  2. We disassemble lightly salted herring (one carcass) into fillets: to do this, we peel it, cut it lengthwise along the ridge into two parts, remove all the bones and the ridge itself.
  3. Place the fillet on a board covered with cling film and cover the top with film as well. Place both halves of the fillet side by side so that they touch as much as possible.
  4. We beat the fish with a hammer for 5-7 minutes. Try to do this very gently so as not to damage the fish.
  5. Grate hard cheese (I used Dutch) on a fine grater into a separate bowl.
  6. Wash the greens (and I used dill and parsley, a mix), shake off excess moisture and finely chop with a knife.
  7. Remove the top film, apply liquid processed cheese onto the fillet with a spatula, and level it over the entire surface of the fish.
  8. Then sprinkle the fillet with finely grated hard cheese.
  9. And lastly, sprinkle with finely chopped fresh herbs.
  10. Now, helping ourselves with the cling film on which the fish lies, we roll the fillet into a roll (along the long side).
  11. We secure the ends of the film and put the fish roll in the freezer for one hour.
  12. After an hour, take it out, remove the film, cut it into pieces two centimeters thick with a sharp knife.
  13. Cut the bread (gray or black) into slices one centimeter thick. There should be as much bread as there are pieces of fish.
  14. Using a glass, cut out circles from the bread, approximately the same diameter as the rolls.
  15. Place the prepared bread pieces immediately on a large flat serving dish.
  16. Spread a little of the remaining melted cheese on each piece of bread (this will help the fish hold on better), and then lay out the pieces of fish.

    This time I want to offer you one of my favorite fish recipes - asp fish roll. This fish roll comes out so tender and delicious that you will simply lick your fingers!

    Like all my homemade recipes, it is quite simple and unpretentious to prepare and can be offered not only as an everyday dish, but also as a holiday fish appetizer. I think that your loved ones and guests will definitely like it.

    Ingredients

    • Asp fish fillet (any other can be used) – 400 grams
    • Fresh pork lard – 100 grams
    • Chicken egg – 1 piece
    • Onions – 2 heads (150-160 grams)
    • Sweet carrots – 80-100 grams
    • Breadcrumbs – 2-3 tablespoons
    • Lemon pepper (optional) – to taste
    • Kitchen salt - to taste
    • Vegetable oil – 2-3 tablespoons
    • Mayonnaise or sour cream - for greasing the fish roll

    Kitchen utensils you will need are a frying pan, a saucepan, a meat grinder, a deep bowl, foil, and an oven.

    FISH ROLL RECIPE

    I would like to note right away that such a fish roll can be prepared not only from asp, but also from silver carp or other large river fish. Why from a large one - you ask? Everything is simple here - it contains large bones and is easier to remove.

    This specimen of asp (which I purchased at the market) weighed about 4 kilograms. It also contained half a kilogram of excellent caviar, which I immediately salted. You can watch the whole process

    As usual, I decided to present you with a fish roll recipe with step-by-step photos to make everything very clear and visual.

    Let's start by peeling the fish, gutting it and rinsing it well in cold water. Then use a sharp knife to separate the fillet, starting from the back. Leave the rib part along with the bones (they will be removed later).

    Soak the separated fillet in cold water (to drain the blood). And we ourselves pour water into the saucepan and put it on the fire, we will need it to boil.

    As soon as the water boils, drop the fillet pieces into it and let it boil for just a couple of minutes.

    Then we take it out and put it on a plate to cool.

    And we cook the vegetables ourselves. We clean the onions and carrots, wash them, then chop the onions finely, as if for frying, and grate the carrots on a coarse grater. Place a frying pan on the fire, pour in vegetable oil and add onions and carrots.

    Stir, cover the pan with a lid and leave the vegetables to sauté over low heat. They will serve as a filling and make the fish dish more delicious.

    Now we will begin to disassemble the fillet, which has already cooled by this time, into a roll of asp fish. We carefully and easily remove the seeds and cope with this process very quickly.

    Yes, I almost forgot to say, fill the breadcrumbs with cold water in advance and leave until we prepare the minced meat.

    While we were choosing the seeds, the onions and carrots were already prepared.

    Remove them from the pan and leave to cool. And we ourselves begin to prepare the minced meat for our fish roll. To do this, we pass fish, lard, and one onion through a meat grinder and get the result.

    Add soaked breadcrumbs, egg, salt and pepper to the minced fish. Mix well with a fork.

    On top, stepping back from the edges, lay out the sautéed vegetables.

    Wrap it tightly in foil in the form of a large candy. And immediately put it in the oven, heated to 180 degrees.

    Bake the fish roll in the oven for about 25-30 minutes. Then we take it out.

    Open the foil and grease the top of our roll with sour cream or mayonnaise.

    And put it back in the oven to cook until a light golden brown crust appears. About 7-10 minutes.

    Take out the already prepared, very tasty fish roll and leave it to cool at room temperature. Then cut into portions and serve.
