- 200 g cold butter
- 200 g cold sour cream 15 – 20%
- 2 tbsp. l. vegetable oil
- a pinch of salt
- 300 g sandwich marmalade with any flavor
- 1 yolk + 1 tbsp. l. milk
- brown or regular sugar for dusting
First, let's prepare the dough for bagels with marmalade. To do this, sift the flour into a deep bowl, add sour cream and salt.
Grate the butter on a coarse grater.
Pour in the vegetable oil and use the hook attachment to knead into a thick dough.
Divide the dough into 4 equal parts (200 g each) and roll them into balls.
Roll out each ball with a rolling pin on a floured surface into a circle with a diameter of 25–30 cm and cut it into 8 identical triangular segments. While you are working with one ball, keep the rest in the refrigerator so that the dough does not heat up.
Place 2 - 3 small slices of marmalade on the base of each triangle. Roll the tubes, starting from the base of the segment and moving to the opposite sharp corner.
Place the bagels with marmalade on a baking sheet covered with parchment, a short distance from each other. Brush them on top with yolk mixed with milk and sprinkle with sugar.
You can use brown sugar instead of regular sugar to give your baked goods a pleasant aroma and taste.
This amount of ingredients makes 2 large baking sheets with 16 bagels each.
Bake in an oven preheated to 180°C for 25 - 30 minutes until noticeably browned.

Step-by-step preparation
- Take the puff pastry dough out to defrost first. And only when the dough has completely melted, unfold it, otherwise it will crack.
- Cut the dough into 2 parts, dust the table with flour (20-50 grams), roll out the dough using a rolling pin. When rolling out puff pastry, follow an important rule: always roll in one direction so that the layers do not stick together. The thinner you roll out the dough, the neater the puff pastries will be.
- Make the dough by cutting the dough into rectangles measuring 10 by 15 cm. You can also make the puff pastries square or triangular.
- On the part of the dough that will be on top, use a sharp knife to make several cuts so that steam can escape during baking.
- Place 1-2 tablespoons of thick jam on the second half of the dough (the part without cuts) and spread it lightly.
- Break a chicken egg (1 piece) into a small bowl and mix it with a fork.
- Using a silicone brush, brush the edges inside the puff pastry with beaten egg to ensure it sticks well.
- Fold the dough in half (cover the base with jam and the edges brushed with egg with the cut piece of dough). Using a fork or any other method convenient for you, seal the edges tightly so that the filling does not leak out.
- Line a baking sheet with parchment paper and transfer the puff pastries onto it. Brush the tops of the puff pastries with beaten egg using a silicone brush.
- Place the jam puffs in an oven preheated to 200 degrees for 20-25 minutes.
- Place the finished risen and browned puff pastry buns with jam on a platter or large plate.

Useful tips
When you take the finished dough out of the freezer, it needs to be uncovered to warm up. At the same time, we advise you to flour both the work surface and the dough itself. In the first case, it will not stick, and in the second, it will not weather.
If your jam is too liquid and you are worried that this will cause problems, we recommend mixing it with chopped nuts or breadcrumbs. Starch can also help. In any case, the filling must be prepared first so that the components have time to swell and the mass becomes thicker.
Baking with puff pastry is always a winning option. It's easy to prepare, and the result is very tasty. The dough is crispy and at the same time very soft, and its aroma seems to be able to drive you crazy!
