Cooking method:

  1. Tzatziki is perfect from all sides - it is prepared simply, healthy and harmonizes perfectly with many dishes. To prepare this sauce, you need to grate cucumbers on a coarse grater and drain excess water from them.
  2. Then you need to pass the garlic through a press, chop the greens finely and mix everything with yogurt. Add salt, pepper, olive oil, vinegar and mix everything again.
  3. It is best to serve tzatziki chilled, garnished with a sprig of herbs, a black olive, and a drop of olive oil. This sauce is great for fish, meat dishes, and potatoes.

Preparation

1. Rinse the cucumbers in water. If you like the delicate taste of the sauce, then peel the vegetables using a vegetable peeler. Rinse them and grate them on a coarse grater.

2. Peel the garlic cloves and squeeze them through a press into the cucumber mass.

3. Wash half a bunch of dill and chop it with a knife, pouring it into a bowl with the rest of the ingredients.

4. Add salt and oil. Instead of olive oil, you can use vegetable, sunflower and even sesame oil.

5. Pour in the yogurt. It should be classic - without additives. The ideal option is homemade yogurt, which was prepared with your own hands, but it can be successfully replaced by Activia, which fills store shelves with dairy products.

6. Mix all the ingredients and place the prepared Tzatziki sauce in a gravy boat for serving.

7. Serve with meat, fish and vegetable dishes.

Recipe 4: Tzatziki sauce with cheese and pepper

  • 200 g yogurt or sour cream
  • 100 g feta cheese
  • half paprika pepper
  • 1 fresh cucumber
  • 3 cloves garlic
  • olive oil

1. Peel the cucumber. Grate it on a fine grater. We squeeze it out. Take yogurt or sour cream (I took it in half), add grated cucumber to it.

2. Cut the paprika into small cubes. Add to the mixture with the cucumber.

3. Chop the garlic using a garlic press and add to the yogurt with sour cream.

Cooking method:

  1. Grate the thoroughly washed cucumber on a coarse grater. If it has a rough peel, then it is better to peel the cucumber first.
  2. Transfer the grated mass into a colander, after mixing it with salt, and then squeeze thoroughly so that all the juice comes out of the cucumber.
  3. This is necessary so that after adding the yogurt the mixture becomes viscous. If the juice has not been squeezed out well, the sauce will be watery.
  4. Cut the garlic cloves in half and remove the green arrows. They are the ones that give any dish with garlic a sharp, unpleasant odor.
  5. Grind the garlic cloves in a wooden mortar, adding a few drops of olive oil and a little salt.
  6. The mass should turn out creamy. And finally, put yogurt, squeezed cucumber mixture, garlic, salt, vinegar (necessarily wine and no other), olive oil into the salad bowl.
  7. Mix the mixture thoroughly. The sauce can be decorated with olives and a sprig of dill. Our tzatziki is ready. In the summer, keep it in the refrigerator for a while - it will become even tastier. Now it can be served to the table.

  1. Wash the cucumbers. Grate them on the finest grater along with the skin.
  2. If you use overripe large cucumbers for the sauce, then you need to cut out the pulp with large seeds.
  3. To obtain a thicker consistency of the finished sauce, it is recommended to squeeze the cucumbers through cheesecloth to remove excess juice.
  4. Finely chop the young dill and add to the bowl with the chopped cucumbers.
  5. Squeeze the garlic cloves through a press.

Cooking method:

  1. To make tzatziki sauce at home, use a fresh, crisp cucumber with firm flesh. Rinse thoroughly in running water and dry with a paper towel.
  2. If the peel is thick, remove it with a vegetable peeler. Young cucumbers can be used with the skin on. Grind on a medium grater. Lightly salt and leave for 8-10 minutes so that the cucumber releases its juice.
  3. Place the grated cucumber in a colander and let the resulting liquid drain so that the finished sauce is not liquid, or squeeze out the juice with your hands. Add Greek yogurt to the squeezed cucumber.
  4. It can be bought at any supermarket. It differs from Russian yogurt in its velvety structure and dense consistency. During the preparation process, it is filtered from the whey, achieving the desired thickness.
  5. Greek yogurt is very healthy, it is obtained by bacterial fermentation of natural goat or sheep milk. It contains many vitamins, microelements, high protein and calcium content.

  10. Tzatziki is ready. Place in a container with a lid and place in the refrigerator for a couple of hours. Afterwards, serve with cold cuts, grilled meat, fish, French fries, hash browns, fried zucchini, eggplant or a slice of bread.

You will need:

  • sour cream – 250 grams,
  • cucumber – 1 piece,
  • lemon – 1 piece,
  • garlic – 1 clove,
  • dill - a few sprigs,
  • freshly ground black pepper - to taste,
  • salt - to taste.

Cooking method

  1. Place sour cream in a deep bowl.
  2. Add finely grated and thoroughly squeezed cucumbers.
  3. Place the finely grated garlic in a bowl.
  4. Wash the dill. Let's dry. Finely chop. Add to sauce.
  5. Salt. Let's pepper it.
  6. Pour in freshly squeezed lemon juice. Mix well. We advise you not to pour in the entire volume indicated in the list of ingredients at once; it is better to add in portions, then you can control the taste of the sauce.
  7. The finished sauce should be placed in the refrigerator for a couple of hours, after which you can use it as a tasty addition to meat, fish, vegetables, or enjoy it as a main appetizer. Bon appetit!

Tzatziki sauce with kefir

I offer an express version of Greek tzatziki sauce, i.e. no hanging and squeezing of yogurt, but simply prepared by mixing suitable ingredients. Tzatziki sauce is served with vegetable dishes, meat and fish dishes and is tasty even just as a stand-alone snack with bread (pita, pita bread.)

Ingredients:

  • Kefir (yogurt) - 1 glass;
  • Sour cream - 0.5 cups;
  • Cucumber - 1 piece;
  • Fresh herbs to taste;
  • Garlic - 1 clove;
  • Sea salt or coarse salt - 1 pinch;
  • Lemon juice - up to 1 tbsp. spoons;
  • Pink pepper or a variety of pepper to taste.

Cooking method:

  1. Prepare the following ingredients: kefir or yogurt, sour cream, cucumber, lemon, garlic, herbs, salt and spices.
  2. Grate the cucumber and garlic clove, add salt and leave for a few minutes to allow the cucumber to release its juice.
  3. Mix kefir (yogurt) with sour cream.
  4. Squeeze out the juice from the grated cucumber through a sieve and add its thick part to the sauce.
  5. Stir the sauce and it is advisable to let it stand in the refrigerator for a couple of hours.
  6. Serve tzatziki with any meat, fish or vegetable dishes of your choice.
  7. When serving, add lemon juice, olive oil, chopped herbs, and pink pepper to the tzatziki to taste.

  • There are a lot of recipes for Greek tzatziki sauce made from yogurt, and they all have the right to exist. For example, instead of dill, some housewives put parsley, basil, mint, or both at the same time.   8. Now add a little olive oil (1 teaspoon or dessert spoon, to taste). Mix and taste. Add salt to the sauce.
  9. Transfer to a gravy boat and serve with bread, vegetables, meat, and fish.

Original recipe for tzatziki sauce

In addition to the main ingredients, classic tzatziki sauce may contain herbs, olives, and black pepper. It has a very pleasant and fresh taste, perfect for spicy dishes. It is also served with fish, meat and even bread and vegetables.

Product composition:

  • Garlic clove;
  • 140 g Greek yogurt;
  • A small spoon of olive oil;
  • One small cucumber;
  • A pinch of salt.

  4. Mix the squeezed grated cucumber with three large spoons of the yogurt product, which should be slightly larger in proportion than the green vegetable, mix;
  5. Add garlic, pressed through a press, and olive oil to this mass. Stir, taste, add salt to taste.

Tzatziki - Greek sauce

Ingredients:

  • 1-2 young cucumbers
  • 5 tbsp. Greek or Bulgarian yogurt
  • 1 tbsp. l extra virgin olive oil
  • 5-7 cloves of garlic
  • 1 tsp lemon juice
  • salt (1/5 tsp)

Cooking method:

  1. Wash the cucumbers, dry and grate.
  2. Sometimes the skin is removed, but you can leave it on.
  3. If the gruel turns out to be too watery, you can drain off some of the juice.

  5. Add yogurt (or sour cream) (5 tbsp)
  6. Add 1 tbsp. olive aromatic oil
  7. Squeeze lemon (about 1 tsp)
  8. Add salt (1/5 tsp) and stir
  9. Serve as a dip for vegetables, fish, potatoes, dip thickly and enjoy a Greek meal with a glass of ice-cold ouzo.

Greek tzatziki sauce

Ingredients:

  • lemon juice – 1 tbsp. l.
  • chilled sour cream – 2 tbsp. l.
  • dried dill and dried parsley - 1 tbsp each. l.
  • coarse salt, preferably sea salt
  • 1 large cucumber
  • garlic – 2 cloves
  • 500 ml natural yogurt

Cooking method:

  1. Cover the sieve with a linen napkin and leave for 30 seconds. Place in a saucepan of boiling water.
  2. Remove the sieve, place the yogurt in it, cover with film and leave overnight.
  3. Peel the cucumber, cut in half, remove the seeds. Grate, mix with salt and leave for 3 hours.
  4. Squeeze out the juice from the infused cucumber. Place the yogurt in a bowl, add sour cream, lemon juice, chopped garlic, cucumber, dried dill and parsley.
  5. Stir and refrigerate for at least 2 hours.

Recipes with tzatziki sauce

Greek yogurt condiment is often served with gyros or sulvaki - Greek fast food in the form of small kebabs, with meze - the name given to a plate of small portions of various snacks. Tzatziki is spread on bread and seasoned with vegetable salads.

  1. Gyros
    . Knead the dough. Dry yeast, 4 g, is diluted in 150 ml of warm boiled water. 300 g of high-grade wheat flour is sifted and combined with cumin - half a teaspoon. Mix with yeast along with olive oil - 2 tbsp. l., salt. Let the dough rest while filling is done. Chicken fillet, 0.5 kg, beaten and marinated in olive oil - 1.5-2 tbsp. l., to which a large number of spices were added: 1/3 tsp. cumin and coriander, 1/2 tsp each. paprika, black pepper, oregano, marjoram and thyme. After 30 minutes, rub the marinade into portioned pieces and fry them on both sides until cooked. When the meat is ready, the dough is rolled out into thin flat cakes and fried on both sides in a dry frying pan. Place meat, slices of tomatoes and red onion in half rings, some lettuce leaves and 2-3 tbsp in each flatbread. l. yogurt sauce. Fold the flatbread in half. Better to eat while it's hot.
  2. Cheese seasoning
    . The seasoning is prepared according to the classic recipe. Then add pieces of feta cheese or feta cheese. The finished dish is sprinkled with chopped dill and parsley.
  3. Salad option
    . The dish is made based on the classic tzatziki recipe, but the quantity of ingredients is changed. 2-3 cucumbers are finely chopped together with the peel, mixed with crushed garlic - 1-2 cloves without the core, sprinkled with fresh dill - a bunch, add a little salt. Season with 1 tbsp. l. olive oil and thick yogurt. This salad is a great dinner on a low-calorie diet.
  4. Meat snack
    . Puff pastry can be purchased at the store or made yourself. Quick recipe: mix 500 g of flour with 200 g of margarine, egg, salt, pour in a glass of ice water and 1 tsp. vinegar. If necessary, add flour. The elastic soft batch is divided into several parts, each is rolled out into a layer and greased with butter. Lay the sheets on top of each other and roll them out again. Now roll it up like a snail, wrap it in cling film and put it in the freezer for 15 minutes. Roll out one last time into a layer and can be used for baking. Use a plate to cut out identical circles and press them inside with a glass to form an inner circle. Bake at 200°C for 15 minutes. The edges are raised and a plate is formed. For minced meat, grind 300 g of beef with onions - 2 pieces, beat in an egg, dill with parsley, add salt. Shape the meat into meatballs and fry in oil until cooked. Place 2-3 meatballs and tzatziki in each plate - the recipe does not matter. The dish is served as an appetizer with beer or red wine.
  5. Beetroot with sauce
    . Tzatziki is prepared according to any of the described recipes, increasing the amount of garlic. Walnut kernels are ground into powder. Place beet slices and seasoning on the dish in layers, sprinkle with nut crumbs, and give the dish a cone shape. Top with tzatziki sauce.
  6. Cold appetizer
    . The condiment is often served with croutons. If the dish is prepared for breakfast, cut the slightly dried loaf into thin slices, beat the eggs with a small amount of milk, soak the bread pieces in this mixture and fry them on both sides in refined sunflower oil until golden brown. Apply the tzatziki and eat immediately. The combination of hot bread and cold sauce creates the extraordinary taste of the dish.
  7. Beer snack
