Red fish rolls with cream cheese and caviar

This is an incredibly tasty and absolutely win-win option for any holiday, and for the New Year in particular. We have long associated festive caviar snacks with the New Year, and a new original way of serving it will only enrich your table. It’s hard to disagree that this taste is truly festive. Tender fillet of red fish, salmon or salmon, cream cheese and a little sparkling red caviar. Just thinking about this snack is already making my mouth water.

You will need:

  • lightly salted red fish - 250 grams,
  • cream cheese - 250 grams,
  • red caviar - 100 grams,
  • green salad leaves,
  • fresh dill,
  • lemon (drizzle over fish when serving).

Preparation:

For this holiday roll appetizer, you need to use soft cream cheese like Philadelphia. It should be unsweetened and without a smoky taste; it should not be replaced with processed cheese.

Chop the dill very finely, 2-3 sprigs, and stir it with the cheese.

Red fish must be cut into thin and narrow strips. Then place a teaspoon of cheese on the end of the lying strip, and then roll the fish into a roll. Make sure the rolls are not too thin; they should eventually stand upright.

Now place the lettuce leaves in small pieces on a flat plate. Place a fish roll vertically on each leaf. Place some red caviar on top. Sprinkle lightly with lemon juice.

Can be served. A stunning holiday appetizer is ready!

Hot meat dish, quick and tasty, recipe

Meat fillet stuffed with peppers and tomatoes

How to cook:

  1. Let's prepare the ingredients. Cut the onion into rings (not too thin). Medium slices - tomatoes (add some salt, put them in a colander, let the excess moisture drain). The middle rings are bell peppers.
  2. Chop the greens and garlic. Remove the zest from the lemon; for this meat dish, 1 teaspoon is enough. Add a little salt to the greens, combine with garlic and zest, mix.
  3. Beat the egg with pepper and salt. Combine with grain mustard. Separately, prepare a mixture of sesame seeds and breadcrumbs.
  4. Divide the meat fillet into plates. Thickness - 6-7 mm. Let's beat it off a little. Place on each layer of meat in sequence: a tomato circle, a pepper ring, an onion ring, a pepper ring, a tomato circle. On top of the vegetable “structure” we put the zest with garlic and herbs. Cover with a second layer of meat fillet.
  5. Secure the edges of the meat with three or four toothpicks. Dip in mustard and egg. Roll in sesame-crumb breading. Fry for 12-15 minutes. at both sides. The heat should be moderate, otherwise the breading will quickly burn, and the vegetable filling and meat will remain soggy. Serve the stuffed meat fillet hot. Don't forget to remove the toothpicks before serving.

New Year's appetizer "Christmas balls" made of chicken with cheese and nuts

In addition to its incredible taste, this treat will also give you a festive feeling with its New Year's appearance. How do you like these real Christmas balls that lie on a plate in front of your guests? I don’t advise you to hang them on the Christmas tree, but I recommend that you eat them first of all, because they are really tasty.

This appetizer takes a little more time to prepare, but the results are worth it, so find some spare minutes.

You will need:

  • chicken fillet - 300 grams,
  • hard cheese - 200 grams,
  • walnuts - 100 grams,
  • garlic - 1-2 cloves,
  • dill greens,
  • olives - 50 grams,
  • mayonnaise for dressing.

Preparation:

We start preparing the festive appetizer “Christmas Balls” by boiling the chicken breast. Then cool it and cut it into very small pieces.

Grate the cheese on a coarse grater. Now mix the cheese and chicken, add chopped garlic to them. Season the resulting mixture with mayonnaise to make it thick enough. Add salt if necessary. Let it sit for a bit, about 20 minutes, so that everything is well set and soaked.

Walnuts must be crushed into fairly fine crumbs, but not powder. Use a blender or crush the nuts in the bag with a rolling pin. Place the nut crumbs on a plate.

Roll the chicken-cheese mixture into even-sized balls. Roll each ball thoroughly in nuts. Place on a flat plate.

Place half a pitted olive on top of each Christmas tree ball. Insert a loop of dill stem into the olive nut. Use dill leaves for decoration, placing them around the balls.

Festive snacks are ready, bon appetit!

Finger-licking cucumber appetizer for the holiday table

These canapes are the first to be eaten on the festive table. Guests are usually attracted by their appetizing appearance, and after tasting, their very refined taste.

They are very good to eat as an aperitif; a canapé involves picking up a small piece of something with a fork and eating it.

We will need:

  • Bacon 3 strips
  • Grated hard cheese 3 tbsp. l.
  • Boiled egg 3 pcs.
  • Garlic 1-2 cloves
  • Mayonnaise ½ tbsp. l.
  • Cucumber 1 pc.

First we need to chop the bacon, to do this we cut the strips of bacon lengthwise, then cut them crosswise into small slices. The bacon must be raw smoked. Place the slices in a cold frying pan and turn on the heat.

Fry until the bacon is lightly browned and crispy

Grind 3 boiled chicken egg yolks in a small bowl to a porridge.

Add garlic to the yolks, which we pass through a press. Three tablespoons of grated cheese, for appearance we took cheeses of different colors. Mix the whole mass.

The bacon was fried. Add it to the bowl, stir with the yolk and cheese mixture. If desired, the bacon can be dried on a paper towel to drain excess fat.

Season with mayonnaise and we have a filling. Add it to taste and desire

Let's start with the cucumber, from which we will make cups.

In the washed cucumber, for beauty, we will make small grooves using a potato peeler, using a loop to get rid of the eyes. It is not necessary to make them, but if they are present the dish will be more elegant. You need to make 4-5 of them

We cut the cucumber into slices 10 mm thick; there is no need to cut it smaller so as not to damage the bottom of our future cups

Cut out the center of the cucumber, being careful not to pierce the bottom all the way through. This can be done using a knife and spoon

Fill the cucumber cups with the prepared salad using a spoon and fork. You can also use a pastry syringe

Place the prepared dish on a plate. You can serve, the appetizer is ready

Festive appetizer - “New Year's fly agarics” with caviar

It looks very original, but these are actually New Year's sandwiches with caviar. Who can resist eating these beautiful holiday snacks? I couldn't.

You will need:

  • red caviar - 1 jar,
  • white bread - a few slices,
  • cream or processed cheese - 100 grams,
  • poppy seeds - 2 teaspoons,
  • mayonnaise for dots on the cap,
  • greens for decoration.

Preparation:

Mushrooms should initially be cut from white bread without crust. You can do this simply with a knife, or you can also use cookie cutters; these can be found in the store. Lightly dry the bread in a toaster or in a dry frying pan, but not until crusty, but only until there is a slight surface crunch.

Then spread a good layer of soft cheese on the bread. Place the caviar on top of the cap in an even layer without gaps. Draw dots with mayonnaise.

Decorate the white knife with crumbly poppy seeds, sprinkling from the end. Place the mushrooms on plates in a circle and garnish with herbs.

Very beautiful and most importantly delicious!

Eggplant rolls with Feta cheese and tomatoes

Many people have known this holiday appetizer for a long time, and especially the fact that, despite the fried eggplants, it is cold. And if you let these rolls sit in the refrigerator, they only become tastier. The filling here is simply wonderful and goes well with eggplant and Feta cheese. It is moderately soft and salty, add garlic and fresh juicy tomato to it and it’s hard to imagine a tastier snack. Especially if you choose from snacks that contain neither meat nor fish.

You will need:

  • eggplants - 2 pieces,
  • tomatoes - 2 pieces,
  • Feta cheese - 150 grams,
  • garlic - 1 clove,
  • walnuts - 50 grams,
  • parsley,
  • vegetable oil,
  • salt.

Preparation:

Before frying eggplants, you need to rinse them a little with ice water, this will wash away any slight bitterness if any remains. Although lately bitter eggplants have become a rarity.

Heat up the frying pan. Cut the dried eggplants into slices lengthwise, 0.5 cm thick. Fry each slice on both sides until browned. Then place them on paper towels to absorb excess oil. The eggplants need to be cooled. At this time, prepare the filling.

Mash Feta cheese with a fork until soft, add crushed garlic. Cut the tomatoes into thin slices and remove the core and seeds. Break the walnuts into quarters.

Now take a slice of eggplant, put Feta cheese, a slice of tomato and a piece of nut at one end. Place a parsley leaf on one side so that it sticks out. Now wrap the roll. Do this with each slice. Arrange beautifully on a platter and garnish with herbs. Ready.

“New Year's bells” - a festive appetizer of crab sticks with red fish

It is most interesting to decorate New Year's holiday snacks in the form of various New Year symbols or objects and decorations that we most often use. We have already seen how to make Christmas balls, and now let me tell you how to make Christmas bells. For example, bells are almost permanent decorations on my Christmas tree, so I think this option is very successful.

The most interesting thing is how these bells can be formed. To do this, you need to find suitable small cups or cone- or bell-shaped glasses. I have a fancy tea set with little cups that fit just right. If you have such dishes, then feel free to read the recipe further and prepare the bells for the festive table.

You will need:

  • lightly salted red fish - 300 grams,
  • crab sticks - 200 grams,
  • soft cream cheese - 200 grams,
  • dill - 1 small bunch,
  • olives - 50 grams.

Preparation:

To prepare holiday snacks for the New Year in the form of bells, find suitable cups of the desired shape. Line the bottom of the cups with a sheet of cling film, leaving a wide edge for wrapping.

Take red fish and cut into thin wide slices. Lay the cups from the inside with these plates, this will be the outer layer and the base of the bells. Place the fish so that the edges can be rolled up.

Grate the crab sticks and mix with soft cheese. Finely chop the dill and add to the crab sticks with cheese. Lightly salt to taste and mix thoroughly. Now place the filling inside the cups on a layer of fish. Fold the edges of the fish so that there is no hole left. Wrap layers of cling film on top. Place the cups in the refrigerator for 2 hours to set.

After two hours, remove the bells from the cups along with the film, and then carefully unwrap them. Place the bells on a plate lined with lettuce and herbs. Make a bell loop from half an olive and a dill stalk and place it on top.

The bells are ready! Have a nice and delicious holiday!

Cucumber rolls with crab filling

Many, of course, have noticed that preparing holiday snacks in the form of rolls and rolls is very convenient. Moreover, a wide variety of products are used for this. In one of the previous articles, I talked about lavash rolls with different fillings, and now I want to suggest making rolls from a thin slice of cucumber.

For the filling we will take crab sticks and cheese, but if you wish, you can make it from your favorite salad, you just need to cut it very finely. You can take cheese, meat, fish salads, they all go very well with cucumbers, so it will definitely turn out delicious. Feel free to experiment. It works especially well with salads that include cucumber, meaning its flavor will already be in the recipe, but instead of being put inside, it will end up on the outside. In general, this idea is almost universal and convenient.

You will need:

  • cucumbers - 2-3 large pieces with small seeds,
  • crab sticks - 200 grams,
  • hard cheese - 150 grams,
  • greenery,
  • mayonnaise,
  • garlic if desired.

Preparation:

Grate the crab sticks on a coarse grater or finely chop with a knife. Grate the cheese too. Finely chop just a little greenery, 1-2 sprigs. If you want to make the filling more piquant, you can add 1 clove of garlic, squeezed through a press. Now mix it all and season with mayonnaise. You can add a little salt to taste.

Wash the cucumbers and cut them lengthwise into very thin slices. To do this, it is better to take a very sharp knife. Now place a spoonful of filling on one end of the cucumber slice and wrap it into a tube. Cucumbers are a fairly elastic vegetable, so to prevent them from unfolding, pierce them with a skewer or toothpick.

For decoration, add some green leaves and pieces of crab sticks. It is best to serve immediately while the cucumbers are still fresh and crispy. Festive cucumber snacks are ready! Invite your guests to the table!

Rolls made of processed cheese, ham and salmon.

This is also our very favorite recipe. It all started with lavash rolls, but it turns out that you can use processed cheese instead of lavash. Quite original and very tasty.

We will need:

  • Processed cheese slices – 2 packs (cheddar and mozzarella);
  • Boiled-smoked ham – 100-150 g;
  • Lightly salted salmon – 100-150 g.

Step 1.

Open both packages of cheese, remove the slices from the film and place them on a cutting board. Place a piece of ham on each slice of cheddar, and a slice of lightly salted salmon (trout, chum salmon, pink salmon) on the mozzarella.

Step 2.

Roll up the rolls. Let cool. Using a wet, sharp knife, cut each roll into 2-3 pieces.

Step 3.

Let stand for a couple of hours in the refrigerator. Then you can serve, bon appetit!

Housewives can use their imagination when preparing thin lavash rolls! Take a sheet of pita bread, grease it with butter or mayonnaise and put whatever you want into it: Korean pickled carrots, crab sticks or salted fish, cucumber slices, salami, salted mushrooms. Roll into a tight roll, wrap in film and keep in the refrigerator overnight.

Important! It is better to cut half an hour before serving.

New Year's snack - Cheese Christmas trees

The Christmas tree is one of the most important symbols of the New Year, so it is not surprising that treats, and especially holiday snacks, are tempting to be decorated in the shape of a Christmas tree. This is not so difficult to do, especially with a little imagination and a lot of greenery. Also look for saltine crackers for the stand.

You will need:

  • eggs - 3 pcs,
  • processed cheese - 200 grams,
  • garlic - 2 cloves,
  • dill greens - 1 bunch,
  • mayonnaise,
  • unsweetened crackers - 10-15 pieces,
  • red or orange vegetable/product for topping.

Preparation:

Hard boil the eggs and peel them. Then grate them on a fine grater, yolks and whites together. Also grate the processed cheese on a fine grater so that they can be grated better; you can keep them in the freezer for a while to make them harder. If you couldn’t buy cheese curds, you can also take soft processed cheese, but it should be thick enough and add less of it. The Christmas trees should not end up spreading. You can also replace it with hard cheese.

Mix cheese and eggs, season with a little mayonnaise, add garlic, salt and pepper to taste. Now mold this mass into cones.

Chop the dill very finely and roll the resulting cones in green needles. Make it thicker so that there are no gaps and the Christmas trees come out fluffy and green. Place the finished Christmas trees on round crackers. Decorate the top with a bright red or orange color. This will be the top. You can take a piece of carrots, dried apricots, sweet peppers or cranberries. If desired, with a thin stream of mayonnaise, you can draw garlands or balls with large dots on the sides of the Christmas trees.

Christmas trees will definitely appeal to both adults and children!

Original snack for the New Year “Tangerines”

What other symbols of the New Year do we have, besides Christmas trees, snowmen and Christmas tree decorations? Well, of course tangerines. It has long been difficult to imagine this family holiday without them. But tangerines can be not only a delicious fruit dessert, but also a real holiday snack. Imagine these bright orange ellipses on an elegant table. All the eyes and thoughts of the guests will definitely be focused on them with a desire to try it as soon as possible. No one can resist.

They are not at all difficult to prepare, and boiled carrots give them a bright appearance. Inside you will find a delicious surprise in the form of chicken salad with cheese. Very, very tasty. I prepared tangerines for my family using this recipe, they were the first to be swept off the table and they kept asking for more for a long time.

New Year's salads 2020, recipes

Without New Year's salads - Olivier , mimosa and herring under a fur coat, we can no longer imagine the New Year's table. But you don’t have to limit yourself to a traditional set of salads. After all, there are many such New Year’s recipes. For example, excellent New Year's salads - salad with crab meat or rice salad with mussels - those who are watching their figure will surely like them. Salads with poultry meat are very popular during the holidays: turkey, chicken and even duck go well with tender lettuce leaves - the result is both satisfying and not burdensome on the stomach.

In principle, any salad is an excellent opportunity to show imagination and ingenuity, because it all depends on how successful combinations of tastes, textures and even temperatures you choose (for example, the meat in the salad can be warm, and the vegetables can be cold).

Tender turkey and chicken meat goes well with boiled potatoes and carrots, mushrooms, as well as green salad leaves, nuts, raw and dried fruits - oranges, apples, pineapple, dried apricots, prunes.

Poultry meat in almost any New Year's salad can be replaced with squid meat: the taste of the salad will become much more tender, but the essence will remain the same. The main thing is to cook this squid so that it does not become rubbery. Actually, there is no need to cook it. You just need to put it in hot water (about 80 degrees) for 10 minutes, and that’s it.

In general, seafood can make almost any salad festive: their taste, as a rule, is very delicate (but nevertheless very expressive), and they look bright and attractive. The main thing is not to interrupt their delicate taste and not to overdo it in cooking and frying: mussels, shrimp, scallops and other sea life should be heat treated in a matter of seconds, otherwise they lose their taste, the notorious tenderness, and freshness. However, some seafood, such as mussels and shrimp, are sold already boiled in our stores, but there’s nothing you can do about it.

New Year's salads look very elegant . Plus, they go with almost anything. But you won’t be able to cook them in advance: the leaves will become limp and lose both volume and color. To delay the moment of loss of “marketable appearance” and preserve as many vitamins as possible, it is better not to cut salad leaves with a knife, but to tear them with your hands. And one more iron rule: the salad leaves must be dry - otherwise the dressing will simply drain from them. If you do not have a special device for drying lettuce leaves, after washing, shake them and place them on a dry, clean towel - in about 15 minutes they will be ready to eat.

New Year's salads should be seasoned with fresh vegetables and green salad leaves immediately before serving. But it is better to season salads made from boiled vegetables several hours before serving - so that the dressing has time to be absorbed.

Decorating the New Year's table

Festive appetizers - Fly agaric salad with ham

Many people know similar holiday snacks - mushrooms made from an egg and a tomato as a cap, but I want to offer you a more delicious variation of this treat. Instead of a boiled egg, we will make a fly agaric knife from the ham salad. It will be light enough for the fungus to have the desired appearance, but it will also be much tastier.

You will need:

  • ham - 150 grams,
  • cheese - 150 grams,
  • eggs - 3 pieces,
  • small round tomatoes - 0.5 kg,
  • fresh cucumbers - 1-2 pieces,
  • lettuce leaves for decoration,
  • mayonnaise for dressing.

Preparation:

All the holiday snacks for the New Year that we are considering are very easy to prepare and from simple ingredients. Fly agarics are no exception.

Boil the eggs hard, peel and grate on a coarse grater. Grate the cheese too. Cut the ham into very small cubes so that it does not disturb the overall consistency of the salad. Mix all these products, season them with mayonnaise to form a thick mass. Add salt if necessary.

Cut the cucumbers into thick circles, these will be stands for fly agaric mushrooms.

Cut the tomatoes in half and remove the middle.

Place lettuce leaves on a platter. Place cucumber slices on top. Form the lettuce into cylinders, these are the legs of our mushrooms. Place each leg on a cucumber circle. Place tomato caps on top. Draw white dots with mayonnaise.

So the New Year's fly agarics are ready. Bon appetit!

New Year's snack recipes

Snack cake “Caviar”

How to cook:

  1. Fry finely chopped onion in butter until soft. Important: it should become transparent, barely golden, but not fried.
  2. Without reducing the heat, pour champagne into the pan with the onions. It will give the appetizer a slightly sweetish, spicy taste. Once everything boils, reduce the heat to low. Stew the onion with champagne for about 25 minutes. (the liquid should evaporate completely). Let's cool.
  3. Let's prepare the remaining components. Mix “Cream Bonjour” with finely chopped herbs and sour cream. Add salt and pepper to taste. Boil, cool, chop the eggs into cubes, season them with mayonnaise (a little bit - the mixture should not turn out liquid).
  4. If desired, you can arrange the festive caviar appetizer in portions (using special salad ring molds) or as one large cake. Sequence of layers: boiled eggs with mayonnaise, onions stewed in champagne, cheese mass.
  5. Before serving, decorate the New Year's appetizer with caviar. Tip: if there is not enough caviar, you can decorate the appetizer with boiled shrimp, crab chips or cubes of crab sticks, and distribute the eggs evenly between them.

Cheese baskets with Guacamole appetizer

How to cook:

  1. Cut out a circle from parchment (it’s better to use siliconized one). The diameter corresponds to the diameter of the frying pan on which we will melt the Parmesan. Advice: there is no point in choosing a frying pan that is too large to make all the baskets at once. The cheese mass hardens and loses its plasticity quickly, so it is important to have time to transfer the blanks into molds on time.
  2. Finely grate the Parmesan. Heat the pan and cover with the prepared paper circle. Place heaps of Parmesan cheese on top (a tablespoon for each basket). Let the cheese melt. Important: it should not be fried.
  3. Remove the pieces from the pan along with the parchment. Let cool for no longer than 10 seconds. Separate with a silicone spatula. Place in cheesecake pans until set.
  4. Let's prepare the filling - the Mexican snack "Guacamole". Wash the avocado, pat dry with a napkin, and cut lengthwise. To keep the pulp light and give the whole filling a pleasant sourness, sprinkle with lime or lemon juice. Mash it into puree. This is easy to do with a regular fork.
  5. Remove the seeds from the cherry tomatoes and then chop them into cubes. Combine with avocado, mint, green onions. You can add a pinch of flaxseeds and cumin. Let's add salt and pepper. Mix easily. Place the Guacamole in the frozen baskets. It’s best to serve this original New Year’s appetizer right away.

Canapes “Tropical Kiss”

How to cook:

  1. Grate eggs with cheese (it’s better to take a spicy one - “Cheddar”, “Gouda” or similar). Let's mix. Squeeze out the garlic. Let's add some mayonnaise. The cheese mass should be easy to spread on the canapes, but not spread.
  2. Let's keep the trout in the freezer for about half an hour. After this, it will be easy to cut the fillet into thin slices.
  3. Let's prepare a festive snack. Cover each cracker or cookie - the basis of a canape - with cheese and egg spread. Place a quarter of a pineapple ring on top. Then - trout plates folded into neat spirals and greens.

New Year's Appetizer - Prune Mussels

Another snack dish that I discovered recently. And thanks to him, I believed that festive prune snacks could occupy one of the main places on the New Year's table. The thing is that many people are already bored with standard and classic snacks. Here you can also prepare stuffed whole prunes. A very tasty and healthy snack that plays on the difference between sweet and cheesy tastes. This dish not only has excellent taste, but also appearance. A cut prune looks like an opened mussel shell, from which a delicious filling emerges.

Highly recommend. But at the same time, I advise you to try preparing several different fillings. This will greatly diversify the New Year's table.

Don't be afraid to experiment during the holidays. Sometimes it's enough to try a new dish once to fall in love with it forever.

Boil chicken and quail eggs separately, as their cooking times are different. Peel off the shell.

Cut several thin slices of ham and hard cheese. Cut out figures from Borodino bread, and cut out ham and cheese in the same shape. Stack them on top of each other so that the bottom layer is visible. Decorate with small pepper and cucumber figures. Place figures of different colors to make it more elegant.

Cut a few more slices of cheese and ham, and cut them into flowers for sandwich bouquets. Use white bread without crust for them. Cut it into a diamond shape, as if it were a flower bag. Arrange the arrows of green onions in the form of stems, and flowers at the top. Use mayonnaise to draw a ribbon on the bouquet.

Grate the cheese. Cut the chicken eggs in half lengthwise and remove the yolk. Mix cheese and yolk, add finely chopped dill and mayonnaise. Fill the eggs with this mixture. Cut the olives in half. Make the body of a spider from one half, and cut the second into strips and make legs from them. Draw dots with mayonnaise - eyes.

Cut off the lid of large tomatoes, take out the middle and put the same cheese filling inside. Replace the cover.
