And if it’s summer, then buy the ripest and juiciest tomatoes - so that they burst with juice inside. Wash them, put them in a bowl and pour boiling water over them. After a couple of minutes, easily remove the skin, peel and chop finely into a paste. If you're not too lazy, you can puree the tomatoes in a blender.
- Take yellow or orange sweet peppers, but you can also use red ones. With yellow sauce it will look more colorful and appetizing. Cut the pepper in half and remove any inedible insides. Then chop the pepper into small, even cubes.
- We only need a few carrots, so take either a miniature one or half a medium one. Let's clean it and grate it on a medium grater.
- Peel the garlic and chop it with a knife. You can put it through a crusher, but finely chopped will retain its flavor better.
- Prepare a large deep frying pan, place it over high heat and pour two tablespoons of vegetable oil.
- When the oil is slightly warm, add the chopped onion. Stir with a wooden spatula, let it fry for just a couple of minutes - this is enough for the onion to turn golden and begin to spread its delicious aroma throughout the kitchen.
- Then add the carrots and peppers to the onion and fry together for another 3-5 minutes. Stir frequently, making sure nothing burns. And then reduce the heat.
- Add flour, dissolve it in the total mass of aromatic vegetables. Add tomato paste and tomatoes. If you are cooking without tomatoes, then simply add 3-4 tablespoons of tomato paste. Add a couple of tablespoons of water and stir everything. The mass should not boil too much, just steam.
- Add sugar, salt and lemon juice, spices and herbs. Throw in a teaspoon of mustard - take mild, but aromatic, so the taste will be more piquant.
- Now the mixture should simmer for about 10 minutes, without a lid. If it thickens too much, add water.

2 tbsp. water, 2 tbsp. l. tomato paste, 2 tbsp. l. flour, 1 tsp. coriander, 5 black peppercorns, ½ tsp. salt, bay leaf, sugar - to taste.

Ingredients:
½ cup ketchup, 1 orange (juice), ¼ tsp. hot sauce or chili pepper, 2 tbsp. soy sauce, 2 tbsp. grain mustard, 2 tbsp. apple cider vinegar, 2 tbsp. starch (preferably corn starch), 2 tbsp. Sahara.
Preparation:
Combine orange juice, sugar, starch and apple cider vinegar and stir until sugar dissolves. In a separate bowl, mix ketchup, soy sauce and hot sauce or ground red pepper and mustard.
