Buckwheat in the merchant's style is a popular old Russian recipe. A healthy and satisfying dish. It is easy to prepare and turns out tasty, aromatic, and crumbly. How to make merchant-style buckwheat with pork
Washing the pork. Then, using a knife, we clean the meat, if necessary, from excess fat, veins and film.
Cut the pork into small pieces. Pour 1-2 tbsp into the duck roast. l. raises oils Place the shredded pork in a container.
Fry the pork pieces for 5-7 minutes until tender beige.
While the meat is roasting, peel the onions and carrots. Finely chop the onion and cut the carrots into half circles.
Add chopped onions and carrots to the meat in the duck pot and simmer until golden brown.
Next, pour in the buckwheat. Fill everything with water, add seasoning for buckwheat according to the merchant's method, salt and pepper the dish to taste and mix everything well with a wooden spatula.
Then, cover the duck pot with a lid and wait for the water to start boiling. Then turn the heat to low and simmer the dish for 20-25 minutes.
During this time, all the water should evaporate from the container, and the buckwheat should be saturated with the juices of vegetables and meat. If during this period of time the water has not evaporated, then you can extend the time for cooking buckwheat in a merchant’s way, not forgetting to mix everything well again with a spatula.
Thanks to the juice from vegetables and meat, buckwheat turns out appetizing and very aromatic. You can serve this buckwheat with various vegetable salads or pickles. Bon appetit!
Tips for the recipe To prepare tender pork in buckwheat in merchant style, it is best to use the loin, as this part of the pork is more tender and juicy. In addition to carrots and onions, you can also add fresh bell pepper to the frying. It will make your dish more flavorful and vibrant. Classic merchant meat recipe
Unfortunately, there are no reliable sources about the birth of this tasty and simple dish. But, as the name suggests, the existence of the recipe goes back several centuries. To prepare classic meat in a merchant's style, you will need a few ingredients:
- 750 g of pork meat (it is better to take without bones, a large amount of fat and layers - this will make cooking easier);
- 400 g of medium ripe tomatoes;
- 250 g hard cheese;
- 100 g mayonnaise (can be replaced with sour cream);
- 1 tbsp. a spoon of sunflower oil;
- a small bunch of fresh parsley or dill;
- salt;
- pepper;
- universal seasoning mixture “For meat”.
To prepare classic meat in the merchant's style, you will need a few ingredients
. The time spent on preparing the “merchant” dish according to the traditional recipe for Russian cuisine will take about an hour:
- Pork (after pre-processing - washing and removing films from the pulp) should be cut into portions. Outwardly, they should resemble chops, and not exceed 1.5 cm in thickness so that they are well baked inside.
- Each of these pieces is placed in a plastic bag or wrapped in cling film, and then beaten well on all sides.
- Then you need to remove the meat from the film and rub it on both sides with salt, pepper and a mixture of seasonings.
- Wipe the entire surface of the baking sheet with gauze soaked in vegetable oil and a special brush; and then place the meat pieces on it.
- Grate the cheese on a medium grater. Mix half of the “chips” with mayonnaise (or sour cream).
- Scald the tomatoes with strong boiling water, peel them from the hard skin and cut into thick circles.
- Place grated cheese on the meat chops, then tomato slices and fill each with a mixture of mayonnaise and cheese.
- Bake in an oven that has been preheated to 180 °C for half an hour.
Before serving, it is recommended to sprinkle with fresh herbs - this will decorate the dish and give it a special aroma.

One, two, three, buckwheat with meat, come out! The spontaneously invented rhyme perfectly represents the popular methods of preparing exceptionally tasty porridge, obtained in a frying pan, in the oven or using “smart” modern technology.
Buckwheat stewed with meat in a pan
This is perhaps the most popular and most sought after dish with which we most often pamper our family. The reason for this is the ease of preparation of the food.
Ingredients:
- oil (ghee, butter or olive);
- pork belly - 500 g;
- onion - 1 pc.;
- buckwheat - 500 g;
- carrots - 1 pc.;
- spices (pepper, salt), herbs.
To prepare buckwheat with meat in the most delicious and appetizing way, lightly fry the grains in a dry and well-heated frying pan.
You will see how crumbly and fragrant each grain of the created dish will become!
Cooking method:
- We sort through the grain, throwing out foreign inclusions. Rinse thoroughly under running water, placing the cereal in a colander.
- When the last drops have drained, dry the buckwheat with disposable towels and place it on a hot frying pan. Fry for up to three minutes over medium heat.
- Continuously stir the grains. The main thing we need at this stage is not to overheat the product, otherwise the finished dish will be bitter and will not receive the desired aroma.
- Processing pork. By the way, beef (sirloin), rabbit or boneless chicken would be an equally excellent option. So, we divide the brisket into small portions. Fry quickly over high heat until the meat is browned.
- Separately, sauté the onion, chopped into half rings, and grated carrots until soft.
- Combine the meat and vegetable mixtures in a thick-bottomed saucepan, pour in a liter of boiling water, simmer covered for 20 minutes, seasoning the food with salt and pepper.
- Add buckwheat and bay leaf. Season with suneli hops to taste and add basil. Mix everything and cook covered over low heat. The cereal should increase three times in volume, absorbing almost all the liquid.

- tomato juice - 150 ml;
