Baked breast fillet with pineapple and cheese

First, let's prepare the chicken fillet. To do this, cut it into equal pieces. The thinner the pieces, the better. You can beat them off - then the meat will become more tender and cook faster. Spread the finished chops with salt, pepper and a mixture of seasonings, and marinate. You need to marinate for literally 20 minutes - you can do it in mayonnaise, or you can do it in pineapple juice.

While the chicken is marinating, peel and cut the potatoes into thin round slices. After this, place it on a pre-greased baking sheet in an even layer. Place pineapple rings on top. It’s okay if the pineapple slices do not cover the entire surface of the baking sheet. When preparing this dish, experienced chefs advise cutting thick slices lengthwise into two parts - this way the meat and fruit are baked evenly.

It's time to turn on the oven. Set the temperature to 200°C, there is no point in setting it lower - then the breast with pineapples will take longer to cook in the oven, and there is a possibility that it will not bake evenly.

Grate the cheese on a coarse grater and sprinkle it on top of the pineapples. Don't sprinkle it all over - we'll need the cheese later. Add mayonnaise on top of the cheese with a thin mesh. Soy sauce will give your dish a special taste. Next, spread the meat on top in an even layer. Try to cover the entire pan with meat. The remaining marinade can be poured over the dish - this will only improve its taste.

Our dish is almost ready to go into the oven, let’s add the finishing touches. Slice the tomato into thin slices and place evenly on top of the chicken. Again: try not to completely cover the pan with tomatoes - a distance of 2-3 centimeters between the pieces is quite acceptable.

How to bake chicken with pineapple and cheese in the oven

So let's get started. The first trick of frugal cooking: chicken meat needs to be beaten. I only have 5 boneless, skinless chicken thighs. After beating, the area of ​​the pieces will double. I'll cut every piece. And I will get 9-10 servings. The most convenient way to pound chicken is in a plastic bag. This way nothing splashes and the hammer does not break the meat protected by film.

Grease a baking sheet with vegetable oil (two or three drops are enough). Salt and pepper the chicken on both sides. I take a pinch of salt on each side (which fits between my thumb and forefinger) and give the pepper grinder one turn. Place on a baking sheet.

Place 2/3 teaspoon of sour cream on top of each piece. We spread it over the surface; it is very convenient to do this with a silicone brush.

Today I present to your attention French-style chicken fillet with pineapple and cheese in the oven. Very tender, juicy and tasty chicken meat. Pineapples give the meat a certain sweetish note and piquancy. The result is nourishing, tasty meat that can be eaten as a stand-alone dish or with vegetables. If you like, then with a side dish in the form of mashed potatoes, buckwheat, rice, noodles. Meat with pineapple and cheese is suitable for a holiday, celebration, anniversary, or as an option for a regular dinner with the family on a weekend or weekday. For example, my husband loves to eat these meatballs without a side dish and without bread. The recipe is very simple, everyone has their own, if you like this type of meat. And I, in turn, want to share my recipe, secrets, and all the subtleties in preparing this dish.

Chicken fillet with pineapple and cheese in the oven - recipe

Ingredients:

  • 2 medium chicken fillets
  • 1 jar of pineapples
  • 200 grams of hard cheese
  • 1 medium sized onion
  • mayonnaise
  • salt and pepper
  • vegetable oil

In the photo I have three fillets, but I used two. I take pineapples in rings, not in pieces. My mayonnaise is 67%. Hard cheese - Russian.

We have already cooked meat in French with tomatoes in the oven. But I prefer to prepare this recipe when I have fresh homemade tomatoes from the garden. And in winter, we use canned pineapples.

Cooking tips

It’s better to cut pineapples not into halves of a circle, but crosswise, into 2 thinner rings, it’s tastier this way (in my opinion). But if your chicken fillet pieces are small, you can decorate them with pineapple ring halves.

In 1 package of chicken fillet (boneless breast) there are usually 5 fillets weighing about 800 g. But there are other packaging options.

If you don’t like garlic, then you don’t have to put it in. But with garlic, chicken fillet in combination with mayonnaise and pineapples is much tastier.

You can also cook pork using the same recipe. Also very, very tasty.

First you need to prepare the ingredients, they are very simple and affordable. First I’ll describe everything step by step, and then I’ll add a photo.

1. Preparing ingredients for cooking chicken with pineapple and cheese.

2. We cut the chicken fillet across the grain, I recommend about 1 cm each. We beat it with a kitchen hammer on both sides.

3. Salt and pepper the meat. Also, to ensure that the meat is juicy and tender, grease each piece with vegetable oil.

4. Place the meat on a baking sheet, which is pre-greased with vegetable oil, and grease it with mayonnaise. Literally half a teaspoon (if you like more, then use a teaspoon).

5. Peel the onion and cut it into half rings. Place the onion on top (you can marinate the onion, lay out the pickled onion).

6. Place pineapple rings on top.

7. Grate hard cheese and sprinkle each piece of meat with hard cheese.

The first thing I do is cut the meat across the grain into pieces of about 1 cm. I beat them with a hammer. Each piece of meat must be greased with vegetable oil; this is the secret of the softness and juiciness of chicken meat.

The meat can be covered with cling film so as not to stain the kitchen. This time I didn’t cover it, I did everything carefully.

Place the meat on a baking sheet. The baking tray can be pre-greased with vegetable oil. I covered it with parchment, I don't like excess fat. Yes, and this way, for me, is more convenient. You look at how you are used to and how comfortable it is for you.

You can use a glass or ceramic dish to bake meat in the oven.

I place the chicken pieces at a distance from each other. Not tight, I like each piece to be separate, so it’s convenient to serve it on the table. But you can pack the pieces tightly, then it will be one piece and you will have to cut it into pieces before serving.

I grease each piece of meat with mayonnaise. Decide for yourself which mayonnaise to use. Now there is quite a large selection. Fat content is also your choice. I used 67% mayonnaise, but you can make homemade mayonnaise.

Place onion on top of each piece. I took regular onions. I peel it, cut it in half, and then cut it into half rings. I don't pickle onions.

But you can first marinate the onions, we tried that too. Pickle onions in a solution of water, salt, sugar and vinegar. It turns out delicious either way (if you add onions or pickled onions). Everything is for everyone.

If you prefer pickled onions, then prepare a marinade (200 grams of water, 2 tablespoons of sugar, 2 tablespoons of vinegar, 1/3 teaspoon of salt), sugar and salt should be dissolved in water. Place the onion for 20 minutes. Then drain the liquid. And put pickled onions on top of the chicken fillet.

Personally, I add fresh onions or marinate them, but there is another cooking option by frying the onions. That is, you need to fry the onion in vegetable oil and place the fried onion on top of the chicken meat. But, as for me, in this recipe, this option is not appropriate. Chicken fillet is a dietary meat; there is no need to make it more filling.

Pickled onions give the meat a pleasant sourness, and pineapple a certain sweet note.

The next stage is canned pineapples; you can, of course, cook with fresh pineapple, but I find it more convenient and faster to use a canned product, peeled and chopped.

The weight of a jar of pineapples is 565 grams, but the main product is 340 grams. I repeat, I prefer to use pineapples for cooking chicken fillet with pineapple and cheese in the oven, namely pineapple rings.

Additionally, I cut each pineapple ring lengthwise with a sharp knife, very carefully, without disturbing the integrity of the ring. As a result, I got 2 from one ring. You don’t have to do this.

On top of the chicken meat, which is greased with mayonnaise, onions are placed, and I place a ring of canned pineapple.

The next stage is hard cheese. The choice of cheese depends on your taste preferences, the only thing is, do not take a “cheese product”. I usually buy Russian hard cheese, but lately I’ve been using children’s hard cheese for salads. It has a more delicate, creamy, pleasant taste and aroma.

I grate hard cheese on a coarse grater. I put a handful of hard cheese on each piece. If you like, you can add a lot more cheese.

I'll put the pan in the oven. The oven is preheated to 200 degrees. For about 20 minutes. Everything is very quick and easy to prepare.

Place the already prepared French chicken fillet meat with pineapple and cheese on a plate and serve. This dish can be eaten both warm and cold. Preferably, of course, warm, but I like it either way.

Can be served with fresh vegetables. With fresh herbs. But you can, as I said above, with a side dish. If it is a holiday, then you can decorate the dish with fresh herbs: dill, parsley, cilantro, etc.

It is convenient to bake in the oven in portions, and not in one whole layer, so that you can serve this dish separately to each person on a plate. Personally, I like portioned serving of meat better.

This dish can be prepared not only from chicken, but also from pork, beef, turkey, and you can also use chicken thighs. Only the thighs should be skinned, salted, peppered, greased with mayonnaise, pineapple placed, and hard cheese on top.
