Classic recipe

The classic recipe is the basis for making other, more varied desserts. To prepare you will need:

  • 1 tsp baking powder;
  • 2 packets of vanilla sugar;
  • 80 grams of sugar (if desired, you can omit it and replace it with sweet carrots);
  • 300 g flour for baking;
  • 400 grams of fresh peeled carrots;
  • 80 g butter;
  • a pinch of salt.

Making simple carrot cookies is easy. To do this, you need to prepare the butter in advance (bring it to room temperature) and grind it with granulated sugar until it is completely dissolved. Root vegetables need to be grated on a coarse grater and mixed with the resulting mixture. Then add dry products little by little and mix until a sticky viscous consistency.

The oven must be prepared by preheating to 180 degrees. Cover the baking sheet with parchment to prevent the baked goods from burning. Roll the dough into balls, place them on paper and press them lightly. Baking time is no more than half an hour.

Carrot raisin cookies

Carrot cookies with raisins contain sour cream, so eating this delicacy during a diet is not recommended. Due to the fermented milk product, the dessert turns out rich and soft.

To prepare you will need:

  • 100 ml sour cream;
  • 250 grams of grated carrots;
  • 250 grams of baking flour;
  • raisins to taste;
  • 1 tsp baking powder;
  • 1 packet of vanilla sugar;
  • 80 grams of granulated sugar.

Before preparing for baking, it is recommended to pre-soak the raisins in boiling water for 1-2 hours.

The cooking method is simple. First you need to mix sour cream and carrots, add sugar. Then all the dry products are mixed and “mixed” into the total mass in portions. At the end, add raisins pre-dried with a paper napkin.

The finished dough is rolled out as desired. The standard thickness is no more than 1.5 cm. The baking tray is lined with baking paper, on which cookies of different shapes are placed. Bake it for about 20 minutes.

Raw food cakes made from pulp

To make crackers, you will definitely need a dehydrator (dryer for vegetables and fruits) or a summer sun. Just like the muffins, ground flax seeds are used to hold the dough together. Thanks to flax, the dough will have a dense texture and will be easy to roll out on the table surface.

Flax seeds are an optional ingredient. Carrot crackers can be made from carrot cake with herbs and spices, adding a little water. However, when dried, the bread may crack slightly and look less appetizing.

Lenten cookies

Another simple carrot cookie recipe is a Lenten dessert. The recipe does not contain butter or sour cream, but the finished dish is soft and crumbly.

To prepare the treat you will need:

  • 240 g flour;
  • 240 g grated carrots;
  • 80 grams of starch;
  • 1 bag of vanilla;
  • a whisper of salt;
  • 1 tsp baking powder;
  • 60 ml vegetable oil;
  • 100 grams of granulated sugar.

Carrot cake

A similar recipe is carrot cake. There are some differences in ingredients and preparation technology. Carrot cake is made without eggs and is completely vegan.

To prepare the treat you will need:

  • 2 tbsp. honey;
  • 60 ml olive oil;
  • 0.5 tsp soda;
  • 200 grams of fresh grated root vegetables;
  • 160 grams each of oatmeal and wheat flour;
  • 3 tbsp. granulated sugar.

To prepare this dessert you will need finely grated carrots.

Method for preparing the treat:

  1. Before cooking, you need to slightly melt the honey to bring it to the state of water.
  2. Mix honey with grated root vegetables and olive oil.
  3. Gradually add oatmeal to the mixture, and then leave the mixture for 30 minutes to allow the oatmeal to swell.
  4. Then you need to mix all the dry ingredients (except granulated sugar) and gradually add them to the carrot batch.
  5. The well-mixed dough is divided into many small balls.
  6. Place parchment on a baking sheet, on which round thick cookies are formed from balls (no larger than a walnut).

It makes no difference whether you make muffins from fresh grated carrots or use the cake left over from the juice. In any version, muffins or vegan carrot cakes made from pulp will turn out incomparable!

Free from eggs, yeast, milk and other animal products. Eggs are replaced with ground flax seeds.
