Ingredients:

  • Chicken legs – 1 kg.,
  • Pumpkin – 300-400 gr.,
  • Spices – 1 teaspoon,
  • Balsamic vinegar - 3 tbsp. spoons,
  • Apple cider vinegar – 2 tbsp. spoons,
  • Salt – 1 level coffee spoon,
  • Garlic – 3 cloves,
  • Onions – 2 pcs.,
  • Refined sunflower oil – 80-100 ml.

Chicken with pumpkin in the oven - recipe

Any parts of the chicken for baking that you choose should be checked for feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to pat the meat dry with napkins or a paper towel. It is advisable to cut whole chicken legs, consisting of thigh and drumstick, into two parts at the joint. Today I will bake chicken thighs with pumpkin.

Peel a piece of pumpkin and remove seeds. Cut the pumpkin pulp into cubes approximately 2 by 2 cm in size.

Peel the onion and cut it into rings. Cut the onion rings in half. And in half again. The end result should be quarter rings.

Let's move on to the next stage - preparing the marinade. To do this, pour sunflower oil into a bowl.

Add spices.

The baking time for pumpkin depends on its variety. Summer varieties cook much faster. Their flesh is more tender. But winter ones take a little longer to prepare. But you can prepare this dish from winter varieties of pumpkin even for the New Year. It is worth considering that the smaller the pumpkin, the tastier it is. A pumpkin weighing more than 5 kilograms is already overripe, although it all depends on the variety.

Step 1

Wash the pumpkin, peel it, cut it in half. Remove the seeds from the pumpkin (do not throw it away!). Cut the pulp into medium-sized cubes (about 1.5-2 centimeters).

Wash the chicken breast fillet, dry it, cut into small pieces (if there are bones, remove them). Place the pieces of chicken meat into a deep bowl, add 1 tablespoon of dry basil, 1 tablespoon of vegetable oil, salt to taste, mix well. Place the prepared meat in a baking dish and set everything aside for a while.

Step 3

Now let's prepare the pumpkin. Place the previously chopped pumpkin pieces into a large cup, add 1 tablespoon of marjoram, 1 tablespoon of vegetable oil, and add salt to taste. Then stir so that the salt and seasoning are evenly distributed. Add here 2 tablespoons of peeled pumpkin seeds, 1-2 cloves of finely chopped garlic. Mix again.

Step 4

Next, place the pumpkin cubes in a baking dish directly on top of the meat. We get 2 layers.

Step 5

Cut 100 grams of Parmesan cheese into small cubes, chop 180 grams of Dorblu cheese into large pieces. Place 2 types of cheeses on top of the pumpkin. Cover the pan with foil (the glossy side inward so that the dish cooks faster and browns better). Bake everything in the oven at 200 degrees until the pumpkin is ready (about an hour).
