  • plums, 500 g;
  • sour cream, 125 g (about half a glass);
  • eggs, 3 pieces;
  • flour, 240-260 g (heaped glass);
  • soda, 1 tsp;
  • citric acid, 2 g;
  • sunflower oil, 2-3 tbsp. l.

To make the pie aromatic, it is recommended to add cinnamon to the dough. If you don't like it, replace the spice with vanilla. However, even without aromatic additives the pie turns out delicious. The algorithm for its preparation is similar to the principles by which apple charlotte is prepared.

Beat eggs with sugar until fluffy.

To make the process go faster, add half a spoonful of hot water to the ingredients.

Add sour cream and knead the dough. Then pour in the oil and stir again.

Add flour, citric acid and soda. Whisk the dough until smooth. The consistency should be similar to pancake batter, maybe a little denser.


Cut clean plums into halves and remove the pits.

Line a mold or frying pan with parchment and grease it with oil. Pour half the dough and smooth it out.

Place the plum halves, cut side up. If you intend to flavor your work of culinary art, sprinkle the fruit with cinnamon.

Spread the second half of the dough on top. Leave gaps here and there so that the plums “peek out” from the dough. This will make the pie look more beautiful.

  • half a glass of flour;

  • 1 tbsp. l. breadcrumbs;
  • 2 tbsp. l. vegetable oil (ideally olive).

It is better to take fine-grained cottage cheese. If you don’t find one, first rub the fermented milk product through a sieve or grind it through a meat grinder.

Step by step your actions will be as follows:

  1. Beat eggs with sugar with a mixer. The final consistency should be creamy.
  2. Add the cottage cheese and use the mixer again. Beat until the mixture becomes smooth.
  3. Add oil; this time it is enough to mix the dough mixture with a spoon or whisk. But the oil should be distributed evenly over it so that there are no streaks left.
  4. Combine flour with baking powder and gradually add the mixture into the previous mixture, stirring constantly. Knead a fairly dense, but not tight dough.
  5. Grease the baking dish with butter and sprinkle with breadcrumbs - this will make it easier to remove the pie. At the same time, crackers will not affect the taste of the dessert.
  6. Place the dough in the mold and make sides out of it. Distribute the plum halves over the bottom of the future pie with their backs facing up. Half an hour in the oven (set the temperature to 170 degrees) - and the addition to your morning coffee is ready.

Plum pie: shortcrust pastry recipe


For many people, a delicacy is not a joy if its base is not shortbread dough. For you personally, here is another version of plum pie.

You will need:

  • drain - 700 g;
  • sugar - 1 glass;
  • high-quality butter - 150 g;
  • flour - 2 cups;
  • one egg;
  • starch 3 tsp. (no special frills required, regular potato starch will do);
  • cinnamon 1 tsp.

Simple preparation:

  1. Combine softened butter with an egg and half a glass of sugar. If the butter is unsalted, season the mixture with a pinch of salt. Add flour and knead the dough - it should be quite elastic and should not stick to your palms.
  2. Wrap the dough in cling film and put it in the refrigerator for 20 minutes. While it's cooling, prepare the fruit - you'll need plum halves.
  3. Roll out a third of the dough into a thin layer. From it you can cut figures to decorate the top of the pie (stars, hearts, etc.) or strips - we will use them to decorate a wicker “lid” for dessert at the end of cooking.
  4. Use the rest of the dough to form a deep basket with high sides. It needs to be sprinkled evenly, but not too much, with starch. This step will prevent the dough from becoming soggy due to the fruit juices. And at the same time it will help thicken the juice - and it will not drain from the pie slices after cutting.
  5. Place the plum halves on the bottom of the “basket”, cut side up. Sprinkle the fruit with the remaining sugar. Half a glass will definitely be enough, even if you are generous with the filling. But if the plums are too sour, the proportion of sugar can be increased.
  6. Crush the fruit with cinnamon. Don't overdo it, this spice has a rather strong aroma.
  7. Make a mesh of strips of dough over the structure. Or arrange the prepared figures according to your taste. Aesthetes can coat the stripes/figures with egg, then the decoration will become shiny and rosy.
  8. According to this recipe, the plum pie needs to stay in the oven for 30 minutes. And the oven should be preheated to 200-220 degrees. It comes out of the mold easily. But keep in mind: the filling is juicy, and the shortbread dough is fragile. So it's better to wait until the cake has cooled completely. Then you will remove it from the mold and transfer it to a dish without compromising its appearance.

If you are baking a pie from shortcrust pastry, it is not necessary to grease the pan with fat or oil - the base itself contains enough lubricant. You just need to sprinkle the bowl with flour to make it easier to take out the dessert.

Whatever recipe you choose - with or without oil, with kefir or sour cream, a quick recipe or one that requires a lot of trouble - you can be sure that the result will please you. Plum pie just can't go wrong! Moreover, even novice cooks can handle its preparation. And if you are inspired to make such a pie “out of season,” look for frozen fruits in supermarkets; they also look worthy in dessert. Just defrost the fruits in a colander. However, when frozen, ice crystals grow on them, which give the fruit unnecessary wateriness and the pie - lethargy.

A very good recipe using kefir, which will especially appeal to those who don’t like sugary-sweet dishes.

The list of ingredients includes:

  • sugar - 200 g;
  • kefir - 200 ml;
  • vegetable oil - 150 ml (regular, unrefined sunflower oil will do);
  • eggs, 3 pieces;
  • flour (wheat, premium) - 320 g;
  • plums - 500 g;
  • vanilla sugar and baking powder - 1 tsp each.

Prepare the plums in the usual way - they need to be washed, dried (or wiped), cut into halves, and the pit removed. Additional work includes sifting flour and heating the oven to 180°.

Whisk sugar and eggs in a bowl. There is no need to try hard, just enough so that the mass does not separate. Add butter, kefir, vanilla sugar to it. Knead until you are satisfied with the appearance of the dough piece. Add flour in portions, little by little. You need to stir the dough after each addition. It should be brought to the consistency of thick, as they used to say, “bazaar” sour cream.

The amount of flour can vary - it depends on the size of the eggs and the fat content of kefir. So listen to your culinary instincts during the kneading process. It develops quickly even for a novice cook.

When the dough is on the verge of being ready, add baking powder and mix the mass thoroughly again. Prepare the mold and pour the dough into it. Place the fruit on top and immediately return the bowl to the oven. Baking at 180 Celsius will take 40-45 minutes. However, the time can vary within a wider range; it depends on the diameter of the mold: the smaller it is, the thicker the cake and the longer it needs to be kept in the oven. So periodically check the degree of readiness with a toothpick. Keep in mind that the dough is wetter next to the fruit; pierce the pie closer to the edge or to the center.

After cooling, sprinkle the baked goods with powdered sugar, it will become more aromatic and tastier.
