A special feature of making chocolate muffins (and, indeed, any muffins in general) is the fact that you first need to mix all the dry ingredients, then the liquid ones, then combine both components, and pour the finished dough into molds.

Mix sugar, flour, baking powder and vanillin. As some recipes say, you can use powdered sugar instead of sugar, and after mixing the dry component of the muffins, it is recommended to sift the mixture through a fine sieve again. But, as practice shows, chocolate muffins turn out great without additional sifting.

Melt butter and chocolate in a water bath (or in the microwave), mix with eggs and milk. Then we combine the wet and dry products and pour the mixture into baking containers. Muffins are baked at 200 degrees for about 20 minutes.

Cooking algorithm

  1. Remove all ingredients from the refrigerator in advance. Foods at room temperature mix better. Turn on the oven to preheat. The operating baking temperature is up to 200 degrees. The oven will preheat while you make the dough.
  2. Mix the dry ingredients: granulated sugar, sifted flour with baking powder, vanilla sugar, salt.
  3. Add chocolate chips or chocolate chips to the dry mixture. Stir with a silicone spatula.
  4. Break the eggs into a separate container. Beat them with a fork to break up the protein structure. Add milk and melted butter to the eggs. It is important that it is not hot, but at room temperature. Use a hand whisk.

  6. Prepare existing molds. Paper inserts must be placed in metal containers. They will absorb fat and are convenient for cooling and serving muffins. Divide the dough among the molds so that it does not reach one third of the edges of the containers.
  7. Bake the chocolate chip muffins in a hot oven. Baking time is about 25 minutes. When the muffins have risen well and their surfaces are slightly browned, check for doneness with a wooden skewer. It should be dry. Do not open the oven for the first 15 minutes.
  8. Cool the finished cupcakes on a wire rack at room temperature.
  9. Delicious baked goods are ready! The paper inserts can be removed or the treat can be served directly into them.

These chocolate chip muffins can be made in another way. You can do without milk and slightly change the sequence of combining the products.

You will need:

  • flour (premium grade) – 170 g;
  • chicken egg (it is better to take selected ones) – 3 pieces;
  • powdered sugar – 100 g;
  • butter – 125 g;
  • salt - a pinch;
  • baking powder – 10 g;
  • vanilla sugar – 1 sachet;
  • chocolate (chopped) – up to 100 g;

Repeat the first step of the previous recipe. Then sift the flour and baking powder into a separate container several times, add salt and vanilla sugar.

In a convenient bowl, beat softened butter with powdered sugar. Then add one egg at a time to the sweet mixture, without ceasing to beat. Add flour to the egg-butter mixture and stir.

Add chocolate pieces (or chocolate chips) and stir gently with a silicone spatula. Next, repeat steps 6–9 of the previous recipe.

Chocolate and coffee

Coffee-flavored muffins can be easily made using a basic recipe, just use brewed coffee instead of milk. But this method of preparation will require more sugar - you will need to approximately double its component. In order to check the correct ratio, you will need to dissolve the sugar in the finished coffee and taste the drink. To make coffee for the dough, you need to heat 50 milliliters of milk, add a teaspoon of ground coffee, stir everything, bring to a boil, and set aside. Boil several more times at one minute intervals.

Then carefully strain the mixture and add sugar. We cool our muffins and can safely serve them for breakfast.

Five-minute recipe

If unexpected guests promise to be with you in ten minutes or you just want something tasty, you can use the following quick recipe. You don't even have to turn on the oven: a microwave will suffice.

This is a kind of hybrid of a chocolate muffin with liquid filling and a chocolate soufflé. To taste it, you only need to take out your favorite large mug.

Ingredients:

  • 30 g flour;
  • 50 g granulated sugar;
  • 12 g unsweetened cocoa powder;
  • half a teaspoon of baking powder;
  • a pinch of salt;
  • 43 g butter (about 3 tablespoons);
  • 45 ml whole milk;
  • 1 small egg;
  • ¼ teaspoon vanilla extract;
  • 28 g of your favorite chocolate for filling;
  • 1 tablespoon water;
  • berries and ice cream (optional).

Curd and chocolate

To prepare muffins according to this recipe, you need to make the following filling: take cottage cheese, mix it with vanilla and sugar. The egg from the classic recipe can be replaced with two tablespoons of full-fat cottage cheese. Next, we proceed according to the usual scheme.

Beat the cottage cheese in a blender or just stir. In the first option, the curd flavor will be barely noticeable, and the baked goods will be more aromatic and moist. In the second option, the curd accents will be more noticeable.

Advice: do not use cottage cheese with grains - the consistency should be buttery and tender, without hard lumps.

Select several molds for cupcakes or muffins (silicone, but in a pinch iron will also do), several large bowls with a capacity of 300-800 ml, teaspoons and tablespoons, a knife, a cutting board (wooden only), a fine sieve, a fine and medium grater, a measuring cup or kitchen scale, several towels (paper can be used, but linen or cotton are better) and a metal whisk.   8. Mix the mixture with a wooden spatula and let the dough sit for a while.

Important! The dough for classic muffins with chocolate filling should be semi-liquid, shiny and viscous, and should not contain large lumps of flour or sugar. Try to achieve this consistency before you need to add the crushed chocolate so that the blender doesn't chop it up too much and the finished baked goods are prettier.

Bakery

  1. Set the oven to preheat to 200 degrees.
  2. the molds with sunflower oil or margarine.
  3. Pour the dough into the prepared pans, leaving a margin of approximately 3 cm from the edge.

Once again, mix everything thoroughly by hand or using a mixer. Now you can pour into molds. If you use silicone baking molds, you do not need to grease them. If they are metal, be sure to do this so that you can easily remove the finished baked goods. The oven should be preheated to a temperature of two hundred degrees. We send our future muffins there for twenty to thirty minutes. We check readiness with a dry match or toothpick. Bon appetit!

This is a real legend - almost all fans of simple and tasty pastries are familiar with this recipe. You can make the filling according to your preferences. Some people love muffins with custard, some with fruit filling, and some are crazy about chocolate muffins with chocolate (sounds like “butter,” but that doesn’t make the recipe any less gorgeous).

To prepare the dough you will need:

  • 200 g white flour;
  • 100 g sugar;
  • 50 ml milk;
  • 2 eggs;
  • 50 g butter;
  • 2 tbsp. l. cocoa powder;
  • vanillin;
  • baking powder.

Preparation: melt the butter, heat the milk, mix, add the eggs, mix everything again. Combine dry products. Knead the dough. Unlike the classic recipe, the dough is thicker due to the increased volume of flour. Thanks to the additional volume, the filling will not fall down.

The secret of this recipe is as follows: more than half of the portion of dough is poured into a baking dish, then the filling is placed there, and the rest of the portion is poured on top. Let's move on to the liquid center.

Many people also like these muffins because they are prepared using readily available ingredients. You can add chopped nuts to the mix, then the dough will be less soft and viscous. The dessert will delight you with its taste. Components:

100 gr. flour; 80 gr. dark chocolate; 2 tbsp. cocoa; 50 gr. Sahara; 15 ml water; 1 PC. chickens egg; cinnamon; sl. oil.

Cooking algorithm:

  1. Chicken I beat the eggs together with sugar. I add sifted flour, cinnamon and cocoa powder.
  2. I stir and add water.
  3. I add chopped chocolate to the mixture. I pour the mixture into mugs. Bake for 1 minute in the microwave at maximum power.

Dessert is ready, you can eat. Just keep in mind that during baking the dough in the mug will rise, and therefore you should fill the mold ¾ of the way, no more.

Recipe with chocolate filling

To obtain a completely liquid middle, the chocolate is broken and placed in a thick plastic bag, cream is added and melted in a water bath, without bringing to a boil.

Next, cut off the tip of the bag and pour a little chocolate onto the dough compacted in the mold. If you have any extra frosting, you can use it to decorate your finished baked goods.

If you like a thicker filling, you can use milk, white or dark chocolate chips. Nuts and coconut flakes work great here.

Muffin recipe for chocolate lovers

If the chocolate pieces peeking temptingly through the soft dough aren't enough for you, enhance the chocolate flavor by adding cocoa to your baked goods. This recipe makes 12 medium chocolate muffins with chocolate chips.

Ingredients:

  • butter – 100 g;
  • flour – 230 g;
  • granulated sugar – 200 g;
  • milk – 150 g;
  • chicken egg – 3 pieces;
  • baking powder – 10 g;
  • cocoa powder – 6 tablespoons;
  • salt - a pinch;
  • chocolate (in pieces) – 50 g.

Sequencing:

  1. Turn on the oven to preheat. Melt the butter in the microwave or in a water bath. Pour it into a container convenient for mixing ingredients.
  2. Add granulated sugar and cocoa powder to the liquid butter. Stir until smooth. It’s good if the fat is hot - this will allow you to brew cocoa. But the dough needs a warm liquid, so leave the chocolate mixture to cool for a while.
  3. When the chocolate mass reaches the optimal temperature, add the rest of the products to it. First, mix in the eggs one at a time. Then add the sifted flour and baking powder. Add some salt. Stir.
  4. Pour in milk in a thin stream while stirring constantly.
  5. Add chocolate pieces into the mixture and stir quickly but gently with a silicone spatula.
  6. Prepare the molds. If you don't have paper liners, metal containers should be greased with butter.
  7. Pour the dough into the molds, not reaching the edges.
  8. Place the muffins in the preheated oven by this time. Bake until stick dry. This will take 15–25 minutes. The cupcakes should rise well. Their surface will become matte and they will lag behind the edges of the containers.
  9. Remove baked muffins and cool on a wire rack.

Orange filler

This filling is made either from orange jam or from cottage cheese with orange. For the cream, beat the orange in a blender, squeeze out the juice and mix the resulting mass without liquid with fatty cottage cheese, add sugar to taste. If, for example, you want to replace an orange with a banana, then you should not use sugar - the filling will turn out honey-sweet.
