Isn’t it true, sometimes you really want to quickly prepare something delicious for dinner or the unexpected arrival of guests? A salad recipe with egg pancakes and smoked sausage will help you easily cope with this task. This original and satisfying dish has a unique taste and also looks extremely appetizing. It is prepared from a minimum amount of ingredients, and the process of creating the delicacy itself does not require much effort or much time. Salad with smoked sausage and egg pancakes is perfect for both a family dinner and a holiday feast.
About the cooking features
The technology for preparing salad with egg pancake and smoked sausage has certain features:
- The main ingredient of this treat is egg pancakes. To prepare them, a mixture reminiscent of an omelette (from milk, kefir, water and mayonnaise) is used. Thickening of this product is ensured by adding starch to it. You can also add dried carrots (finely grated), herbs and vegetable juice, thanks to which the pancakes will take on a slightly different shade. Spices and salt will also not be superfluous.
- Egg pancakes are fried in the same way as regular ones, in a hot frying pan greased with vegetable oil. In this case, the dough should be poured with a ladle onto the middle of its surface. The pan is smoothly tilted, distributing the dough as evenly as possible over the entire area of the dish. After the edges of the pancake are browned, turn it over to the other side using a wide spatula and fry until fully cooked. Cooking one egg pancake will take about three minutes. For the salad, it is enough to fry 3-5 pancakes (you will need 4 eggs).
- The finished pancakes are removed from the pan, rolled up and cut into strips 1 cm wide. The result should be long noodles.
- It is recommended to stir the egg pancake salad using two forks. It is quite difficult to mix the ingredients well with a spoon without damaging the pancake noodles.
- You should not add boiled eggs to a salad with egg pancakes and smoked sausage (this recommendation should be taken into account by those who like to invent their own snack options). You can also omit the sauce or reduce its use to a minimum. Otherwise, the dish will turn out to be too high in calories.
- Egg pancakes, as well as other foods that have been heat-treated, should be cooled to room temperature before adding to the salad. If you combine hot ingredients with cold ones, the salad will quickly turn sour.
- Egg pancake salad can be made either regular or puff. The appetizer should be laid out in layers several hours before the start of the feast, otherwise the food will not have time to soak in the dressing.

Our recipe is classic, with sausage, so I usually choose the “Doctorskaya” variety from all the boiled sausages, because it is with it that Olivier turns out the most tender, but you can see for yourself and choose according to your taste.
Is there a difference - what kind of cucumbers to put - salted or pickled?
Eat! And big! Salty ones have a more sour and sharp taste, because... they are prepared using the fermentation method, without vinegar. And vinegar and sugar are added to pickled ones. Both types will be good in Olivier salad, but you will need to add a little less salty ones, given the sour taste. Accordingly, there are more marinated ones. Of course, it’s up to you to choose, because it’s a matter of your taste.
For example, I prefer salty ones. But I always emphasize that in order to achieve the desired result, you must definitely try. After all, we all make preparations differently, so the acidity of cucumbers may differ.
Ingredients of Olivier salad:
- Sausage (preferably Doctor's) - 450 gr.
- Can of green peas - 1 pc.
- Eggs – 7 pcs.
- Carrots – 3 pcs.
- Potatoes – 4 – 5 medium tubers
- Pickled cucumbers – 5 – 7 pcs. (small)
- Fresh cucumbers - 3 pcs.
- Mayonnaise – 100 gr.
- Sour cream - 100 gr.
- Salt pepper
- Dill (for decoration).
How to cook:
First you need to do preparatory work on all the ingredients:
Wash the potatoes and carrots thoroughly to remove dirt and cook, adding salt to the water. And in a separate pan - eggs.
How long to cook carrots and potatoes? About half an hour, and then just take a knife and try to pierce the vegetables - if the knife goes in without much effort, it means they are cooked.
After this, pour cold water over both the eggs and vegetables so that they can be easily peeled.
By the way, if you first hold the onions in cold water and periodically wet the knife in it, your eyes will water less!
Now all the necessary ingredients for the Olivier salad are prepared:
Next, we need to chop each of them (except for the peas). We will cut it very finely and for this you will need a sharp knife.

- raw smoked sausage (200 g);
- wheat kirieshki (200 g);
- canned corn (200 g);

- salt, freshly ground pepper (to taste).
Preparation:
- Peel the sausage from the film and cut into small cubes.
- Wash the cucumbers and trim the stems. Cut into small cubes.
- Wash the tomatoes, remove the core and cut into cubes. Drain off excess juice.
- Wash the green onions and parsley, dry and finely chop.
- Drain marinade from corn.
- Mix sausage, vegetables and herbs in a bowl. Season to taste, add mayonnaise and mix thoroughly. Add the crackers and mix gently again. Sprinkle with freshly ground pepper.

About the cooking method
They work like this:
- A dough is prepared from eggs, starch, kefir, pepper and salt. Then the pancakes are fried, cooled, and cut into fairly wide strips.
- Wash the mushrooms, dry them with a napkin, and cut them into slices. The onions are peeled and cut into half rings. Mushrooms are fried along with onions, seasoned and salted, cooled, and transferred to a dish. Egg pancake noodles are spread over the mushrooms.
- Finely chop the green onions, mix with a spoon of mayonnaise, and spread it on the pancakes.
- Smoked sausage is cut into bars (small ones) and placed on onions.
- Open a can of corn and drain the liquid from it. Corn is mixed with mayonnaise and placed on sausage.
- Then grate the cheese onto a coarse grater and sprinkle it on the puff salad. The dish is decorated with sprigs of greenery.
In this recipe, mayonnaise can be replaced with sour cream. In this case, the dish remains just as satisfying and tasty.
What products does sausage go with in salads?
There are a lot of products compatible with sausage, when the prepared salad can amaze any gourmet and picky person. It’s difficult to list everything, let’s mention simple and well-known ones:
- potatoes, any cabbage, onions and carrots;
- green peas and corn;
- chicken and quail eggs;
- any hard and processed cheese;
- cucumbers and tomatoes;
- wild mushrooms, champignons and oyster mushrooms.

Omelette dough is prepared from a couple of eggs, pancakes are fried, rolled into a roll, cut into pieces slightly less than 1 cm thick. Wash the cabbage, remove the top leaves and set them aside. The rest are chopped and added to the noodles. The sausage is cut into thin strips and added to the rest of the ingredients. The peppers are washed, freed from seeds, and cut into strips.
All ingredients are combined and mixed, adding a little mayonnaise or sour cream to the salad. Line the dish with the set aside leaves of Chinese cabbage and place the appetizer on them. Place slices of tomatoes (large) around. If you are using cherry tomatoes, you can cut them in half.
Preparing the salad
They work like this: first mix the egg pancakes (beat the eggs with starch, add salt to taste). The quantity of ingredients presented in the recipe makes 5 pancakes. They are fried on both sides in vegetable oil, cooled and cut into strips. Grate hard cheese using a medium grater. Carrots are also chopped (tinder on a grater for Korean carrots). How to do it:
Boil potatoes and carrots in their skins, cool and peel.

Place a pan of water on the stove, and in the meantime, cut the peeled, raw carrots into small cubes and then pour them into boiling, salted water:
We also peel the potatoes, cut them into small cubes, and add them to the same pan where the carrots are cooked:
We continue to cook them together, no more than 5 minutes, after boiling.
