Quick pie with fish and cheese
For a quick pie you need hake fish, the meat of which is pre-boiled. With the addition of eggs, cheese and mayonnaise, the pie will turn out juicy and cook quite quickly.
Ingredients:
- 500 g puff pastry without yeast;
- 2 eggs;
- 1 onion;
- 500 g hake fish fillet;
- 3 tbsp. l. mayonnaise;
- 2.5 tbsp. l. vegetable oil;
- 1 yolk;
- 40 g hard cheese;
- 4 tbsp. l. tomato sauce;
- salt to taste.
Preparation
The dough is defrosted at room temperature.
The hake is boiled in salted water for 15 minutes, then cooled, the bones are removed and the skin is removed.
The fillet is cut into pieces.
The eggs are hard-boiled, cooled in cold water, peeled and cut into cubes.
Peel the onions and carrots and cut them into cubes, then sauté in oil until soft.
The dough is divided into two equal parts and then rolled out to form a rectangle.
The surface of the layer is smeared with tomato sauce or ketchup, fish, egg, onion and carrots are laid on top.

The recipe includes the following ingredients:
- peaches: two or three pieces;
- cream cottage cheese (60 g, room temperature);
- low-fat (10-15%) sour cream - half a glass;
- brown sugar (2-3 tablespoons is enough);
- sheet of defrosted puff pastry.
Let's start manufacturing.
- Preheat the oven to 200 degrees.
- Roll out the dough (you need a thickness of 2 mm and sides 25 by 20 cm).

Before you start baking puff pastry, you need to defrost it at room temperature: at higher temperatures it will spread.
Open canned fish pie in the oven
Puff pastry with preserves is a delicious open-faced pie with a creamy sauce made from leeks and dried herbs.
Compound:
- 500 g puff pastry without yeast;
- 250 g leeks;
- 1 can (160 g) canned fish (in its own juice);
- 4 things. eggs;
- 1 bunch of fresh herbs - onion, parsley, dill;
- 30 g butter;
- 1 tsp. dried herbs (Italian);
- 1-2 tsp. Sahara;
- 2 tbsp. l. vegetable oil;
- 120 ml. cream (20%);
- 1 tbsp. l. sesame;
- salt and pepper to taste.
Preparation:
The finished puff pastry is removed from the packaging and then defrosted. It is not recommended to defrost puff pastry in the microwave, as its structure is disrupted. When defrosting yeast dough in a microwave oven, the yeast dies, the layers are broken and the baked goods will not rise.
It must be defrosted gradually, without sudden changes in temperature, first in the refrigerator and then at room temperature. It should be borne in mind that puff pastry contains a large amount of butter, which should remain cooled and not melted.
The leek is washed under running cold water, cut into half rings, sprinkled with sugar and a mixture of dried herbs, then mixed and fried in butter until soft for 10-15 minutes, then cooled.
Eggs (3 pcs.) are dipped in hot water and hard-boiled for 10-15 minutes. Then the boiling water is drained and the boiled eggs are poured with cold water. As soon as the water becomes warm, drain it and fill it with cold water again, after which they are peeled and cut into cubes or chopped on a coarse grater.
Washed and dried fresh herbs are chopped and mixed with leeks and eggs, then canned fish, softened with a fork, is added. The filling is seasoned with spices, mixed and salted to taste.
To fill, combine cream with beaten raw egg, add salt and pepper.
The table is sprinkled with flour and the dough is rolled out on it into a rectangular layer, part of the layer is cut off to form the top of the pie, the rest is transferred to a baking sheet, raising the edges along the sides, the filling is laid out, then poured with creamy sauce, and 2-3 tbsp. l. The sauce is left to grease the pie.
The rest of the dough is divided into strips and placed on top of the filling. Grease the pie with filling, sprinkle with sesame seeds and bake in an oven preheated to 180 C for 35-40 minutes.

Puff pastry pie with cherries will require certain products:
- 150 - 200 grams of cherries;
- puff pastry (without yeast) - one pack;
- cane sugar (one tablespoon);
- half a table spoons of butter;
- salt (on the tip of a knife);
- dried rosemary;
- cinnamon.

- Wash the cherries and remove the pits.

Fish pie made from puff pastry and saury is an excellent dinner option for a large family.
Compound:
- 250 ml milk;
- a pinch of salt;
- 1 tbsp. l. Sahara;
- 0.5 packets of yeast;
- 40 ml vegetable oil;
- 2.5-3 cups flour
- 200 g butter
- For filling:
- 300 g potatoes;
- 2 pcs. Luke;
- 1 can of saury;
- 30 g butter.
Making saury pie.
The milk is heated until warm, after which yeast, sugar and salt are added.
The flour is sifted and added to the milk, kneading the dough, after which it is thinly rolled out, softened butter spread on it, folded into a book, put into a bag and sent to the refrigerator for 2 hours.
Then they roll it out again, fold it into a book again and put it in the refrigerator. The procedure is repeated 2-3 more times.
The onion is cut into rings, the bones are removed from the saury and divided into pieces. The dough is divided into two parts, each of which is rolled out to 1 cm thick. One layer is transferred to the bottom of the mold.
The potatoes are thinly cut into rings and fanned out onto a layer, onions are spread on top, after which they are salted and laid out in a layer of saury, and sprinkled with butter crumbs, thanks to which the filling will be more juicy and aromatic.
Cover the top of the pie with a second layer, brush with egg and bake in the oven for 45 minutes at 180 C.
Layered pie with apples and raisins without sugar
Ingredients:
- Puff pastry can be prepared according to this budget recipe: water and vegetable oil - one glass each, flour - 3-4 glasses, a pinch of salt.
- apples – 7-8 pieces.

Cooking method:
- Pour vegetable oil into the water, add salt and add flour. Knead the dough like you would for dumplings and roll it into a rectangle with a rolling pin. - 600 g white fish fillet;
- 1 kg yeast puff pastry;
- 3 pcs. onions;
- 100 g rice;
- 1 tbsp. l. flour;
- 1 PC. egg;
- salt, ground black pepper;
- 2 tbsp. l. vegetable oil;
- parsley.
Preparation:
Rice is washed several times in cool water to remove starch. Then pour in cold water in a ratio of 1:2 - 200 ml of water per 100 g of rice, salt to taste, then cover with a lid and cook over low heat until fully cooked.
The fish fillet is cut into pieces, salt and pepper to taste. The onion is peeled, washed and finely chopped, then fried in vegetable oil until golden brown, and flour is added at the end.
The dough is defrosted, then divided into two pieces. Most of it is rolled out and placed on a baking sheet.
Place boiled rice on the layer in an even layer, a piece of fish on top, sprinkle with finely chopped parsley and finish with a layer of onion. Then the layers are repeated.
The top layer of the pie is decorated with strips of dough, making a lattice out of them.

We use fresh berries
When fresh berries are in season, it would be a shame not to use them for baking. The recipe for puff pastry pie with strawberries (not even a pie, but a real cake) is not at all complicated.
To implement it, you will need:
- half a kilogram pack of puff pastry;
- a glass of heavy (at least 30%) cream;
- strawberries (two and a half glasses);
- condensed milk (a whole can).
We will proceed as follows.
- On a floured work surface, roll out two sheets of dough (up to 2 mm thick).
- We divide each into 3-4 squares.
- We place special paper on the bottom of the baking sheet and bake each square on it for 7 to 10 minutes.
- Using a mixer, turn the cream into thick sour cream. Continue beating the future cream, adding condensed milk in a thin stream.
- Place the first cake layer on a flat plate and brush with the resulting cream. Top with a layer of strawberries, then again dough and cream.
- We alternate layers until there are no cakes or berries left.

How to make salmon pie
The salmon pie turns out juicy and tasty, since it is the fresh red fish that provides the necessary amount of fat to the filling. The resulting baked goods are nourishing, tasty and aromatic.
Compound:
- 500 g puff pastry;
- 450 g salmon;
- 2-3 onions;
- salt and spices to taste;
- olive oil.
Preparation:
Chop the onion into pieces and fry in olive oil until transparent over medium heat.
Red fish fillets are cut into 1 cm cubes, then fried with onions, and finally salted and seasoned with spices.
The sheet of dough is placed on the mold. It is not necessary to lubricate it with oil, since it contains a sufficient amount of fat, which is released onto the baking sheet during the baking process.

Ingredients : 500 grams of meat or prepared minced meat, 2.5 cups of flour, three-quarters of a cup of fresh milk, 1 egg, a pinch of baking powder, 150 grams of butter.
Cooking method
Grind the butter and flour into crumbs, add milk mixed with baking powder and a lightly beaten egg to the resulting mass. Salt everything and form a ball of dough. You can’t knead it, you just need to consolidate it into a homogeneous mass and leave for ten minutes.
After that, the dough must be divided into two equal parts, rolled out and greased with melted butter. Next, the dough is rolled into a roll, from which a bun is made, which should cool in the refrigerator for about half an hour.
At this time, the filling is being prepared. Grind the meat in a meat grinder, fry with onions in butter, add salt and pepper to taste.
Next, you need to take out the dough, roll it out thinly, and using a glass, make identical round pieces for the pies, in the middle of which put the minced meat. Carefully pinch the edges of the pies, brush them with egg on top and place in the oven preheated to 180 degrees for 20-30 minutes.
