And with all this, the result is aromatic and tasty baked goods. For the dough, combine 200 g of butter (you can use margarine instead), 130 grams of wheat flour, 90 grams of sugar, a teaspoon of soda. Grind everything into crumbs and divide into 2 halves. Place one in a mold (grease it with butter and sprinkle with a little flour). Flatten.

To prepare the filling you will need 500 grams of cottage cheese, 3 eggs, 4-5 tablespoons of sugar and a handful of raisins. Beat the eggs and sugar with just a fork. Add cottage cheese (if it is grainy, then rub through a sieve) and raisins, washed and dried on a napkin. Stir and carefully spoon the filling over the crumbs. It will be quite liquid. Flatten and pour in the second half of the dough. Cook in a preheated oven until the cheesecake is browned. Cool and you can serve the pie with cottage cheese. Grated into crumbs, it turns out airy and tender. It’s unlikely that anyone will be able to resist him.

Quick pie with cottage cheese

Sometimes you literally have to cook in a hurry, but this does not at all affect the taste and appearance of the finished baked goods.

  • 500 g cottage cheese;
  • 1 tbsp. granulated sugar;
  • 8 eggs;
  • ¾ tbsp. flour;
  • ½ tsp. soda quenched with lemon juice;
  • vanilla optional.

Preparation:

  1. Beat the egg yolks into the cottage cheese, add sugar and grind until smooth. Enter the quenched soda and vanillin.
  2. Using a mixer, beat the egg whites until stiff, and fold them into the main mixture, spoonfuls at a time.
  3. Sift the flour and very carefully add it to the curd dough. After stirring lightly, it should have a pancake-like consistency. Add a little more flour if necessary.
  4. Grease a mold with high sides with oil, dust with flour and pour in the curd dough. Bake until browned at an average temperature of 150-170C.
  5. As soon as the cake begins to pull away from the sides of the pan, remove it and cool thoroughly.

This recipe was specially invented for those who would like to surprise their guests by preparing an easy and simple unusual pie. Shortbread dough with cottage cheese is always a win-win combination, and here there is also a beautiful cut, thanks to the interestingly laid out apricots. Moreover, it does not require any overseas ingredients or standing in the kitchen for many hours.

Making the pie starts with the dough. For it, grind 150 g of margarine or butter with half a glass of sugar, break 3 eggs and beat the mixture. Add a packet of baking powder, 350-400 grams of wheat flour and knead into a tight dough. It should hold its shape well and not stick to your hands. Place it in a mold (its diameter should be at least 26 cm), level it with your hands and make fairly high sides. Place canned apricot halves on top, skin side up. This is what makes this cottage cheese pie unusual. The recipe is simple but effective.

All that remains is to make the filling. Mix 600 g of cottage cheese and 3 chicken eggs, add 50 grams of starch to the mixture and mix. Separately, beat a glass of heavy cream, adding 2/3 cup of sugar and 20 grams of vanilla sugar. Add to cottage cheese and mix well. Pour the filling over the apricots and place the pie pan in the oven for 45-50 minutes until the dough and filling are browned. Cool completely and you can try the pie with cottage cheese and apricots. By the way, they can be replaced with other fruits.

How to make a delicious curd pie with berries:

You need to start with a test:

  • Mix granulated sugar with vanilla sugar and pour into a deep bowl.
  • Beat in the egg there and mix everything well with a whisk.
  • Pour in refined vegetable oil.
  • Gradually sift part of our portion of flour through a fine sieve and add baking powder.
  • Boil the milk in advance and cool to room temperature. Pour one hundred twenty-five milliliters and add to the rest of the ingredients.
  • Sift in the rest of the flour and mix with a whisk. Knead the dough, which should be elastic and not very thick.
  • Take a baking dish and pour the dough into it.
  • Then spread the dough evenly with a silicone spatula and leave for a while.

During this time you need to prepare the filling:

  • Place the cottage cheese in a separate deep bowl, beat in two eggs, add sugar and vanilla sugar.

  • Pour half a glass of milk into the same bowl and add starch.
  • Mix everything using a blender. You should get a soft, homogeneous mass.

Yeast pie with cottage cheese

There is probably no more delicious pie than a yeast pie made from cottage cheese. A simple baking recipe based on such a dough cannot help but become popular. The main thing is to have time for proofing and kneading. And you don't have to be an experienced cook to make it. Any housewife can handle this recipe.

For the dough, mix a packet of dry yeast, 3 eggs, 125 ml of milk, 5 grams of salt, 3 times more sugar and beat. Add 4-4.5 cups of flour and knead the dough like pies. Divide it in half, roll one part into a layer measuring 30 by 40 cm and place on a baking sheet. Grease it in advance. Then place and smooth out the curd filling, cover with a second similar layer. Cover with a clean towel and let the dough rise for 1 hour and 20 minutes. Preheat the oven in advance. Bake for 20-25 minutes at 180-190 degrees. A delicate curd filling with juicy peaches will ensure a great success for an ordinary pie. It can be served on a special occasion or for an ordinary evening tea party.

For the test:

  • 200 g of first-grade flour;
  • 100 g butter;
  • 100 g sugar;
  • 1 egg;
  • 1 tsp store bought baking powder.

For filling:

  • 400 g cottage cheese;
  • 200 g sour cream;
  • 120 g sugar;
  • 2 eggs;
  • 2 tbsp. starch;
  • half a lemon;
  • a packet of vanilla sugar;
  • can (500 g) whole peaches.

Preparation:

  1. Remove the butter from the refrigerator in advance so that it becomes soft. Mash it with sugar with a fork, add an egg, stir.
  2. Add the flour and baking powder little by little, constantly stirring. Form a ball from the finished dough with your hands.
  3. Cover the round pan with parchment, place the dough and spread it with your hands, forming high (6-7 cm) sides. Place in the refrigerator for half an hour.
  4. Grind the cottage cheese through a sieve, add sugar, including vanilla, sour cream, dry starch, eggs and lemon juice. Beat until creamy.
  5. Place it in the mold, place the peach halves on top, slightly pressing them into the curd cream.
  6. Preheat the oven to 180C and bake the pie for about 1 hour.
  7. Cool, refrigerate for a couple of hours (or overnight).

Banitsa with cottage cheese

If you need a really quick cottage cheese pie, the Bulgarian banitsa recipe is the most suitable one. Moreover, you can make both sweet and savory filling. And you don’t even need to knead the dough; thin pita bread is used instead. All that remains is to make the curd filling and filling.

Mix cottage cheese with 2 eggs and beat. Then place on sheets of pita bread and twist them into tight ropes. Having given the appearance of a snail, place it in a mold (grease it with a little oil). Preparation:

  1. Mash the egg and sugar with a fork, add soft butter, milk and flour. Quickly knead the dough with a fork and then with your hands. Make a ball out of it and, wrap it in plastic, put it in the freezer for 15 minutes.
  2. If necessary, peel and core the apples. Cut into even slices. Grind the cottage cheese in a meat grinder.
  3. Carefully separate the yolks from the whites and place the latter in the freezer for a couple of minutes. Beat the yolks, sour cream, starch and sugar with a mixer and add to the cottage cheese. Stir.
  4. Add 1 tsp to chilled whites. ice water and beat until strong white foam. In order not to lose the fluffiness, literally stir it into the curd mass one spoon at a time.
  5. Roll out the dough into a round layer (1-1.5 cm thick), place it in a mold, making low sides, and place in the oven for 15 minutes (200C). Take out the mold, reduce the heat to 180C.
  6. Place some of the apple slices beautifully on the bottom of the slightly cooled basket, pour in the filling and decorate the top at your discretion with the remaining apples.

But what to do if you need to cook a delicious pie, but don’t have an oven or don’t want to turn it on on a hot day? You can make a simple pie with cottage cheese without baking. Moreover, it is very easy to do. For it you need to take 300 g or “For tea”, 250 g of cottage cheese without grains, 100 g of sugar, a glass of sour cream and any dried fruits.

You will also need a rectangular pan; it should be lined with cling film to make the cake easier to remove later. Mix everything except the cookies. This will be the curd filling. You can add any dried fruits (cut into large ones), just wash and dry them first. Thinly sliced ​​bananas and compote fruits will also work.   4. If necessary, rub the cottage cheese through a sieve, add vanilla, starch and yolk mixture. Beat until smooth with a fork or mixer, whichever is more convenient.
  5. Add a pinch of salt or a teaspoon of cold water to the whites, beat until a strong foam forms.
  6. Very carefully fold the whipped whites into the curd mixture. Place it in a pastry basket.
  7. Thaw frozen cherries and drain the resulting juice. Squeeze out the seeds from the fresh one. Spread the curd cream over the surface. Sprinkle with a couple of spoons of sugar.
  8. Bake in an oven preheated to 180C for about an hour.

Curd pie with strawberries

The most beautiful seasonal berry, the strawberry, will be a worthy decoration for a cottage cheese pie. At other times of the year, the berries in the recipe can be replaced with any fruit, raisins and candied fruits.

To prepare the pie you will need:

  • Cottage cheese – 500 gr;
  • Flour – 200 gr;
  • Sour cream – 200 gr;
  • Sugar – 200 gr;
  • Butter – 100 g;
  • Eggs – 5 pcs;
  • Starch – 40 g;
  • Vanilla sugar – 2 bags of 10 g each;
  • Lemon juice – 3 tablespoons;
  • Baking powder – 1 teaspoon.

Preparation:

Prepare soft dough. Add half the sugar, 1 egg, a bag of vanilla and baking powder to the softened butter. Add the sifted flour and knead the dough.

Grease the baking dish with sunflower oil and spread the dough with sides in an even layer. While we prepare the filling, put it in the refrigerator!

We prepare the filling for the pie from 4 eggs, the remaining sugar, vanilla, cottage cheese, sour cream, starch and lemon juice. Any cottage cheese is suitable: both homemade and store-bought!

Punch through the white sour cream and curd mass with a blender and pour it onto the dough in a baking dish.

We beautifully arrange slices of sliced ​​strawberries on top and bake the pie at +180 degrees for 50-60 minutes.

We check readiness with a toothpick; when pierced, it should come out dry!
