Step-by-step recipe for classic okroshka with kefir sausage


Hello again. The sun is finally starting to shine, and the air smells like spring. After winter everyday life, our body begins to demand all sorts of tasty treats, because it lacks vitamins. Are you familiar with this situation?? For me personally, yes.

And it is in the spring season that I really like to cook okroshka, even though it is a summer dish. I don’t know why, but it’s in the spring that I especially want to taste this cold soup.

And the most interesting thing is that I make okroshka not with kvass, but with kefir. Kvass comes into use a little later, precisely in the summer heat.

Have you tried cooking okroshka with kefir?? And which recipe do you prefer? I love it not only with sausage, but also with meat. If you are not familiar with this dish, then it’s time to correct this situation. There are many options, and there is even a special okroshka for weight loss. So choose your recipe.

Recipe for classic okroshka with kefir

We will start with the most famous and popular cooking method. I note that in the spring this soup can be made without radishes.

Ingredients:

  • Cucumbers – 500 gr.;
  • Boiled doctor's sausage – 400 gr.;
  • Chicken eggs – 5 pcs.;
  • Potatoes – 3-4 pcs.;
  • Dill - a bunch;
  • Green onions - a bunch;
  • Kefir – 1 l;
  • Sour cream – 300 gr.;
  • Chilled water – 1 l;
  • Lemon juice – 2 tbsp;
  • Salt - to taste.

Cooking method:

1. Wash the potatoes and boil them in their skins until tender, about 20 minutes.

2. Boil the eggs hard.

3. Wash the cucumbers and cut into small cubes. One cucumber can be grated.

4. The greens need to be washed and dried, then finely chopped. Place in a saucepan and add a little salt, crush with a masher.

5. The sausage must be cut into cubes.

6. Cool and peel the eggs, then also cut into cubes.

7. Cool the potatoes too and peel them. Cut into small pieces.

8. Mix kefir with chilled water, add sour cream and salt to taste. Squeeze the lemon juice.

9. Combine all the chopped products, pour in the prepared kefir, stir. If necessary, add salt and pepper. Place in the refrigerator for an hour.

10. After the soup has steeped, serve it cold with black bread.

How to prepare okroshka with kefir and mineral water?

The following recipe comes with the addition of sparkling water. I like this option, especially since garlic is added for spiciness.

Ingredients:

  • Sausage - 0.5 kg;
  • Potatoes - 3-4 pcs.;
  • Cucumber - 2-3 pcs.;
  • Eggs - 4-5 pcs.;
  • Radishes - 5-6 pcs.;
  • Garlic - 1-2 cloves;
  • Kefir - 1 l;
  • Mineral water - to taste;
  • Green onions, dill - a bunch;
  • Table salt - to taste.

Cooking method:

1. Prepare your food first. Boil eggs and potatoes, cool and peel. Cut the sausage, potatoes and eggs into cubes.

2. Rinse the cucumbers and radishes and dry. Grate on a medium grater.

3. Combine the prepared products. Finely chop the greens and garlic and add to the vegetables. Add salt to taste and stir.

4. Combine kefir with mineral water and season the mixture. Place in the refrigerator to cool. Before serving, season with sour cream.

Okroshka on kefir with fresh dill dressing

This version of okroshka with kefir can be called dietary, which is achieved through the use of chicken breast in the recipe. Dill paste will add a piquant taste to the dish.

Ingredients (for 6 people):

  • boiled young potatoes – 5-6 pcs;
  • chicken breast;
  • eggs – 4 pcs;
  • radishes – 10 pcs;
  • fresh cucumbers – 4 pcs;
  • onion, dill - 1 bunch each;
  • kefir (1%);
  • salt and table horseradish.

Preparation:

  1. Remove the skin from the chicken breast and cook until tender. Remove from broth and let cool.
  2. Boil unpeeled potatoes. Cool. Peel and cut into cubes.
  3. Boil the eggs. Peel and cut into cubes.
  4. Cut cucumbers and radishes into cubes.
  5. Mix all ingredients. Add finely chopped onion to them.
  6. Grind the chopped dill with salt to obtain a homogeneous mass.

Divide the vegetable mixture into plates and pour chilled kefir into each. Add horseradish, salt and dill to taste. Stir and serve.

Step-by-step recipe for Armenian okroshka

In fact, a version of cold kefir soup came to us from Armenia, where they make this dish with matsoni. Therefore, I suggest that you familiarize yourself with this type of cooking.

If you don’t know how to make matsoni, then replace it with kefir.

Ingredients:

  • Matsoni - 250 ml;
  • Cold boiled water - 250 ml;
  • Chicken breast - 1 pc.;
  • Potatoes - 200 gr.;
  • Eggs - 2 pcs.;
  • Cucumber - 1 pc.;
  • Salt - to taste.

Cooking method:

1. Boil chicken fillet in salted water until cooked. Cool, remove seeds and cut into cubes.

2. Boil potatoes in their jackets, boil hard-boiled eggs. Cut the cucumbers into cubes, cut the drained potatoes and eggs into small cubes.

3. Salt and mix the chopped products.

4. Add matsoni, optionally add more sour cream, stir.

5. Then pour in water.

6. Place in the refrigerator for 1 hour. Afterwards, serve the dish with pita bread.

Cooking okroshka with chicken and mustard

I love everything spicy, so I like okroshka with pepper. Therefore, for me, the option with mustard is my favorite.

Ingredients:

  • Chicken fillet - 150 gr.;
  • Ham - 150 gr.;
  • Eggs - 5 pcs.;
  • Potatoes - 4 pcs.;
  • Cucumber - 2 pcs.;
  • Green onion - a bunch;
  • Sparkling water - 0.5 l;
  • Kefir - 1 l;
  • Sour cream - for dressing;
  • Mustard - 2 tbsp;
  • Salt - to taste;
  • Citric acid - to taste.

Cooking method:

1. Boil the potatoes in their skins until tender, cool and peel. Cut into cubes.

2. Boil the eggs hard-boiled, cool, remove the shells and also cut into cubes for the potatoes.

3. Cut into cubes and cucumbers.

4. Cut the ham into equal cubes and add to the vegetables.

5. Boil the chicken fillet in salted water in advance, then cool and cut into cubes.

6. Finely chop the onion.

7. Mix kefir with water, add citric acid. Season all the ingredients, add salt to taste and add sour cream. Cool and then help yourself!!

Recipe with squid and mustard

Very tasty and healthy okroshka with seafood. A spicy dressing of mustard, horseradish and lemon juice gives it a refined taste. Squid should not be overcooked, otherwise it will turn rubbery.

Will be required:

  • 4 squid carcasses;
  • 5 eggs;
  • 3 potato tubers;
  • 4 cucumbers;
  • 100 g dill;
  • purple bulb;
  • 0.5 l of milk;
  • 2 l 3% kefir;
  • 2 tbsp. mustard;
  • 1 tsp horseradish;
  • Bay leaf;
  • half a lemon;
  • 3-4 black peppercorns;
  • 2 peas of allspice;
  • salt to taste.

Preparation:

  • Boil water with pepper and bay leaf, boil the squid carcasses for 2-3 minutes in salted water with lemon, let cool, cut into cubes.
  • Chop the purple onion into small cubes, chop the dill (leave a few sprigs for decoration).
  • Peel the cucumbers and potatoes and cut into medium cubes.
  • Mix all the products, add salt, add horseradish and mustard, season with a mixture of milk, kefir and lemon juice, stir. Before serving, place one egg, cut into 4 pieces, into plates and garnish with dill sprigs.

Okroshka on kefir with beets

Here is a recipe from Latvian cuisine. And I’ll tell you right away that this food is not for everyone. For example, I don’t really like this dish with beets, but sometimes I cook it for a change.

Ingredients:

  • Kefir - 1 l;
  • Cucumbers - 1 pc.;
  • Beetroot - 1 pc.;
  • Potatoes - 2 pcs.;
  • Eggs - 4 pcs.;
  • Boiled sausage - 200 gr.;
  • Dill - 1 bunch;
  • Green onions - 1 bunch;
  • Water - 500 ml;
  • Mustard - 1 tsp.

Cooking method:

1. First you need to prepare the products. Boil potatoes, beets and eggs and cool. Cut the sausage into cubes, finely chop the greens. Cool the eggs and potatoes, peel and cut into cubes, and grate the beets.

2. Salt the greens and crush with a spoon.

3. Add sausage and cucumbers to the greens.

4. Then eggs and potatoes.

5. Lastly, add the beets. Season with water and kefir, add salt and mustard, stir. If desired, you can add more sour cream. Serve cold!!

Recipe for okroshka with kefir and meat

Here's the meat option. All steps remain the same, only instead of sausage we add any boiled meat. And you can season it with either kefir with mineral water or kefir with lemon juice.

Ingredients:

  • Meat - 150 gr.;
  • Kefir - 600 ml;
  • Cucumbers - 150 gr.;
  • Radishes - 4 pcs.;
  • Boiled potatoes - 2 pcs.;
  • Hard-boiled eggs - 2 pcs.;
  • Greens - a bunch;
  • Lemon juice - 1 tsp;
  • Salt - to taste.

Cooking method:

1. Cucumbers and radishes need to be cut into thin strips.

2. Cut the eggs with pre-boiled meat into cubes, and finely chop the greens.

You can use any meat: chicken, beef or pork.

3. Then cut the potatoes into cubes.

4. Add salt and squeeze lemon juice. Season with kefir, mix everything and cool.

Okroshka “Boyarskaya” on kefir with mineral water

An excellent option for okroshka. Good for lunch.

Ingredients:

  • boiled veal – 350 grams;
  • fresh cucumbers – 2 pieces;
  • flock eggs – 3 pieces;
  • potatoes - 3 pcs;
  • radish;
  • greenery;
  • horseradish – 1 tsp;
  • kefir – 500 ml;
  • mineral water with gas – 500 ml.

Preparation:

  1. Cut all the components of the future okroshka into cubes or in any shape.
  2. In a separate saucepan, mix kefir and horseradish.
  3. Pour kefir into the prepared mixture and put it in the refrigerator for 30 - 40 minutes.

Immediately before serving, add mineral water to the okroshka and pour into plates.
