  • tangerines – 1 kg;
  • water – 2 glasses;
  • sugar – 500 ml.

Cooking steps:

  1. Before proceeding directly to the main process, it is necessary to wash the fruit very carefully and carefully under running water; for this you can use a sponge with a hard surface or a soft brush.
  2. Tangerines should be cut in half, placed in a suitable container, pour boiling water so that they are completely covered with water, and let stand for 15-20 minutes. This part of the preparatory stage will help remove the bitterness from the citrus fruits and make the zest softer.
  3. The fruits should be placed in a bowl of cold water and left overnight, or allowed to steep for at least 6 hours during the day.
  4. Prepare sugar syrup. It is cooked according to the classic recipe. You need to put 250 ml of water on the fire and wait until it boils. Then immediately add 500g of sugar and cook over medium heat for about 8-10 minutes.
  5. Pour the previously prepared tangerine halves with hot, ready-made syrup, put pressure on top and leave for about 3.5 hours.
  6. After the required amount of time has passed, you need to dissolve the remaining sugar in three glasses of water, mix very thoroughly, add to the tangerines in syrup and keep on low heat.
  7. As soon as the jam boils, you need to stir it and remove the foam as needed. The jam should boil for 15-20 minutes.
  8. Then you need to remove the dishes from the heat and let the mixture brew for 2-3 hours, then bring it to a boil again and cook for another 10-15 minutes.

It must be said that the boiling and infusion procedure can be repeated several times, then the jam will turn out thick and viscous. If liquid jam is preferable, when halves of fruit seem to float in a medium-thick syrup, then it will be enough to bring the delicacy to a boil twice.

How to make tangerine jam in halves:

Select undamaged tangerines for jam, prick them with a toothpick and blanch in hot water for 15 minutes.

  6. Already soft tangerines should be placed in the prepared syrup and simmered over low heat for another 10-15 minutes.
  7. Let the jam brew for about two hours; its taste will then be more pronounced and the color richer.
  8. Next, you should very carefully, but carefully, move the already thickening mass and put it back on low heat. Simmer for about 10 minutes, and then let it brew for 1-2 hours.

The jam will be transparent and light amber in color. If you need the delicacy to be thicker, you can bring it to a boil and simmer it up to five times. Before the end of the final cooking, squeeze the juice of one lemon into the almost finished jam, stir lightly, turn up the heat, let it boil well and turn it off.

  1. For this recipe, it is better to use large fruits. They should be washed thoroughly and soaked in cold water for 24 hours. During this time, you need to change the water at least three times. Since the delicacy will include tangerine peel, the soaking procedure must be done to remove excess bitterness. When the specified time has passed, you can proceed directly to preparing the jam.
  2. First of all, you should boil the syrup, which will then be poured into the fruit pulp. It is brewed from sugar and water, and a cinnamon stick is immediately added to it.

  4. Before the sugar syrup has time to cool, add tangerine peel and cook, stirring gently, for about 30-40 minutes.
  5. Turn off the gas to allow the jam to steep. This process should take at least 40-50 minutes, after which you should once again bring the mass to a boil and cook for about an hour.
  6. It is recommended to add citric acid and chopped zest to the almost finished jam and simmer the mixture over the fire for another couple of minutes.
  7. Then let the mixture brew well and cool, and then pour it into jars, choosing the most convenient storage method.

If you plan to store the jam for a long time, before twisting, you can add more citric acid to each jar, about the tip of a knife. It is an excellent preservative and will not spoil the taste of the dish at all. If the jam will be stored in the refrigerator, it is enough to close the container with a lid as tightly as possible, since it can very quickly absorb all foreign odors.
