Step by step recipe

  1. We wash a head of cabbage weighing about 400-500 g in running water. Shred it into small strips.
  2. We knead the shredded cabbage with our hands so that it becomes soft and as a result releases a little juice. This stage is very important, since the softness and fluffiness of the finished pancakes depends on it.
  3. Peel 1 onion and grate it on a coarse grater.
  4. Drain off the juice that comes out of the cabbage. Combine the resulting onion mass and cabbage.
  5. We also put half a bunch of chopped greens into the bowl.
    If you don't have fresh on hand, replace it with dried. In this case, you will need 1-2 tbsp. l.
  6. In the resulting mass add 1 egg, salt to taste, 1 cup. kefir and 1 tbsp. l. potato starch.
  7. Mix all the combined ingredients thoroughly with a spoon.
  8. Place 4 g of baking soda or baking powder in a bowl.
  9. Add the already sifted flour until the consistency of the dough resembles thick sour cream. Typically this may require 7-8 tbsp. l. wheat flour.
  10. Place the frying pan on the fire, pre-lubricated with vegetable oil. Scoop the prepared dough with a spoon and place it on a hot frying pan.
  11. Fry the pancakes on each side for 2-3 minutes.
  12. Place on a plate lined with a napkin and you are ready to serve!
