If the head is black, it means that the shrimp was cooked, but it was not frozen for some time (i.e., sorry, it started to spoil...) The shrimp should be folded in half - just like in the photo. If the shrimp is unwrapped, i.e. its tail is not tucked tightly to the head, this means that the shrimp died a natural death, and then was frozen, which apparently also means that it could begin to deteriorate... The fact is (terrible things indeed) that after catching (live) shrimp should Boil immediately in boiling sea water... Right on the trawler. Then they tuck their tail between their legs... And immediately freeze them. Then they will be tasty, juicy, fresh and very healthy. And if some processing condition is not met, then either the head is black, or the caviar is still black, or the tail is straightened... Here. Maybe it will be useful for someone, for example, my child loves shrimp, I wouldn’t want to feed him low-quality products. So if I find something like this in purchased shrimp, I throw it away without regret. Well, before buying, I carefully examine what’s inside the package.
I defrost it simply - I put it under hot water, the ice and snow (if any) melt, and I just leave it to sit at room temperature. Or generally only at room temperature.
