The dough for rolls is most often made from dumplings (unleavened) or puff pastry is used, which is now very popular and is sold in almost all stores. In any case, it is the basis, it requires rolling out, you need a rolling pin. After turning the dough into layers, the minced meat filling is laid out on them. Often onions and garlic are added to it, there may be herbs, various spices, and don’t forget about salt. The rolls are rolled and cut if necessary, it all depends on the recipe.
These dishes are prepared in the oven or on the stove, with or without sauces. There are recipes for a double boiler, one of them is just below. On average, the cooking process takes about 40 minutes, but the time may increase due to additional ingredients. How to make minced meatloaf baked in the oven.
Finely chop the onion. Peel the carrots and grate on a coarse grater. Fry until golden brown with 1-2 tablespoons of vegetable oil. Add a little (20g) butter. Rinse the greens in cold water and chop finely. Peel the garlic and pass through a press or finely chop. Salt and pepper the minced meat to taste, add semolina and fry onions + carrots, mix thoroughly and knead well, spread in an even layer (about 2 cm thick) on a sheet of foil greased with vegetable oil. Place the greens and mashed garlic evenly on top of the minced meat (you can add crushed walnuts or sesame seeds here), roll everything into a tube, wrap it in foil and bake in the oven. Temperature 180-200 degrees for 30 minutes.

Eggplants - 2-3 pcs., sweet pepper - 1 pc., champignons - 300 g, garlic - 3 cloves, parsley, herbs - 50 g. Cut the eggplants into cubes, soak in salted water for 15 minutes. Fry with onions, mushrooms and sweet peppers. Salt and pepper. Place a layer on top of the minced meat. Wrap the roll in foil and bake at 180-200 degrees for 30 minutes.

If you want a roll with a golden brown crust, at the end of cooking, remove the foil and put it in the oven again. It definitely won't be dry and boring.
How to cook:
- Boil 4 chicken eggs in the usual way.
- Prepare minced meat by grinding two types of meat (beef + pork) in a meat grinder.
- Chop onions and fresh herbs.
- Beat 1 egg with 80 ml of milk.
- Combine the finished minced meat with herbs, onions, and egg mixture. Season with salt, black pepper, stir.
- Line the bottom of the ceramic mold with foil (shiny side up), sprinkle the foil with oil. Spread ½ of the minced meat.
- Place boiled and peeled eggs in one line in the center of the minced meat.
- Place the remaining minced meat on top of the eggs and give the product the shape of a roll.
- Cover the roll with foil and place in a hot oven for 60 minutes.
- Remove the foil 15 minutes before the end of cooking. This will give the roll a delicious crust.
- Wait until it cools down, cut into portions.
- Place lettuce leaves on a plate and pieces of roll on top. Serve chopped vegetables separately.
Variant with mushroom filling
Mushrooms go with any meat; this roll uses champignons, but you can use any mushrooms you like.
You will need:
- 700 g pork pulp;
- 150 g champignons;
- 75 g regular onions;
- 2 slices of white bread;
- ½ tbsp. milk;
- 30 g butter;
- a pinch of nutmeg;
- pepper and salt to taste.
It will take: 1 hour.
Calorie content: 350 kcal.
- Make minced meat by grinding the pulp and bread (soaked in milk) through a meat grinder. Add nutmeg to the minced meat.
- Chop the onion into strips and brown in oil. Add mushrooms to it and fry for 10 minutes, season to taste.
- Grease the mold with butter and sprinkle with ground breadcrumbs. Place half of the minced meat into it. Place the mushroom filling in an even strip in the center and cover with the remaining minced meat. Shape into a roll.
- Bake in the oven for 60 minutes at 180ºC.
- Serve the roll hot.

Meatloaf with vegetable filling
Use the amount of vegetables according to your taste. According to the recipe, sausages are also added, but you can do without them. But be sure to put corn in the minced meat.
You will need:
- 500 g minced meat;
- 2-3 slices of dry white bread;
- 75 g onion;
- 50 g sour cream;
- seasoning to taste.
For filling:
- 4-5 inflorescences of broccoli and cauliflower;
- 1 carrot;
- canned corn to taste;
- 2 sausages;
- boiled egg optional.
It will take: 70 minutes.
Value of one serving: 340 kcal.
How to cook:
- Prepare regular minced cutlets, adding spices, canned corn or peas to taste.
- Place minced meat (½ part) in a mold covered with foil. Place chopped vegetables on it, sausages in the center. Cover everything with the remaining minced meat. Roll the foil into a tube. Cook in the oven for 30 minutes, temperature - 200 degrees.
- The roll can be served hot or chilled as a beautiful appetizer.
Meatloaf stuffed with delicious mushroom omelet and carrots
Well, our selection ends with a very unusual snack option. As a filling we will have an omelet with mushrooms. The dish looks very unusual in cross-section and it is not immediately possible to understand what is inside. You can safely serve this dish on the holiday table, just cut it beautifully and surprise your guests.
The main advantage of this filling is its density, i.e. it will definitely not fall out when cut. It can also be supplemented with anything you want.
Ingredients:
- Minced chicken – 1.2 kg
- Mushrooms – 300 g
- Onion – 1 head
- Garlic – 4 cloves
- Carrots – 1 pc.
- Eggs – 3 pcs.
- Milk – 3 tbsp. l.
- Hard cheese – 50 g
- Salt, pepper - to taste
Cooking method:
1. Cut the mushrooms into small cubes and place in a frying pan to fry. Cook them until the liquid evaporates, and then add finely chopped onion. Now fry everything until the vegetable becomes transparent.
2. Next, add the grated carrots to the filling and bring the ingredients until fully cooked. At the end, be sure to add salt and pepper to the filling.
3. Making an omelet. To do this, beat all the eggs into a separate bowl and add milk to them. Whisk everything together. It should be lumpy, like for an omelette.
4. Transfer the mushroom and vegetable filling onto a baking sheet, previously greased with oil, spreading it over the entire area. Next, fill it all with eggs and put it in the oven to bake until done.
An omelette can also be cooked in a frying pan, but its structure will be slightly different, more crumbly.
5. Meanwhile, prepare the minced meat. To the finished product, add spices, garlic passed through a press, salt and mix everything. Now we line the table with a silicone mat or cling film and place the ground chicken on it, giving it the shape of a rectangle. Leave the thickness of the layer approximately 2 cm.
6. Cut the finished omelette in half and place the pieces side by side directly in the middle of the layer. Next, helping ourselves with a mat, we make a sausage out of the meat, tightly connecting the 2 edges. The omelette should be in the middle of the roll and not stick out anywhere.
7. Place the sausage on a baking sheet, seam side down, and sprinkle grated cheese on top. In this form, put the dish in the oven for 30 minutes. The oven temperature should be 230 degrees.
After a while, take out the food and serve it to the table. This roll can be served both hot and cold. The appetizer turns out very juicy and tasty. The family will definitely be delighted.
Minced chicken roll
The secret ingredient in this recipe is ham. This is that hint of flavor that your guests won't be able to recognize and will probably ask what you added to the filling. The main trick is that the cheese is not just added to the meat, but wrapped in a slice of ham.
You will need:
- 500 g minced chicken;
- 1 wheat bun;
- 85 g onion;
- egg;
- 3 pinches of salt;
- 2 pinches of freshly ground black pepper;
- grated nutmeg, optional;
- 1 pod of sweet pepper;
- 10 g butter;
- 1 handful of ground crackers;
- 100 g of boiled cheese and ham;
- 4 plum tomatoes;
- 100 g Chinese salad.
Cooking: 55 minutes.

How to do:
- Combine the minced meat with the bun crumb, chopped onion and egg. There’s no need to be fancy; you’ll end up with an ordinary cutlet mass. Add ground pepper, nutmeg, salt and finely chopped sweet pepper to taste.
- Place half of the prepared minced meat into a mold, which has been pre-greased with butter and sprinkled with ground breadcrumbs.
- Cut the ham into slices, cheese into narrow and thick pieces. Wrap a piece of cheese in each slice of ham and press them into the meat mass, cover with the other half of the minced meat on top and compact it.
- Bake the roll in a preheated oven for 1 hour. Remove, cool and cut into pieces.
- Wash and chop lettuce leaves, tomatoes. Place the roll on a serving plate, garnish with tomatoes and lettuce.
Lavash roll stuffed with minced meat and vegetables
Any minced meat is suitable for the recipe - chicken, turkey, lean pork or beef.
It is better to use homemade sour cream, it will add juiciness to the filling. Vegetable components can be varied. Bright vegetables are preferable - carrots, corn, bell peppers, greens of your choice. Grocery list:
- lavash – 1 sheet;
- minced chicken – 250 g;

- Place the minced meat in a bowl suitable for mixing. Add salt and spices.
- Add sour cream, mix until smooth with a silicone spatula or wet hands.
- Spread the pita bread on the table. Grate the hard cheese on a fine grater and distribute evenly over the sheet, leaving the edges blank.
- Place the minced meat on the cheese, also placing it in an even layer.
- Remove the stem from the tomato, chop the pulp finely, and lightly squeeze out excess juice. Remove seeds from sweet peppers and cut into small pieces. Rinse green onions in running water, dry on a towel, and chop. Place the prepared vegetables on top of the minced meat.
- Fold the edges on both sides, roll the pita bread according to the principle of stuffed pancakes.
- Line a baking tray with baking paper. Place the roll on a baking sheet, brush with beaten egg on all sides and sprinkle with grated cheese. Bake in the oven (190 degrees) for 15-20 minutes until golden brown.
- Transfer the finished roll to a plate, garnish with herbs and serve immediately.

You will need:
- 450 g of pulp (pork or beef);
- 160 g onions;
- 5 eggs;
- 2 carrots;
- 6-7 green onions;
- 1 white bun (stale);
- 25 g sour cream or mayonnaise
- freshly ground black pepper to taste;
- 2-3 pinches of salt.
Cooking: 55 minutes.
Serving value: 300 kcal.
How to cook:
- For the filling, boil two eggs, peel and chop, then mix with grated carrots and chopped green onions. Add raw egg, salt.
- Soak the loaf in milk. Pass the meat, bun and onion through the grill of a meat grinder. Add 30-40 ml of water, two raw eggs, knead the mixture thoroughly, season to taste.
- Lay out the film on the work surface. Place the meat mass on it, give it a rectangular shape (thickness - approximately 1 cm). Place the prepared filling in the center of the meat rectangle.
- Next step: lift one side of the film along with the meat and cover the filling. Then do the same with the other side. Press the edges of the roll so that the ends are closed. Make sure the filling is sealed well.
- Place the roll into a special sleeve and secure the edges.
- Pour water into the multicooker container. Lay out the roll. Turn on the “Baking” program, setting the time to 75 minutes.
- Remove the prepared roll from the multicooker, cool and cut into pieces.

To make a truly delicious minced meat roll, you need to know a few secrets:
- Do not buy ready-made minced meat, but make it yourself. You don't need expensive beef tenderloin for it, but the meat from the hind leg, shoulder, neck and brisket will work perfectly.
- Before putting the pulp into a meat grinder, you need to clean it well - cut off the films, cut out the veins, cartilage and bones. In addition to beef, we recommend using fatty pork pulp for minced meat. Standard option: 1 kg of beef pulp per 0.5 kg of pork.
- You can choose any degree of grinding of meat, but experienced chefs recommend turning it once in a meat grinder with a middle grid.
- For 1 kg of pulp, use 2-3 eggs, about 200 g of onions, which must be chopped simultaneously with the meat in a meat grinder.
- White bread soaked in milk will help make the roll soft. It is important to maintain proportion here. For 1 kg of pulp you need 250 g of white bread, 300 g of milk (for chicken roll, bread crumb and chicken eggs require less). Use yesterday's bread and slightly dried out. Cut off the crusts, chop the crumb into pieces and pour in milk. As soon as the bread swells, knead it well with your hands and combine with the rolled meat. Season the prepared mixture with spices and salt.
- Cover the container with the prepared minced meat with cling film and place in the refrigerator for 30 minutes, during which time the bread will absorb the meat juice. Then mix the minced meat again.
- How you cut the vegetables for the filling depends only on your taste. I like it when the filling turns out homogeneous, then chop it finely. I like it when you can feel individual pieces of vegetables, chop coarsely. We also advise you not to add too much salt to your vegetables. A large amount of salt changes the taste of vegetables not for the better.
