  • 100 grams of fried chicken;
  • a quarter of fresh cucumber;
  • a quarter of an avocado;
  • 200 grams of Japanese rice;
  • capelin caviar - a tablespoon;
  • cream cheese 100 grams;
  • 60 grams of hard cheese;
  • green onions;
  • soy sauce;
  • 1.5 tablespoons of rice vinegar;
  • a teaspoon of salt and sugar.

Cooking algorithm:

  1. First, cook the rice. Rice for rolls is cooked not like regular rice, but with the addition of rice vinegar, salt and sugar. And in consistency it should resemble a sticky mass so that the finished rolls do not fall apart. This is why special Japanese rice is needed. It is convenient to prepare it in a slow cooker. Pour the rice into a bowl, fill with water so that it is 2 fingers higher than the cereal and cook for 15 minutes in the “Rice” mode. Next, let it sit on the heat for another 15 minutes, then season with salt, sugar and vinegar.
  2. Place the rice on a sheet of nori in an even layer, leaving a small free strip on top.
  3. Form a strip of cream cheese on one edge and place the cucumber and avocado, cut into strips, on top of it. Distribute the fried chicken slices among the vegetables and add a green onion on top.
  4. Moisten the free edge of the nori with water to form a roll, and then roll the roll. Using your hands, shape it into a uniform round shape and cut the roll into rolls. To make the roll cut better, moisten the knife with water - this way the nori will not tear, and the cut will be smooth and neat.

2. In the meantime, you can prepare a seasoning for rice: add salt (half a teaspoon) and sugar (1-1.5 teaspoons) to 50 g of rice vinegar. Stir until they are completely dissolved.

3. Place freshly cooked rice, still hot, in a separate bowl and moisten with vinegar dressing. In order for the grains to remain intact, you need to mix them not with the usual circular movements, but by carefully lifting them.

You can move the entire mass to one side of the bowl and then back. Cover with a napkin and proceed to prepare additional filling.

4. Cut the fish into thin strips. If you took small shrimp, then you do not need to cut them. Cucumber or avocado are cut into the same strips (if the cucumber is hard, then the skin is peeled and large seeds are removed).

5. Lay out a bamboo mat. Place a whole sheet of nori seaweed on it. It will be more convenient to wrap rolls at home if you additionally cover this wooden mat with cling film. Then the seaweed sheet will lie on the film (glossy side down).

Wetting your hands with vinegar (you can also use a spoon), spread the rice on its surface to form a thin and even layer. The top and bottom edges of the nori are left uncovered by the filling (about one centimeter).

You can combine the rice with other ingredients (for example, a second layer of Buko or Flmette cream cheese would be a good addition). If you want the dish to be spicier, add another layer of capelin caviar (any other small caviar will do). On the edge of the seaweed, strips (one or two) of avocado or cucumber and the same number of strips of fish are laid out.

6. Use a bamboo mat to roll the roll. This is done like this: holding the edge of the mat with your thumbs and the filling with the rest, they begin to roll it up.

Having connected the top edge of the nori with the bottom, the mat needs to be bent back. In this case, you should make sure that the film does not swirl with the algae.   • Miso paste (white) – 50 g;
  • Japanese yuzu lemon zest;
  • Ground white pepper;
  • Salt.

Preparation:

Separate the yolks from the whites (we won't need the whites) and pour them into a bowl. Using a wooden spatula, thoroughly stir the yolks, rubbing them into a homogeneous liquid mass. Continuing to grind the yolks, pour in the rice vinegar and beat the mixture with a whisk. Now, without ceasing to whisk, pour the soybean oil drop by drop (literally!) into the bowl. As a result, our sauce should thicken and become lighter.

Now add the miso paste to the sauce and stir it again. Next, you need to grate the zest of one lemon or chop the peel and grind it in a blender and put it in mayonnaise along with a pinch of white pepper. Finally, add salt to taste and whisk the sauce thoroughly again. Our mayonnaise is ready!

Cooking process:

  1. Prepare the rice as in previous recipes and place on nori. Spread cheese on top. If you can't get Buko cheese, get Philadelphia.
  2. Add a strip of Tobiko caviar, and if you couldn’t buy it, replace it with capelin caviar or remove it completely.
  3. Next, place the eel, salmon and cucumber, cut into strips.
  4. Roll it up and cut it.
