Hello, dear readers of the Domovenok-Art blog! And again a series of holidays is approaching with all that it entails. And what would it be without a feast! Very often, the holiday table includes meat snacks, including chicken. So what to cook from chicken fillet?

Today I’ll tell you a recipe for a wonderful chicken dish in the oven, which is perfect for the holiday table. We are talking about chicken rolls with mushrooms and cheese

. A very tasty thing, if you haven't tried it yet. But the best part is that this dish uses only simple ingredients.

For 4 rolls we will need:

  • large chicken breast – 1 pc. (or 2 large chicken fillets);
  • small jar of mushrooms;
  • cheese – 150 gr.;
  • egg – 2 pcs.;
  • vegetable oil – 1 tablespoon;
  • mayonnaise or sour cream sauce (I used mushroom mayonnaise sauce) – a couple of tablespoons;
  • garlic – 2 cloves;
  • spices, salt - to taste.

How to cook chicken rolls with mushrooms

1. Prepare the eggs. Beat them a little in a mug and add salt. And then pour it into a hot frying pan, after pouring a little vegetable oil into it. Bake the eggs, covered, over low heat until cooked (well, I think there’s no need to tell me how to make scrambled eggs).

2. Take chicken fillet (chicken breast halves) and cut it lengthwise into 2 or 3 parts (depending on the thickness of the piece). We beat each piece. You can keep the battered pieces in a marinade of sour cream (or mayonnaise), salt and spices for a couple of hours (as in the recipe for baked chicken in the sleeve ). But if you don’t have any time at all, you can do without it.

3. Prepare all the necessary ingredients. Chop the garlic, cut the mushrooms and cheese into strips, and also cut the scrambled eggs into quarters.

And here is another very original dish - chicken roll with mushrooms and cheese, baked in bacon. This is a very simple recipe, suitable for both everyday and holiday menus. It is the bacon that gives the chicken tenderness and juiciness.

To prepare chicken roll with mushrooms you will need: 0.4-0.5 kg of mushrooms, 1 kg chicken breast, 2 leeks, 2 large slices of cheese, 1 kg of bacon. Additionally, you need vegetable and butter (approximately 1 tsp each), as well as salt, spices and ground pepper.

If you were unable to purchase leeks, you can replace them with regular onion turnips.

Cooking process:

  1. Wash the leek and cut into rings or cubes (in the case of turnips).

  2. Heat a frying pan, pour in vegetable oil mixed with butter and fry the onion. Meanwhile, quickly wash the mushrooms, dry them on a towel, cut them into pieces and place them next to the onions. Fry the contents, stirring occasionally, after setting the heat to medium.

  3. Wash the meat, dry it on a towel and make a cut along, but not all the way through. As a result, you should get a kind of open “book”. Lightly beat the pulp with a hammer.

  4. Grease the meat a little with vegetable oil, sprinkle with spices, salt and pepper.

  5. After 10 minutes from the start of frying the mushrooms, increase the heat and fry until the mushrooms become golden. Then turn off the heat and cool the mixture.

  6. Transfer the breast to cling film so that you get a whole “canvas”.

  7. Distribute the onion and mushroom mixture evenly over the meat. To make the future roll juicy, place pieces of lard or bacon on top.

  8. Top with cheese, grated if desired.

  9. Using cling film, roll the meat and filling into a roll.

  10. Wrap the meatloaf with mushrooms in bacon on top. This will prevent it from drying out.

  11. Place foil on a baking sheet or grease well with oil, place chicken roll with mushrooms and bake in the oven for half an hour. Then check for readiness.

The roll can be served hot or cold, as a whole piece or cut into portions.

The filling for chicken rolls can be changed to your own taste, for example, adding tomatoes or eggs. Additionally, you can serve sour cream, garlic or sweet sauce. Try it! We assure you that this dish will become a signature dish.

Appetizer with cheese and pineapples

Ingredients:

  • 700 g chicken breast;
  • 150 g canned pineapples;
  • 100 g “Russian” cheese;
  • 1 tbsp. l. table mustard;
  • salt.

Preparation:

  1. Wash each breast and cut in half along the grain. Beat with a special hammer, after covering with cling film.
  2. Coat each piece of meat with table mustard and salt.
  3. Place grated cheese and pieces of canned fruit on the base.
  4. Roll the chops into rolls, tie them with thread and place them in a baking dish.
  5. Cook the treat for 35 minutes at 180 – 185°C.

Bacon Wrapped Recipe

Ingredients:

  • 2 poultry breasts;
  • 2 pcs. colored sweet peppers (yellow and red);
  • 200 g cream cheese;
  • 2 tbsp. l. chopped parsley;
  • 1 tbsp. l. chopped dill;
  • 8 slices raw smoked bacon;
  • salt and pepper.

Preparation:

  1. Cut the deboned fillet into thin slices. Salt, pepper and beat each one.
  2. Spread the meat with cream cheese, sprinkle with a mixture of chopped herbs and small pieces of bell peppers.
  3. Roll the pieces into rolls and cover each with a slice of bacon.
  4. Place the rolls in a mold greased with any fat. They should be located close to each other in the container.
  5. Bake chicken breast rolls in bacon for about half an hour at medium temperature.

Chicken roll with mushrooms

Ingredients:

  • 2 chicken fillets
  • 200 g brisket
  • 2 tbsp. tablespoons oil for greasing foil and frying
  • 250 g champignons
  • 1 bunch of spinach
  • 1 onion
  • 2-3 cloves of garlic
  • pepper

Cooking method:

  1. Cut the chicken fillet like a book and beat it through cling film. Salt and pepper.
  2. Fry the onion in vegetable oil until golden brown.
  3. Add mushrooms to the frying pan and fry for 5-7 minutes.
  4. Add chopped spinach and garlic to the onion-mushroom mixture, cook for 2 minutes, add salt and pepper. The filling is ready; it must be cooled.
  5. Grease the foil with vegetable oil and lay out the brisket, cut into strips.
  6. Place chicken fillet overlapping on top.
  7. Place the filling on the fillet, stepping back 5 centimeters from one edge.
  8. Using foil, form a roll. With a little effort, it should be curled compactly. Use thick foil or wrap in two layers so that the juice does not leak out and the chicken roll does not turn out dry.
  9. Place in a preheated oven at 190-200°C for 30-35 minutes.
  10. Then open the foil and leave to bake for 10-15 minutes to form a light golden brown crust.
  11. Chicken roll with mushrooms and spinach is ready. Cut and serve.

Chicken rolls with mushrooms and spinach

Chicken rolls stuffed with mushrooms and spinach, with mushroom sauce. Great holiday dinner. You'll have to tinker, but the result will definitely be impressive.

Ingredients:

  • rolls:
  • chicken fillet 3 pcs.
  • fresh spinach (or raw) 300 (150) g
  • champignons 150 g
  • onion 1 pc.
  • mozzarella 100 g
  • dry white wine 30 ml
  • olive oil
  • salt pepper
  • sauce:
  • dried mushrooms 30 g
  • onion 1 pc.
  • garlic 3 g
  • thyme 1 pc.
  • dry white wine 170 ml
  • chicken broth 150 ml
  • cream 20% 250 ml
  • paprika for serving

Cooking method:

  1. Sauce. Pour 100 ml of boiling water over dry mushrooms and leave for 30 minutes.
  2. Chop the onion and garlic. Place the mushrooms in a sieve, save the liquid, chop the mushrooms finely.
  3. Heat oil, fry onion and garlic. Add mushrooms, thyme. Pour in the liquid from the mushrooms and wine, add the broth. Boil by half.
  4. Add cream, cook until it becomes a thick sauce. Puree with a blender.
  5. Rolls. Chop onions, mushrooms, cheese, spinach (if you use fresh).
  6. Heat oil in a large saucepan and fry mushrooms. Add onion. Cook until transparent. Add spinach, 30 ml wine. Evaporate the wine.
  7. Cut the fillet like a book and beat it off. Season with salt and pepper.
  8. Cool the filling and combine with cheese. Season
  9. Place 2 heaped tablespoons of filling on the fillet and roll into a roll.
  10. Tie the rolls with thread.
  11. Fry in a frying pan until golden brown. Transfer to a baking dish and place in the oven (190°) for 30 minutes.
  12. Serve with sauce. When serving, I also sprinkled the roll with paprika.

How to cook Chicken Breast Rolls with Mushrooms

Divide each breast into 2 parts. Rinse the bird and then pound it. Season with salt and pepper.

Rinse the champignons well. Cut them into small pieces.

Peel the onion and also finely chop it.

Fry mushrooms and onions in oil until soft.

When ready to fry, grate the cheese on a coarse grater. Mix the ingredients.

Place the resulting filling on the breast. Wrap it in a roll.

Tie the rolls with thread so that they do not fall apart during frying.

Fry the rolls on all sides until golden brown in oil. Bon appetit!
