Today we have prepared for you a wide variety of recipes for children's cupcakes, created from various ingredients.

About cupcakes

This dessert is a confectionery product made from butter dough, baked in molds with high sides. Baking powder or soda must be added to this type of dough. In addition, flour, sugar, eggs, butter, and various flavoring and aromatic additives are added to it. Thanks to the content of eggs in the dough, it acquires a velvety structure; butter and sugar give the finished product softness.

There are several options for kneading this dough depending on the recipe. Please note: when preparing, it is necessary to observe certain technological conditions - the order of adding products when creating the dough, all kneaded products must be at the same (room) temperature. Products are baked at moderate temperatures in the oven for quite a long time. If the crust turns golden brown and the center is still raw, cover the muffins with foil and bake until done. We check readiness in an old but effective way: using a wooden splinter or a toothpick.

carrot cake

Confectionery products prepared according to this recipe are distinguished not only by their taste and benefits, but also by their beautiful appearance. It will bring special joy to small children. The following components should be prepared:

  • 2 large, very juicy carrots (about 200 g);
  • 100 g peeled hazelnuts (raw);
  • a couple of eggs;
  • about 60 grams of flour (depending on quality);
  • big lemon;
  • tsp with a heap of baking powder;
  • 4 tbsp. l. molasses, maple syrup or honey;
  • powdered sugar;
  • a little ground cardamom;
  • olive oil for lubrication;
  • small carrots with a tail (for serving);
  • salt.

Step by step process

We prepare children's cupcakes as follows:

  1. Chop the nuts into fine crumbs using a knife, and grate the carrots on a fine grater.
  2. Wash the lemon thoroughly and remove the zest from it using a grater. Squeeze the juice out of the lemon itself. Separate the whites from the yolks, grind the latter with honey or syrup, add nuts, carrots and lemon juice to them, mix.
  3. Sift the flour and cardamom into a separate container, add the yolk mixture and knead the dough. Beat the whites with the addition of salt into a stable foam and very carefully fold them into the dough.
  4. Grease a mold intended for baking muffins with butter and place parchment on the bottom. Place the dough in the molds and place in an oven preheated to 160°C for 25 minutes. If you want to make one large cake, the baking time will be about 40 minutes.
  5. After baking the products, let them cool completely, this will take about one hour. Having previously separated the baked goods from the walls, carefully remove them. If you used portion molds, serve the baby cake directly into them.
  6. Wash and dry the prepared carrots with tails in advance, and place them on the surface of the cupcakes. Using a fine strainer, sprinkle the baked goods with powdered sugar and serve.
  7. If you know how to work with marzipan, then you can use marzipan carrots for decoration.

Option 3: Carrot muffins for kids

Carrot muffins are very similar to those made in kindergarten. If children do not like raisins, they can be omitted from the recipe. And carrots will give baked goods a pleasant golden hue, so neither adults nor children will be able to refuse muffins.

Ingredients

:

  • 220 gr. wheat flour;
  • 165-170 gr. butter;
  • two eggs;
  • 150 gr. granulated sugar;
  • one carrot;
  • a pinch of salt;
  • a pinch of soda;
  • vanilla essence;
  • raisins (optional).

How to cook

Remove the butter from the refrigerator in advance so that it becomes soft. Cut it into small pieces to speed up the thawing process.

Place the soft butter in a deep bowl, add the entire portion of granulated sugar and beat with a blender for 8-10 minutes.

Pour hot water over the raisins for 5-7 minutes, then drain the water, remove the dry tails and place the raisins on a towel to absorb excess moisture.

Peel, wash and grate the carrots using a grater with the smallest holes.

Salt the whipped butter, add soda, 2 drops of vanilla essence. Place carrots and eggs into a bowl. Blend with a blender for about a minute

Sift the flour through a sieve so that the muffins are airy and soft. Mix with raisins and add to the first mixture. Mix the dough thoroughly with a spoon until no pure flour remains.

Grease muffin tins with butter. Fill them with dough, but not all the way to the top, as the cupcakes will rise during baking.

Heat the oven to 180 degrees. Place the molds placed on a baking sheet into it and cook for about 25 minutes. Check the cupcakes with a wooden toothpick - if there are no pieces of dough left on it, then the baked goods are ready.

Leave the cupcakes in the molds for 10 minutes - after that they will be easy to remove.

Cool the baked goods, sprinkle with powdered sugar or pour over liquid honey if desired, and serve with tea.

Baby porridge cupcake

When buying baby food (dry instant cereals), sometimes it turns out that the expiration date is coming to an end (open boxes are stored for a short time), but there is still quite a lot of dry product. In this case, making a porridge cake would be an excellent option. The ingredients we took will make approximately 9 cupcakes, the quantity may vary, it depends on the size of the molds.

You should prepare:

  • 130 g butter;
  • 100 g sugar;
  • 1 tbsp. dry porridge (to taste);
  • three eggs;
  • 0.5 tsp. soda (or 1 tsp baking powder).

Melt the butter on the stove, add sugar and beat with a mixer. Continuing to beat at low speed, beat in the eggs one at a time and add the baking powder. Then add baby dry porridge into the prepared mixture and mix. It begins to swell very quickly, so the dough turns out thick. Place in molds and bake baby cupcakes for about 35 minutes at oven temperature 180°C. Interestingly, at the beginning of baking, the cupcakes increase significantly in size and then settle. As soon as the products acquire a brown tint, they can be removed.

Muffins with hot cheese and sweet peppers

The inventor of this cheese bomb says it was created... by mistake. They just put too much cheddar in the dish. But it turned out that this proportion gives a delicate consistency, average between dough and custard.

Mix one and a half cups of flour with 2 tsp. baking powder and 1 partial tbsp. l. sugar, add a little salt - this is a mixture of dry ingredients. Now wet: 1 cup milk, a quarter cup melted margarine, 3 cups grated hot cheese, large bell pepper, diced (the brave ones can go for chili), 1 egg. Combine both ingredients, mix thoroughly, bake portioned cupcakes for about 25 minutes.

For a milder taste, you can take mild cheese and replace the pepper with an apple or canned pineapple.

Children's cupcakes in silicone molds

Anyone who has small children knows how much they enjoy eating store-bought mini Barney cupcakes. Why not prepare this confectionery product at home or bake very beautiful and original mini trains? Fortunately, today in any store you can buy silicone molds for every taste and color, with different designs.

We suggest making cupcakes in the shape of small carriages. We will need the following products:

  • sugar - 200 g;
  • vinegar and soda - ½ tsp each;
  • eggs - 3 pcs.;
  • butter - 100 g;
  • sour cream (thick) – 7 large spoons;
  • flour - about 2 tbsp;
  • to taste - berries, candied fruits, fruits;
  • for decoration - sugar pencils.

The recipe is very easy to prepare and does not require any modern kitchen appliances.

Chocolate muffins

A muffin is a small cupcake made from quickly prepared dough, always with the addition of something tasty. Most often, muffins are baked with berries or pieces of chocolate, but you can add any fruit, seeds, nuts and even candies, and the more, the better.

You also need to add baking powder, otherwise the muffins will be too dense and sticky inside.

Pastry chefs have experimentally found that muffin dough should be kneaded as quickly as possible and under no circumstances should it be made uniform and smooth. To do this, mix dry and liquid ingredients separately, and then combine both mixtures, mix quickly, add, if necessary, the filling specified in the recipe, and immediately pour the dough into baking molds. In the oven, the dough rises greatly due to the baking powder, which releases carbon dioxide when heated.

You've probably seen muffins in cafes or pastry shops: they are almost always sold in corrugated paper cups (capsules). This is good for both buyers (it’s comfortable to hold with your hand) and for confectioners (no need to grease the molds). These paper capsules are easy to buy, but please note that under the weight of the dough they spread out and do not hold their shape. To bake beautiful muffins, paper cups are placed in metal or silicone muffin tins.

So, let's repeat the basic rules for working with the test:

  • mix dry and liquid ingredients separately;
  • don't forget about baking powder;
  • Do not knead the dough for a long time;
  • Use paper capsules by inserting them into molds.

Ingredients:

  • 120 g flour
  • 1 tbsp. heaped spoon of cocoa powder
  • 75 g sugar
  • 50 g butter
  • 100 g sour cream
  • 1 egg
  • 100 g chocolate
  • 1 teaspoon baking powder

You will also need:

  • 2 mixing bowls
  • spoon
  • muffin or cupcake molds
  • paper capsules (8 pieces)
  • preheat oven to 180°C

Here you can completely replace sour cream with kefir or yogurt, and also add a handful of any berries (for example, raspberries or blueberries) or nuts to the dough.

  1. Melt the butter, it is convenient to do this in a microwave oven (2 minutes at medium power).
  2. Place the paper capsules among the molds.
  3. In a large bowl, whisk together flour, baking powder, sugar and cocoa powder.
  4. In a separate bowl, mix sour cream, egg and melted butter.
  5. Pour the liquid mixture onto the dry mixture and stir until no white traces of flour remain (there will be lumps). The dough will be quite thick.
  6. Spoon the dough into the molds, filling them 2/3 full.

  1. Place in a hot oven and bake for 25 minutes.
  2. Poke one of the muffins with a matchstick or toothpick - there should be no wet dough stuck to it.
  3. Cool the finished muffins completely.
  4. To decorate, you can brush the muffins with melted chocolate and sprinkle with sugar balls.

Cooking technology

Using a spoon, mix the eggs with sugar, add sour cream, add soda slaked with vinegar, add softened butter, add sifted (required) flour. It is desirable that the finished dough has the consistency of thick sour cream. At this stage, you can add any fillers you wish to it. Very tasty muffins are made with various berries, such as cranberries or currants. It is recommended to fill silicone molds ¾ full, otherwise the products may “run away”. Before you start filling the molds, it is better to place them on a baking sheet, as they are very flexible, and it will be difficult to place the mold filled with dough.

According to this recipe, the children's cake is baked for half an hour at 200 °C. We check the readiness of the products in a long-known way - using a wooden stick. If there is no raw dough left on it, the cupcakes are ready. After baking, let the product cool directly in the mold, then carefully remove it. After the trailers have completely cooled down, we cut off the bottom of them for stability, and then paint them to your taste with sugar pencils, which can be purchased at any supermarket.

Basic cooking secrets

It is quite natural that every housewife who is going to start cooking some kind of dish, and even more so a dessert, wants to achieve the highest possible results so that the result pleases all family members.

In order for you to succeed with such an easy delicacy as muffins the first time, like a professional pastry chef, we have prepared some important tips for you.

  • Muffins are prepared in special small molds, the same as for making cupcakes. They have small ribbed edges and can be paper, silicone or metal. To ensure that the finished buns come out of the mold easily, it must first be greased with melted butter and sprinkled with flour.
  • The butter used to make the dough should be hard and cold, straight from the refrigerator, so that you can chop it into small pieces. The overall consistency of the finished dough should look poorly mixed and lumpy; for this purpose, it must be kneaded with a large metal spoon or using a mixer equipped with a special attachment. The sequence is approximately as follows: first beat the butter and sugar, then add the eggs, then add the flour and pour in the milk.
  • Filled muffins are perhaps the most delicious of all. Particularly popular are options with berries, raisins and dried fruits, bananas and other fruits. If you decide to use berries (cranberries, blueberries, strawberries, strawberries, etc. work well), then fold them carefully so that the berries do not get crushed. Then mix them with two tablespoons of flour, this is also important to do carefully, without excessive crushing. If you are using frozen berries or fruits, remember that you do not need to defrost them first, otherwise they may release juice, causing the muffins to become soggy.
  • How to check the doneness of buns? Everything is very simple: they are ready when they have risen well and begun to move away from the walls of their form. They should feel springy to the touch and a golden crust should appear on the surface of each muffin. If it is difficult for you to visually assess the degree of readiness, then for these purposes you can use a thin toothpick: stick it in the middle of the treat, if it comes out clean, then everything is ready.
  • Muffins without filling should be placed on a wire rack immediately after baking so that the bottom does not get wet from the steam, but varieties with chocolate, caramel or cream filling should be left in the pan for a few minutes so that they have time to harden.

Sesame cupcakes

We offer another option for cupcakes baked in silicone molds. In this recipe we will use quail eggs, thanks to which the muffins are surprisingly soft on the inside and pleasantly crispy on the outside. Children and adults will love these cupcakes. You need to take:

  • quail eggs - 7 pieces;
  • granulated sugar - 120;
  • butter - 100 g;
  • soda - ½ tsp;
  • flour - 2 tbsp;
  • sour cream or baby kefir - 200 ml;
  • a little sesame.
