Keep the simplest version of the pie for a quick meal.
The preparation is so easy that even a schoolgirl can do it. Take any jam to suit your taste. You can find other versions of the classic gingerbread on another page. Take:

  • Jam - a glass.
  • Kefir - a glass.
  • Granulated sugar - ½ cup.
  • Egg.
  • Baking soda, slaked with vinegar - a small spoon.
  • Flour – 2 cups.

Pour the jam into a bowl, add slaked soda, mix well. Leave to infuse for 10 minutes. The mixture will begin to bubble and sizzle.

Pour in kefir. Continue whisking until the mixture is smooth.

Add sugar and immediately break the egg. Mix the mixture thoroughly.

Start mixing in the flour. The main thing here is not to rush, introduce it in small portions. Knead, breaking up any lumps.

The mass will begin to thicken. Your task is to make a dough that is not liquid and not thick, similar in consistency to very thick sour cream.

Place baking paper on a baking sheet. Be sure to coat it with any oil, then the cake will not stick.

Pour out the test mixture. Place the baking sheet in the oven, preheated to 170 o C. Turn on the timer for 40-45 minutes (the time depends on the capabilities of your oven). After the specified time, the gingerbread is ready.

Cooking steps

Pour boiling water over black tea or a tea mixture and let it brew, then strain. Add sugar, jam and refined sunflower oil to the tea and stir well. I used apricot jam with kernels, but did not add the kernels themselves to the dough. For the gingerbread, it is better to use only a liquid jam base.


Sift flour with baking powder to the liquid ingredients, add a pinch of salt and cardamom, as well as cinnamon.


Stir the mixture well and add washed and dried raisins, as well as chopped walnuts, and mix again.


The dough will be very thick.


Line a baking pan with parchment and place the dough in it, smoothing it out using a spatula.


Bake the gingerbread for 50-60 minutes (until ready) in a preheated oven at 180 degrees.

To prepare, you will need a glass of strong tea leaves (brew 3-4 bags with boiling water), two tablespoons of honey, flour (1.5 cups), a tablespoon of sunflower oil, a glass of sugar and baking soda (½ tsp).

  • Raisins – 100 gr.

How to cook:

  1. Heat water in a saucepan, add sugar, dissolve it until completely dissolved. Turn off the stove, let it cool slightly, pour in the jam syrup and sunflower oil.
  2. Slice the lemon, taste with a blender, add to the syrup. Next, send raisins with candied fruits.
  3. In a separate bowl, combine flour with slaked soda and cocoa powder. Crush the nuts almost into dust and add to the flour mixture.

How to bake:

  1. Brew strong tea. You can use a regular tea bag, or a large spoonful of tea leaves per glass of boiling water.

According to this recipe, the sweet pie with spicy notes of aromatic seasonings and honey turns out tender and fluffy.

To prepare a tea gingerbread you will need:

  • tea (brewing must be strong) – 1 glass
  • cinnamon – ½ tsp.
  • cocoa – 1 tbsp. l.
  • egg – 1 pc.
  • sugar – 1 glass
  • soda – 1 tsp.
  • honey - 3 tbsp. l.
  • oil (vegetable) – ½ cup
  • raisins – 100 g
  • flour - 2.5 cups.

If you want to decorate the pie with milk fudge, then to prepare it you will additionally need: flour (3 tbsp), sugar (1 glass), half a glass of milk, a pinch of food coloring and butter (150 g). In addition, you can sprinkle the gingerbread with coconut flakes.

Preparation:

Let's start by brewing tea, which we pour into a bowl, where we will prepare the dough. Add honey there and stir. Beat in the egg and add sugar. Mix everything with a whisk.

Add sunflower oil (it is better to use refined oil). We add cinnamon to the dough (the combination of honey with this spicy seasoning is very popular and is often used in home baking recipes, in our case its presence is simply necessary), as well as cocoa, which, without significantly affecting the taste, will change the color of the pie to brown. Mix everything.

Add raisins, previously sprinkled with flour (to distribute them more evenly in the dough). To rise the dough and form a looser structure, use baking soda (it is not recommended to extinguish it in this recipe). And finally, add pre-sifted flour to the prepared mass. Mix everything.

The dough, reminiscent of biscuit in thickness, should be homogeneous, without lumps.

For baking we use any form: metal, ceramic, glass or silicone. To prevent our gingerbread from sticking to it, we first grease it with oil or cover the bottom and sides with parchment paper.

Preheat the oven to 160-180 degrees. Our pie bakes for 40-45 minutes. The fact that it’s time to take it out of the oven is indicated by a dry wooden stick, which we use to check the degree of readiness.

To decorate the tea gingerbread, prepare the glaze with honey: mix sugar with milk and, adding pieces of butter, bring to a boil, stirring continuously. After adding flour and food coloring, quickly stir everything and cook for another two minutes over low heat.

Pour milk fudge over the gingerbread and sprinkle with nuts, grated chocolate or coconut flakes. We leave the dessert on the table for an hour, and then enjoy its taste and aroma.
