- Puff pastry must be thawed in advance.
On average, a semi-finished product weighing 500 g may require 2 hours. You can transfer the frozen dough from the freezer to the refrigerator in the evening and then by the morning it will be ready for further use. This is the most gentle defrosting method, which allows you to preserve the quality of the semi-finished product. Place the thawed dough on a floured table and sprinkle flour on top. It should be rolled out to a thickness of 3-4 mm. This should be done by always moving the rolling pin in one direction: only away from you or only towards you. This precaution is necessary to preserve the flaky texture of the dough. - Next, you should cut the cake into squares measuring 10 by 10 cm. This should also be done carefully so as not to pull the dough. A round pizza cutter or kitchen scissors work best. If you don’t have anything at hand other than a regular knife, then they don’t need to cut, but press the dough.
- After this, fold one square in half diagonally. Then use scissors to make two cuts parallel to the short sides of the triangle, 1 cm away from the edge. The cuts should not be connected.
- After this, the square must be returned to its original state.
- Place the separated strips crosswise.
- Place a teaspoon of apricot jam in the center of the resulting figure.
- In the same way, you need to form and fill the remaining squares of puff pastry with filling. The resulting blanks must be carefully transferred to a baking sheet lined with parchment. You should leave some space between the puffs, as the dough will increase significantly in volume during baking.
- Bake at 180 degrees for 15-20 minutes. During this time, the dough will rise well and lightly brown.
- The puff pastries must be transferred to a plate until they cool completely. After baking, the filling will be in the cavity. If desired, you can add another spoonful of jam, crushed nuts or pieces of fruit from the jam. Sprinkle the cooled baked goods with powdered sugar. Enjoy the treat with the whole family and serve it with tea or coffee. If you are watching your figure, then remember that the calorie content of jam puffs is quite high and is about 400 Kcal per 100 g of finished baked goods.
Step 1: prepare the dough.
Thaw the finished puff pastry (let it stand for 15-20 minutes at room temperature) and cut each of the four plates into 4 approximately equal parts. As a result, we will have 16 layers. Then, pour a little flour onto the board and distribute it evenly over the entire surface with your hand, and also lightly dust the plate of dough that we are going to roll out. Using a rolling pin, roll each sliced plate slightly in one direction. We do this with all the puff pastry sheets.
Step 2: make puff pastries.
The procedure is described for making one puff pastry; all others are made in the same way. Beat the egg into a bowl, but first you need to separate the yolk from the white; this can be done by hand or using a separator. What we need is protein. Dip a brush for lubrication into the egg white and gently brush the edges of the puff pastry. Scoop up the jam with a tablespoon and place it on the puff pastry, spreading it a little over the surface. Cover the jam puff with a loose plate, stretching and pressing the edges a little so that the dough sticks together well. We secure the edges of the puff pastry with a fork (as on chebureks). In this way we make 8 layers.
Step 3: bake the puff pastries.
Using the same brush, generously grease the kitchen table with vegetable oil and carefully place the finished puff pastries directly on it. Let them soak for 1.5-2 hours at room temperature. After the time has passed, turn on the oven and set the temperature to 200 degrees
.
Grease the baking tray with a brush with the same vegetable oil and carefully transfer our future pies onto it. Place the baking sheet with the puff pastries into the preheated oven and bake them for 15-20 minutes
.
Step 4: serve.
Remove the baking sheet with the prepared puff pastries from the oven, carefully transfer them to a tray and sprinkle with powdered sugar.
That's it, the jam puffs are ready - serve. Bon appetit! Jam can be replaced with confiture, for example cherry.
The recipe contains the proportions of ingredients for two servings only. To make more puff pastries, double or triple the ingredients accordingly.

Baking with puff pastry - recipes
Puff pastry baked goods prepared by a skilled housewife turn out much tastier than pastries, but such products require time and skill. Puff pastry is divided into yeast and non-yeast, the latter rises due to steam. Products made with yeast can have up to 100 layers; flour for them is used with gluten.

How to bake puff pastry with jam from ready-made puff pastry
- The dough must be removed from the freezer in advance so that it has time to completely melt. To prevent its surface from drying out during defrosting, cover the workpiece with cling film or a regular plastic bag. If this is not done, a thin dry crust will form on the puff pastry, it will crack when rolled out, and the finished puff pastries will look scaly and unappetizing.
- When the dough has completely melted, roll it out. This should be done in one direction to avoid damaging the layers. From the square of the workpiece we should get a rectangle, the width of which will be equal to the side of the square, and the length will increase by about 1.5 times. The thickness of the layer should be about 2-3 mm.
- Cut the rectangle into 4 strips, as in the photo below. Each strip is a future puff pastry. So from the two squares of dough that we initially had, we will get 8 puff pastries.
- Any jam is suitable for the filling, but the only condition is that it must be thick. However, even if you took jam, when cooked in the oven it will become much thinner and, most likely, will leak out of the puff pastry. Therefore, we will add starch to the jam, which will bind the filling when heated, making it thick.
- Visually divide the strip of dough into two approximately equal halves. We put a spoonful of jam on one, and on the second we make cuts diagonally, right through, but do not bring them to the edges. How to properly make a puff pastry can be easily understood from the photo.
- All we have to do is wrap our puff pastries. Fold the strip in half - cover the half with the cuts with the part on which there is jam. First we press the edges with our fingers (lightly, don’t press too hard), and then we take a fork and press them down well with the cloves. First we fasten in one direction, and then in the other. This way we get a beautiful, but at the same time tightly sealed edge. The jam will probably not leak out of such puffs.
- Place the puff pastries on a baking sheet lined with a silicone mat or baking paper. Bake our dessert in an oven preheated to 200 degrees for 20-30 minutes, or until light golden brown. Here you should be guided by the power of your oven, since they are all different.
- While the puff pastries are baking, melt the butter in the microwave or over low heat. Add granulated sugar to the resulting hot mass. Stir until all the sweet crystals are completely dissolved.
- Lubricate the prepared hot puff pastries with the resulting mixture. To do this, it is convenient to use a culinary silicone brush. If you don’t have one, you can simply pour the prepared butter-sugar mixture over the puff pastries from a spoon.
Try to bake such a dessert at least once, and after that you will always have a package of puff pastry in the freezer, and a jar of aromatic jam in the refrigerator so that you can enjoy such a delicious treat at any time.
Bon appetit!
