Did you know that muffins don't have to be a sweet dessert? If you make them with ham and cheese, they will serve as an excellent snack and replace sandwiches. Great option for a buffet!

    Beat the egg with a fork and pour into warm kefir (room temperature).

    Add melted butter there.

    Sift the flour and pour into the kefir mixture. Don't forget to add baking powder (it can be mixed with flour).

    Stir the dough. While it has not yet become homogeneous and dense, add spices and spices to it to your taste. Knead the dough until all ingredients are combined.

    Grate the cheese or cut into pieces.

    Cut the ham into very small cubes. If you cut it coarsely, it will be difficult for the dough to rise and the muffins will turn out dense.

    Mix cheese and ham into dough.

    The dough will be denser than for sweet muffins; it will fall from the spoon in a lump rather than pour out.

    Fill the molds no more than 2/3. The muffins will rise in the oven. Since the dough is dense and not entirely homogeneous, press it a little to better distribute it throughout the mold.

    The top can be brushed with beaten egg and sprinkled with sesame seeds.

    Muffins are baked in a well-heated oven at a temperature of 180-190 degrees. In 20-25 minutes they will be ready. To prevent the muffins from getting soggy, immediately remove them from the pans and cool on a wire rack.

Then add salt, sugar and ground black pepper to the softened butter.

Beat the butter and spices with a mixer for 3 minutes.

Add eggs to the resulting butter mixture one at a time, whisking constantly until smooth.

Then add approximately 100 grams of sifted flour and baking powder.

Mix at low speed of the mixer and pour in 60 ml of milk, mix again.

Then add the remaining flour and milk, mix well at low speed mixer until smooth. The dough will turn out very airy and tender.

Cut the cheese into small cubes.

Also cut the ham into small cubes.

Add cheese and ham to the dough, mix well with a spoon.

Divide the dough into the molds, filling them 2/3 full. I used paper inserts. I made 12 ham and cheese snack muffins.

Bake snack cakes in a preheated oven for about 30 minutes at 200 degrees. The cupcakes will rise while baking, but will fall back a little as they cool. Warm muffins with cheese and ham can be served. I decided to decorate them with cottage cheese, sausage and vegetables.

I used cream cheese to decorate the cupcakes.

First remove the cheese from the refrigerator for about 1 hour, then transfer it to a pastry bag with a shaped nozzle.

Muffins - this is what Americans call small cupcakes that fit in the palm of your hand. You can add anything to this baking: from berries and fruits to meat and mushroom base.

List of products:

  • ham – 100 g;
  • hard cheese – 100 g;
  • milk – 150 ml;
  • butter – 100 g;
  • table eggs – 2 pcs.;
  • flour – 300 g;
  • baking powder – 2 tsp;
  • salt - on the tip of the knife;
  • garlic – 1 clove;
  • dill - a bunch.

It's not just ham that's added. Goes great with chicken, sausage or frankfurters. You can choose cheese according to your taste; any variety will do.

Prepare sequentially:

  1. Slice the ham and 80 g of cheese. Grate the rest of the cheese.
  2. Rinse the dill with water, dry on a paper towel and chop. Do the same with the garlic, after peeling it.
  3. So, let's start preparing the test. Soften the butter, mix with milk and eggs.
  4. Add baking powder, salt, and spices to the flour.
  5. Pour the mixture into the flour and beat a little. Don't mix the dough too thoroughly! It should be slightly lumpy.
  6. Pour the main ingredients, dill and garlic into the resulting mixture.
  7. Grease the molds with oil and fill them partially full with dough.
  8. Heat the oven to 180 degrees, bake the muffins for 30-35 minutes. 10 minutes before the end of baking, sprinkle the snack with cheese and send it back to the oven.

How to make Ham and Cheese Snack Muffins

Sift the flour into a bowl, combine it with salt and soda. Cut any type of hard cheese into small cubes. Cut the ham into cubes of the same size. Place the chopped ingredients in a bowl with flour and stir.

Take another saucepan or bowl and place a piece of butter in it. Melt it in a water or steam bath.

Add sour cream to the melted warm butter. It will be great if you give preference to full-fat homemade sour cream. Mix both ingredients thoroughly and add a raw chicken egg.

Add pre-prepared dry ingredients to sour cream, butter and egg. Mix everything thoroughly to form a sticky mass, the consistency of thick sour cream.

Take muffin tins and place them on a special baking sheet with indentations. Place the dough into each mold so that it fills two-thirds of the volume.

Preheat the oven to two hundred degrees. Place a baking sheet with dough in it, bake the muffins for about twenty minutes until fully cooked. Serve with your favorite sauce and herbs if desired.

2 cups flour (280 g), 1.5 tsp. baking powder, a pinch of salt, freshly ground black pepper, a pinch of dry mustard, a pinch of dry dill, a pinch of cayenne pepper, salt, 1 tbsp. finely chopped fresh rosemary, 1 tbsp. thyme leaves, 160 g ham (cut into cubes), 130 g cheese (cut into small cubes), 2 eggs, 1 cup milk, 113 g unsalted butter (room temperature), (cup = 240 ml).

Sometimes it happens that there are a couple of pieces of ham and a piece of cheese left in the refrigerator, which no one really wants to eat anymore, and then ideas are born for the proper disposal of these products. This time there was no need to invent anything, since the recipe for excellent muffins was found in the book Le Cordon bleu “Muffins”. These unsweetened, very aromatic muffins are perfect for vegetable puree soup (for example, cauliflower cream soup), or for ripe tomato salad. The ham can be either regular or smoked, and the herbs can be changed to suit your taste.

Ingredients:

1. Preheat the oven to 200 degrees. Sift flour, baking powder, salt, freshly ground black pepper, dry mustard, cayenne pepper, dry dill. Or whatever dry seasonings you like.

2. Finely chop the rosemary leaves, add to the flour mixture, and add thyme leaves. Mix. Add ham and cheese there and mix gently again.

3. In a separate bowl, beat milk and eggs.

4. Make a well in the middle of the flour mixture. Pour the milk mixture into it.

5. We begin to carefully mix with an iron spoon. Add lightly whipped butter.

6. And knead completely. Mix the dough briefly.

7. Insert the paper skirts into the muffin pan. Sprinkle them with vegetable oil.

8. Fill the molds with the resulting mixture. You should have 12 muffins. And put it in a preheated oven for 20-25 minutes. We wait until the muffins are nicely browned.

9. That's it! Wonderful muffins are ready. Let them cool a little. Just half an hour of your time and you have tender, airy, incredibly aromatic and satisfying muffins on your table.

10. This is how they are cut, a lot of tasty filling, a lot of aromatic herbs. The taste is very similar to meat pies, but only with a more refined taste.

11. I liked these “pies” with cold tomato juice. A wonderful, tasty and filling afternoon snack.
