20-25 minutes, in the meantime we will start filling.
- Peel the carrots for the sauce and grate them on a coarse grater.
- Scald the tomatoes, remove the skin and finely chop with a sharp knife.
- Peel the onion and cut into small cubes. We also remove the skin from the garlic and pass it through a garlic press.
- Pour some sunflower oil into a deep frying pan and turn on medium heat. First load the carrots and onions into the bowl.
- When the onion has acquired a golden hue, add tomatoes and garlic pulp.
- When the tomato pieces become quite soft, add tomato paste and simmer for another 2-3 minutes.
- Season the sauce a little, add Provençal herbs, sour cream, bay leaves and any spices you like. When it thickens, add a small amount of water - do not overdo it, otherwise the sauce will turn out too thin.
- Bring to a boil and cook for about 10 minutes until the mixture is medium thick.
- By this time, our meatballs should already have a golden crust. Carefully transfer them to a deep baking container. Pour our sauce on top - it should completely cover the meatballs.
- Place the pan back in the oven and bake at the same temperature for about half an hour.
Remove the pan from the oven and, using a tablespoon or ladle, place the meatballs on top of any side dish. It will be even tastier and more elegant if you sprinkle the finished dish with finely chopped fresh herbs.
Preparing the sauce
Tomato sauce for meatballs in the oven can be used from the options proposed above, and you can also prepare a sauce in the spirit of Mediterranean cuisine, which goes well with any fish dishes. To prepare it, you need to take six large, fleshy tomatoes and, after pouring boiling water over them, remove the skins from them. This is easy to do by making a cross cut across the top of the fruit. Next, grind them using a blender into a puree, adding in the process six cloves of garlic, 1/4 teaspoon of hot cayenne pepper and 1 teaspoon. dried thyme. Heat three tablespoons of olive oil in a frying pan, pour the tomato mixture into it and add half a glass of water. Let the sauce simmer for a few minutes, then add salt to taste. The sauce can then be used to top meatballs or simply as a sauce for spaghetti.
Preparation
1. Cut white bread into small pieces, soak in a plate in a small amount of milk or water.
2. Rinse the pork and cut into small pieces so that it is convenient to grind them in a meat grinder. Peel the onion and rinse. Cut in half.
3. Grind the prepared meat, half an onion, and squeezed white bread through a meat grinder. Add some salt and pepper, add spices and stir.
4. With wet hands, form small pieces. Place them on a separate plate.
5. Finely chop the other half of the onion. Rinse the carrots thoroughly and grate on a medium or large grater. Place a frying pan on the stove, add a little vegetable oil and heat it up. Then add the onions and carrots and fry over moderate heat until soft, 7-10 minutes.
6. Add flour to the sautéed vegetables. Stir.
7. Add tomato paste and sour cream (paste can be replaced with tomato juice). Pour water or broth over the vegetables and mix thoroughly. Cook for 8-10 minutes over moderate heat.
8. Add salt, pepper and stir. Continue to simmer over low heat for 2-3 minutes.
9. Place the semi-finished meat products in a baking dish, pour the prepared tomato sauce over them and bake in the oven. Cook the meatballs at 180 degrees for 40-50 minutes.
10. Meatballs with gravy are ready. Serve as a separate dish or as an addition to any side dish.

A step-by-step recipe for meatballs in tomato sauce from distant Sweden looks like this:
- Soak one hundred grams of bread crumb in 100 grams of cream for five to ten minutes.
- Mix three hundred grams of minced pork and beef and add the bread mass to them.
- Chop one onion very finely, sprinkle with a pinch of salt and 1/2 tsp. black pepper and add to the meat mixture.
- Mix a tablespoon of prepared mustard with one egg to a uniform consistency and pour into the minced meat, mix it with your hands, trying not to delay the process, otherwise the finished meatballs will not be light and airy.
Make small balls and fry in a frying pan until golden brown. The heat of the stove should be intense, and care should be taken to ensure that the minced meat does not burn: you need to constantly turn the meat balls with a fork or shake the pan, tilting it from side to side and back and forth, as the Swedes do. Next, pour the meatballs with tomato sauce according to the recipe (any) suggested above, simmer for ten minutes. Can be served with mashed potatoes.
Meatballs in BBQ sauce
Very tender and at the same time piquant in taste, thanks to the combination of sauces and spices. To prepare them you need:
- Minced meat (can be mixed from pork and veal) – 1 kg,
- Bulb,
- Red sweet pepper,
- Egg,
- Rusks for breading mixture,
- Salt,
- Flour,
- Pepper,
- Oil for frying.
For the sauce:
- Ketchup - half a glass,
- Tomato paste - a third of a glass,
- Water - glass
- Sugar, salt, hops-suneli,
- Chili sauce - a third of a glass,
- White vinegar – 10 ml.
Action plan:
- Finely chop the onion and pepper.
- Mix minced meat, vegetables, egg. Salt and sprinkle with pepper.
- Roll the meatballs with wet hands, roll in the breading mixture (crumbs and flour) and fry on all sides.
- In a stewing container, mix pasta, all sauces, water, vinegar. Add sugar, spices.
- Place the meatballs in the sauce and simmer for half an hour.
With cauliflower and greens
When preparing meatballs, it is not necessary to follow the traditional recipe; we recommend that you come up with something original, for example, adding vegetable to regular ground beef. To do this, you can use cauliflower, which goes well with almost any minced meat due to its freshness.
For 500 grams of minced meat you will need:
- Boil three hundred grams of cauliflower for five minutes, drain in a colander and grind into a puree.
- two eggs;
- 3 tbsp. spoons of soy sauce;
- 50 grams of breadcrumbs;
- a bunch of parsley. It needs to be chopped very finely;
- 1/2 tsp. coriander and the same amount of black pepper;
- 1 tbsp. spoon of dried ginger.
Mix all the products together, salt the minced meat to taste and form it into balls with a diameter of no more than four centimeters. Fry in vegetable oil in a deep frying pan until golden brown and add tomato sauce of your choice. Simmer the meatballs in the gravy for ten minutes and serve immediately with your favorite side dish and vegetable salad.
