Potato pie with kefir - basic cooking principles

• For pies made from dough mixed with kefir, white flour is best, which must be sifted through a fine sieve.

• Any kefir is suitable, regardless of fat content; you can make dough with “steep” yogurt, but pies with sour, “low-percentage” kefir turn out more fluffy.

• Fermented milk product is best added warm, so it is worth taking it out of the refrigerator in advance or warming it in the microwave to room temperature.

• Before adding eggs to the dough, first lightly beat with a fork or beat with a whisk.

• Add soda, baking powder or yeast dissolved in milk to kefir and let it sit for a while before adding the rest of the ingredients.

• It is best to take potatoes when they are not young.

Pie with potatoes, cheese and mushrooms

To make a pie with potatoes, cheese and mushrooms, you will need:

  • 1 1/2 cups flour,
  • 300 g champignons,
  • 1 packet of baking powder,
  • 1 clove of garlic,
  • 2 eggs,
  • 10 g parsley,
  • 60 ml vegetable oil,
  • 125 ml milk,
  • salt, ground black pepper,
  • 100 g hard cheese.

Mix flour with baking powder, beat in eggs, and whisk. While beating, gradually add butter, heated milk, grated cheese, salt and pepper into the dough.

Peel the mushrooms, wash them, cut them into large slices and fry them in a frying pan with some oil.

Peel the garlic and finely chop it with a knife.

Wash the parsley and chop finely.

Boil the potatoes until half cooked. Cut the potatoes into slices.

Add mushrooms to the dough and stir until smooth.

Place the potatoes evenly in a greased multicooker bowl and pour the dough with mushrooms, cook in the “Baking” mode for 1 hour.

Leave the finished pie in the slow cooker for 10-15 minutes. Then place it on a dish, cut and serve. You can pour sour cream on top and decorate with herbs.

Recipe with cheese

Products:

  • 300 grams of flour;
  • 1 tsp. yeast;
  • 1 tbsp. l. Sahara;

For the filling you will need:

  • A kilogram of potatoes;
  • 100 grams of suluguni (you can use other hard cheese);
  • Dill;
  • Salt;

Preparation

  1. First add a pinch of salt, a tablespoon of sugar and yeast to the milk. Mix everything and leave for a quarter of an hour. Pour vegetable oil into the flour.
  2. Add the dough and knead the dough. The dough should not be tight.
  3. Stir for a few minutes. We put something on top and put it in a warm room. We wait for the dough to increase in volume.
  4. Let's start with the filling. Peel the potatoes and boil them in salted water and mash them. Finely chop the greens and grate the cheese. Add to potatoes and stir.
  5. Punch down the dough and knead for a minute. Create a small cake. Using the filling, we form a ball, place it on the flatbread and close it.
  6. We make flat cakes from the dough, knead the ball with our hands from the center to the edge. We make a hole in the middle.
  7. Place in the oven for 20 minutes until golden brown. Then brush with melted butter.

Pie with minced meat and mashed potatoes

Today we will bake a tender pork pie. In order to please your loved ones with an unsurpassed delicacy, we will need the following ingredients:

  • pork for minced meat – 400 g (can be replaced with ready-made semi-finished product)
  • fresh potatoes – 8 pieces;
  • milk – 1 glass;
  • boiled egg - 3 pieces;
  • melted butter - 2 tbsp. spoons;
  • onions – 2 pieces;
  • salt pepper.

We will use yeast dough for the pie, which is not tasty. We will prepare the following products for it:

  • premium wheat flour – 250 g;
  • dry yeast – 20 g;
  • warm water – 125 g;
  • salt – ¼ teaspoon.

Simple recipe with onions

Dough:

  • 0.200 grams of butter;
  • 0.300 milliliters of milk;
  • Two tea spoons of sugar;
  • One teaspoon of salt;
  • 0.750 kg flour;
  • 10 grams of yeast.

Pie filling ingredients:

  • A kilogram of potatoes;
  • 2 onions;
  • 2 teaspoons black pepper (if desired);
  • 60 grams of butter.

Cooking instructions

  1. Let's start with the test. You need to knead it, you can do this yourself, but if you have a bread machine, then you need to use it. Pour the melted butter into the loaf pan.
  2. Add a glass of milk, sugar, a little salt and three glasses of flour. Add yeast. We put everything in the bread machine on the “dough kneading” mode.
  3. Meanwhile, let's start filling. Boil the potatoes, then peel and cool, cut into small slices.
  4. Finely chop the onion.
  5. After 60 - 90 minutes the dough will increase in size. We crush it with our own hands. We take out the form in which you will bake. Grease with oil and add flour. Take out the dough, divide into two equal parts and roll out.
  6. Apply potatoes and butter in even layers. Lay out the onions. Roll out the other part and cover the pie with it.
  7. Place in the oven for 40 minutes. Take out the pie, wait until it cools, cut into pieces.

Recipe

Jellied pies made from tender kefir dough can be prepared with any filling, it all depends on your imagination and the availability of food in the refrigerator. Now we will make the cabbage filling. For the test we will need the following products:

  • premium wheat flour – 1 cup;
  • kefir (any fat content) – 1 glass;
  • chicken egg – 2 pieces;
  • soda slaked with vinegar - 0.5 teaspoon;
  • vegetable oil – 50 g;
  • salt – 0.5 teaspoon.

The filling will include the following ingredients:

  • white cabbage – 400 g;
  • medium carrots - 1 piece;
  • potatoes – 2-3 pieces;
  • onion – 1 piece;
  • parsley, optional;
  • vegetable oil.

Jellied pie with potatoes in the oven is prepared from a fairly liquid dough. To do this, mix the eggs and salt in a separate bowl. Add slaked soda to the eggs (for this you can use kefir rather than vinegar) and vegetable oil. The recipe for potato pie with mushrooms recommends using the following ingredients:

  • Sour cream - 4 tbsp. l.
  • Butter - 100 g
  • Wheat flour (cup = 200 ml) - 1.5 cups.
  • Soda - 1/2 tsp.
  • Salt - 1/2 tbsp. l.
  • Potatoes (medium) - 2 pcs.
  • Mushrooms (fried with onions - I used oyster mushrooms) - 7-8 tbsp. l.
  • Hard cheese (I used mozzarella) - 80-100 g
  • Nutmeg - 1/2 tsp.
  1. To prepare potato pie with mushrooms in the oven, grate the butter and mix with flour.
  2. Add sour cream (I added thick yogurt), soda and salt.
  3. Knead the dough.
  4. If necessary, fry (stew) the mushrooms with chopped onions in advance and cool. I had them already prepared.
  5. Peel the potatoes and slice them very thin - you can use a vegetable peeler.
  6. Grate the cheese.

Divide the dough into 2 parts: make 1 part larger.

Place the dough into the baking dish, forming the sides, and then the filling:

  • 1 word Mushrooms
  • 2 words Slice raw potatoes and sprinkle them lightly with salt and nutmeg.
  • 3 words Cheese

Cover the filling with a smaller portion of the dough and seal the edges.

Bake the cake at temp. approximately 180 degrees. C (but better adapt to your oven)

Sausage

  • Products;
  • Half a kilo of flour;
  • A quarter kilogram of sausage;
  • 0.125 liters of kefir;
  • 0.125 liters of milk;
  • 0.180 kilograms of butter;
  • Yeast packaging;
  • 1 egg;
  • A tablespoon of vegetable oil;
  • A little sugar;
  • A little salt;
  • A kilogram of potatoes;
  • 2 heads of onions.

Preparation:

  1. Let's start with the test. Sift flour and add yeast. Melt one hundred grams of butter and combine with warm milk and kefir, add salt and sugar. Mix everything and combine with flour.
  2. Add egg and vegetable oil to the dough. Knead the dough, cover with something and put in a warm place.
  3. After an hour, take out the dough, knead it and put it back for 30 minutes.
  4. Let's start with the filling. Peel the onion, chop finely and fry in a frying pan. Cut the sausage into cubes. Cut the potatoes into cubes and add to the onions and sausage, add salt.
  5. Take out the dough and divide into two parts. Sprinkle the table with flour and roll out the dough. Place on a baking sheet and make two centimeter sides.
  6. Cut the butter into thin pieces and place on the dough.
  7. Spread the filling evenly.
  8. Roll out another piece of dough and cover the pie with it, connecting it with the bottom dough. Don't forget to make a hole in the middle. Pour 2 tablespoons of salted water into the hole. Poke a few holes in the dough with a fork and place in the oven for 45 minutes.
  9. Take out the pie and spread with melted butter. Cover with a towel and wait 25 minutes. Time to cut into pieces.

Add flour to make a dough. It will be thick like pancakes.

Pour half of this dough into the bottom of the baking dish. The mold can be greased with butter and sprinkled with breadcrumbs. This way the cake will come out well.

Peel the potatoes and grate through a coarse grater.

Immediately spread evenly onto the dough. Lightly salt and pepper the potato layer. Do not fiddle with the potatoes for a long time so that they do not darken without water.

Chop the onion into thin half rings.

Place chopped onion on potato layer.

Pour in the rest of the dough, smoothing it out so that there are no gaps.

Bake the pie in the oven at 180°. The pie will gradually become fluffy, rosy, and baked inside. After 30-40 minutes, remove the pie from the oven.

Let the pie cool, then cut it into pieces.
