7 original appetizers for the holiday table

Mushrooms with ham

You can whip up snacks not only at the beginning of some important celebration, but also when guests have simply gathered to sit and have a pleasant conversation with a glass of wine or a glass of beer. Such a pastime does not involve a large number of dishes, but light and pleasant snacks are a must. They will definitely brighten up your evening.

For example, you can cook mushrooms with ham. This is a delicious and original quick snack recipe. The following ingredients are needed:

  • 150 g mushrooms;
  • 1 teaspoon olive oil;
  • 50 g bacon;
  • 50 ml sherry;
  • a bunch of parsley.

Champignons are the best choice for mushrooms. They need to be washed and carefully dried with paper napkins so that the aroma lasts as long as possible. Finely chop the mushrooms and place them in a frying pan with heated olive oil. It is recommended to take high-grade oil so that it does not give off an unpleasant odor, which can affect the overall impression of the dish. Fry ham or bacon pieces.

Reduce heat, add sherry and add mushrooms to the pan. The champignons need to be fried for just a few minutes. Other wild mushrooms can take much longer to cook. You can season this quick appetizer with pepper or parsley.

Spicy shrimp

An exclusive and savory quick appetizer that is guaranteed to please all guests is spicy shrimp with garlic and lemon. To prepare them you will need the following ingredients:

  • 500 g shrimp;
  • 2 tablespoons olive oil;
  • teaspoon ground red pepper;
  • 4 cloves of garlic;
  • 2 teaspoons dry spices;
  • 1 lemon;
  • salt, parsley and dill - to taste.

Heat olive oil in a large frying pan over medium heat. We lay out pre-peeled shrimp, as well as pepper and chopped garlic. Add spices and salt to taste.

Fast pizza

If you have a lot of children visiting, you can treat them to pizza, which almost all kids adore. To do this, it is not at all necessary to cook it in the oven; you can do it in a frying pan. Moreover, the dish will turn out to be lean, so it will be healthy even for the little ones. As you can see in the photo, a simple quick snack turns out rosy and appetizing.

For pizza we need the following components:

  • 400 g flour;
  • 15 g yeast;
  • 230 ml water;

  • 2 tablespoons of tomato paste;
  • 500 g tomatoes;
  • 300 g hard cheese;
  • 1 tablespoon dry oregano;
  • 1 tablespoon basil;
  • teaspoon salt.

So, let's quickly prepare a snack for the table. To make the dough, mix water, flour, yeast and salt in a container. Knead the dough - it should come out quite dense, but not very steep. Place it in a warm place for a while to let it steep thoroughly.

Rinse the tomatoes thoroughly under running water and cut into small circles, and grate the hard cheese. The dough will approximately double in size in a warm place, usually this happens quite quickly. Divide it into several parts and roll each lump into a thin layer the size of a frying pan. We will cook pizza in it.

Pour olive oil into a heated frying pan, lay out a layer of dough and fry on both sides for about a minute and a half. Then brush with tomato paste and sprinkle with herbs. Place tomatoes on top, sprinkle grated cheese and leave on fire for a few more minutes. Immediately after this, such a simple quick appetizer can be served.

Cut the bread into neat slices; it is preferable to use black bread for this sandwich. Layer cheese on top, then tomato, and finally basil.

Be sure to place another piece of cheese on the basil and cover with a second slice of bread. Dry the sandwich on both sides in a frying pan. Please note that there is no need to use oil at all, it will only make the dish excessively greasy. Dry the sandwich until the bread acquires its characteristic appetizing brownish-golden color.

That's all - the sandwich is ready, it can be served hot. This is a very tasty and satisfying quick snack made from simple ingredients.

Snacks for tea

Temporarily, for a period of no longer than six months from the date of publication of this decree, the maximum selling price of the highest grade black long tea from foreign countries is set at no more than 30 rubles, including in this price an excise tax in the amount determined by the procedure specified in column 4 of the appendix to Art. 1 designated decree for foreign premium black tea.

Chairman of the Council of People's Commissars V. Ulyanov (Lenin). Decree on the temporary establishment of the maximum selling price for the highest grade of black long tea from abroad. 09/19/1918. Has nothing to do with the text

As for today's column, I decided to devote it not so much to tea, but to snacks for tea. Firstly, this is due to the fact that over the past month I have been paying quite a lot of attention to the Russian tea tradition - and Russian tea drinking cannot be imagined without abundant snacks. And secondly, writing about food is almost as pleasant as eating that very food.

When talking about tea snacks, I will not list recipes and rules for preparing various dishes - I will only list the dishes themselves, dividing them into “thematic” groups - according to their role on the tea table. Well, if one of the appetizers interests you so much that you decide to cook it and try it, the culinary Internet is at your service. You are sure to find a recipe for each of the dishes mentioned below.

So, all tea snacks can be divided into four groups.

The first group of snacks (let's call them hearty) includes dishes that you can eat with tea, and in addition to tea. First of all, of course, these are pies and pies with substantial fillings: meat, liver, eggs, cabbage, fish, rice, mushrooms, potatoes (what disgusting), cottage cheese. And, naturally, with combinations of these fillings: with meat and mushrooms, rice and eggs, etc. In principle, bagels can be classified as hearty fillings - if you spread them with butter, then they are a very serious snack. And, of course, filled pancakes are a hearty snack - if the filling is meat, chicken (with mushrooms and horseradish - delicious!), vegetable mixtures and other amenities.

The second group of snacks (let’s call them light) consists of dishes that can be used to alternate between hearty snacks and (which is very important) that are convenient to eat. Moreover, it is convenient to eat not only at the table. If tea drinking is informal, then with some light snack you can walk around the room or stand by the window, immersed in thoughts about the fate of the Motherland. Light snacks, first of all, include sandwiches and sandwiches - they are the most pleasant to eat during a conversation - they do not distract (unlike pancakes, for example, which need to be consumed with concentration), and maintain nutritional tone. Sandwiches and sandwiches are good with lightly salted red fish (trout is best), butter, cottage cheese, cucumbers, sliced meats and cheeses, sprats, pates - in short, with everything that is usually spread on sandwiches and stuffed into sandwiches.

The third group of snacks (we'll call them sweet or savory) consists, of course, of sweets and delicacies. These appetizers, as a rule, are served after hearty and light ones - and after a thorough pause, during which guests take a break from previous meals and thoughtfully talk, imitating the Russian landowners of the mid-19th century, discussing the merits of pies and expressing their thoughts on a variety of global issues. Sweet (delicious) snacks include any sweet pastries, chocolate, jam, honey, nuts, pancakes with sweet fillings (the combination of lingonberry jam with whipped cream is incredibly tasty).

And finally, the fourth group of snacks (fresh snacks) are similar to light snacks - only they “dilute” not filling, but sweet snacks. When guests can no longer eat pancakes with jam, they (pancakes with jam) can be successfully replaced with fresh or canned berries or fruits. Better, of course, fresh. Apples, pears, grapes, slices of watermelon and melon, peaches, apricots, strawberries, wild strawberries, raspberries - in a word, anything. You can - with whipped cream.

The order in which all of the listed snacks are served is obvious. It all starts, of course, with serving hearty and light snacks. After the guests have a snack (this means they are full for the first time), you should take a pause - satiety is conducive to a leisurely conversation, and such a pause will give the guests pleasure and provide rest. The duration of the pause is arbitrary, depending on the circumstances. An experienced owner will easily sense the onset of the psychological moment to serve the second part of the appetizers - sweet and fresh.

Ideally, by this time there should be no more filling snacks on the table - if they haven’t been eaten, then just put them aside. But light snacks should be left (or even supplemented) - they go well with sweet snacks. In principle, it is this set of snacks (light, sweet, fresh) that should remain on the table until the end of tea. Well, if any of the guests want “those cool pies with cabbage” again, just serve them.

Here. From all of the above, it may seem that the purpose of drinking tea with snacks is to overeat. This is, of course, not at all true. Gluttony is a quality inherent in a particular person, and not in tea drinking. And if the culture of your guests is such that they simply overeat, these are bad guests (although often the hosts are flattered by this behavior of the guests - but that’s who likes it). Good guests eat with pleasure and talk with pleasure, and even if, when leaving, they complain that now they will starve for two days, their words sound irony, not deep satisfaction.

Bon appetit.

Tartlets with caviar

If we return to the topic of gourmet ingredients, almost no celebration is complete without caviar. You can not just make ordinary sandwiches with caviar and butter, but also implement some original recipe.

For example, serve tartlets with halibut caviar in cream cheese cream to your guests. To prepare this snack you will need:

  • 70 g fish caviar;
  • 150 g processed cheese;
  • 200 ml cream;
  • 1 tablespoon lemon juice;
  • 1 lemon;
  • 6 tartlets;
  • sprigs of parsley and dill - for decoration.

It is worth noting that halibut caviar is a relatively inexpensive black caviar, which is appreciated by many chefs. It is more accessible than black caviar of other fish species. It can often be found both on sandwiches and as part of the filling for tartlets. These sandwiches in cheese cream can conquer even the most picky guest. But get ready: your friends will immediately start asking you for their recipe.

First you need to mix amber cheese and freshly squeezed lemon juice in a blender until smooth. Next, use a mixer to whip the cream and gradually add caviar into it. Mix both mixtures thoroughly at minimum speed.

After this, place a teaspoon of the resulting mass into each tartlet. Before serving, decorate the dish with herbs and a slice of lemon. True, you don’t have to do this, since black caviar will give the appetizers an attractive and, even more so, sophisticated look. Alternatively, the tartlets can be replaced with small buns, which are cut and filled with filling.

Snack for wine

As a rule, wine needs some kind of light, pleasant and delicious appetizer. Like many varieties of wine, it comes from Greece. This recipe makes not only a very tasty, but also a healthy snack. It will suit almost any wine - white, red, semi-sweet and dry. So when friends come to visit you, be sure to prepare it to spend time with pleasure.

For five servings of this snack you will need:

  • 5 cherry tomatoes;
  • 30 g shrimp;
  • 100 g olives;
  • 50 g mayonnaise;
  • a few peppercorns.

Original recipe

For this appetizer, be sure to take small cherry tomatoes: they have a pleasant sweetness that will give the dish a special zest. In addition, they will look very attractive. But large fruits are not suitable.

Each tomato needs to be washed thoroughly and then cut into small circles. We put it on a small dish, on which we will serve the appetizer on the table. Please note that all pieces must lie separately from each other. Squeeze a little olive mayonnaise onto a piece of tomato, and put a green olive on top, from which you need to remove the pit in advance. We carefully and beautifully place the shrimp around the olives. Sprinkle all this generously with allspice.

By the way, if you don’t boil the shrimp, but fry it, the taste of this dish will change dramatically. Before serving, each sandwich can be placed on a skewer to make it easier for guests to take it.

Fruity freshness

Fruit and berry snacks are, naturally, fruits and berries. Fresh and dried. The tradition of drinking tea with fresh fruits and berries is widespread (this is how they drank tea in Russia - remember, on the table of Kustodiev’s “Merchant’s Wife” there are apples, grapes, and watermelon). But tea with dried fruits is, rather, an Eastern custom, because the East has always surpassed the West in the variety and quality of dried and dried fruits.

Apples, pears, grapes, slices of watermelon and melon, peaches, apricots, strawberries, wild strawberries, raspberries (as well as fresh fruit and berry desserts, including ice cream) go well with tea. But only with tea as light and fresh as they themselves.

Good green teas, including jasmine, weakly fermented oolongs (mainland Tieguanyin, Taiwanese Lishan, etc.) and the best Darjeelings, aromatic and light, will be excellent to drink with fresh fruits and berries - but under one condition. There should be few snacks, they should not dominate the tea table - their role in this case is not to satiate, but to highlight the tea most advantageously.

Teas with dried fruits - dried apricots, dates, dried pears, dried melon, dried kumquat, candied olives or dried plums with different aromas - are no less refined, but more rich. These are pu-erhs, highly fermented and aged oolongs, Taiwanese red (black) teas and some, especially high-quality, varieties of Assam and Ceylon tea. Dried fruits are a universal tea snack: light, dietary, and perfectly emphasizing the taste of tea. And if you want to pay attention specifically to the drink, without hesitation, serve dried fruits with it.

Crab roll

Place the resulting crab mixture on the pita bread and roll the pita bread into a roll shape. Before serving, cut the appetizer into small pieces about 3 cm thick.
