Classic salad recipe with crab sticks, corn and fresh cucumber

The salad according to this recipe is prepared with fresh cucumber, so to speak, a summer version. It tastes light, festive and very tasty! The key to the success of this dish is high-quality crab sticks and sweet corn, so the choice of ingredients must be approached carefully; when purchasing, carefully read the composition. To prepare you need:

  • Crab sticks - 240 gr.
  • Corn - 1 can
  • Eggs - 3-4 pcs.
  • chicken breast -250 gr.
  • Fresh cucumber - 1-2 pcs.
  • Mayonnaise
  • Salt to taste

Cooking process:

  1. The first step is to boil the chicken breast in salted water, hard-boil the eggs, then cool and peel them. Wash the cucumbers and drain the brine from the canned corn. Remove the sticks from the wrapper; if you have them frozen, you need to remove them from the refrigerator in advance and defrost them at room temperature, otherwise they will lose their juiciness. I have them chilled, so I immediately start chopping them into small cubes

Important! Carefully read the composition of crab sticks, it should contain minced fish “surimi” in the first place in the list of ingredients, if it is in the second and lower, this means that there is a minimum of surimi in the composition. If there is no minced fish in the composition, then you should not buy this product. High-quality crab sticks should taste juicy and look neat and elastic in appearance.

4. My cucumbers have thin skin, so I won’t cut it off and cut it into cubes just like the rest of the salad ingredients.

I add mayonnaise little by little so that the salad is not dry, and I add as much as needed, focusing on the thickness of the mayonnaise. If you overdo it, the vegetables will float in it and the salad will not hold its shape.
