Ilya Nikolaevich loves cranberries, so I decided to pamper him with pies with them. I actually wanted to cook it using a different recipe, but while surfing Western blogs I saw this miracle. The dough is very tasty, shortbread, but in the end it turns out like a puff pastry, the filling is rich and bright, so I recommend it. In addition, you can use both fresh and frozen berries. The recipe is simple and easy, but there are several points that I will explain that will be useful for novice cooks.

For about 16 pies, if you have a 7.5 cm diameter mold:

Dough:

  • 400 g flour
  • 2 tsp Sahara
  • 230 g butter, very cold
  • 1/2 tsp. salt
  • 1/2 cup cold water

Filling:

  • 0.5 l cranberries (fresh or frozen)
  • 1/2 cup of sugar (with this amount the filling gets a sweet and sour taste, even more sour, I would advise taking more sugar or adding honey to taste)
  • 2 small apples
  • 2 tsp orange zest, finely grated

For lubrication:

  • 1 egg
  • 1 tbsp. water Shake the egg with water, but not too much.

For sprinkling

  • sugar, preferably in large crystals

The dough for these pies can be made in two ways.
1)
Place all ingredients except water into the bowl of a food processor or mixer and mix for 30 seconds to form fine crumbs. Then add water and knead the dough.

2)

I don’t have a food processor, so I made the dough by hand, especially since it’s very simple and quick.

In a bowl, mix flour, sugar and salt. And we begin to grate the butter in several passes on a coarse grater, after each pass, mix the butter with the flour mixture, rubbing it slightly. Then grind the mixture with your hands until it turns into crumbs. This must be done quickly so that the butter does not start to melt.

Add 1/4 cup cold water and start kneading the dough. Add the remaining water and knead the dough. But you don’t need to crush it too much, gather it into a ball and that’s it. If the dough does not form into a ball and crumbles, add another 2 tbsp. water. Wrap the dough in cling film and refrigerate for at least 30 minutes.

For filling

Place the cranberries in a saucepan and place it on the stove over medium heat. When the berry begins to crack (sounds like small pops appear), add sugar and zest. cook over medium heat, stirring, for about 15 minutes until thickened.

I cooked the cranberries until they were as in the photo, so that the mass was thick enough. Remove the skin and seed from the apples. cut into small pieces and add to the cranberries, stir.

Roll out the dough on a floured surface to a thickness of 1.5-2 mm. Using cutters, cut out an even number of circles, two per pie.

Place the circles on a baking sheet lined with parchment paper. Brush the edges with the egg wash to leave enough room in the center for the filling.

In the circles that I will be making on top, make 4 small cuts in the center, do not be too zealous, otherwise all the filling will leak out.

Spread the filling, but only a little, cover the top with circles and press just a little. Important!

You just need to lightly press the mugs together, otherwise you will end up with pies like mine, looking like flying saucers.

Brush the pies with the egg mixture and sprinkle with sugar.

Place the pies in the oven, preheated to 210 degrees. Bake for 15 minutes until golden brown. If you end up with such “flying saucers”, then before putting them in the oven, carefully press the edges with a fork, as you would for chebureks, then they will be more beautiful. Unfortunately, I remembered this too late.

In theory, the pies should look something like the photo below. These are small pies that I didn’t press too hard. More cute and one bite.

Ingredient proportions for this sweet masterpiece:

  • flour – 215 g;
  • butter – 95 g;
  • egg – 3 pcs. (1 per dough);
  • powdered sugar – 45 g;
  • sour cream – 210 g;
  • sugar – 115 g;
  • cranberries – 220 g;
  • starch – 35 g.

Baking algorithm:

  1. Sift flour and powder into a bowl, add soft butter and egg, mix.
  2. In a mold (Æ 24 cm), spread the dough onto the bottom and sides. Bake under load for 15 minutes. at 180 °C.
  3. Beat sour cream with sugar, eggs and starch. Fill the base of the pie with berries, pour the filling on top and cook for another 40 minutes.

Before you start tasting the pie, you should let it cool, or even better, keep it in the refrigerator for a couple of hours.

Noteworthy dietary baked goods


Many people who follow a diet often complain about their diet. But a lot depends on the approach to the matter. Enterprising chefs prepare a variety of delicious desserts and baked goods that are low in calories. One of them is Lenten cranberry pie. It consists of simple components:

  • flour;
  • granulated sugar;
  • low-fat cottage cheese;
  • soda;
  • corn oil;
  • cranberries;
  • Orange juice;
  • Apple vinegar;
  • potato starch;
  • salt.

First, beat the orange juice, sugar and corn oil.
