Beat eggs with sugar. Melt honey and butter until soft and allow to cool, then add the resulting mixture to the beaten eggs and add flour and baking powder. Knead the dough and place it in molds (it is best to use silicone ones) in a layer of no more than one and a half centimeters - this will ensure even baking. The oven is heated to 180 °C, and then the muffin tins are placed in it for 30 minutes. The finished dish can be decorated as desired or served as is with tea.

Let's start cooking

  1. Sift the flour through a fine sieve directly into the bowl. Add soda, salt, as well as nutmeg, ground ginger, brown sugar and cloves. We form a small hole in the center.

  2. Add honey and butter to the saucepan. Cut the lemon in half and squeeze the juice out of it into the rest of the ingredients in the pan. If you want lemon pieces to occasionally appear in the finished dessert, you can use a blender and grind the whole lemon in it along with the zest. You can do the same with raisins, although it will be better if you add them whole.

  3. Place the saucepan on the stove and melt its contents until smooth.
  4. As soon as all the ingredients in the pan reach the consistency we need, pour the resulting liquid in a thin stream into a bowl, directly into the formed well. Do not forget to mix the entire contents of the bowl with a whisk.

  5. Add raisins. Whisk all ingredients in a bowl until smooth.
  6. Beat the eggs into a plate and pour milk or cream over them. Whisk until smooth.

  7. Add the milk-egg mixture into the dough in small portions and beat it with a whisk at the same time.

  8. Pour the resulting dough into a muffin pan, which must first be greased with oil. The dough will increase in size significantly in the oven, so don't be discouraged if you feel like there isn't enough dough.

  9. Turn on the oven to 160-180 degrees and leave it to warm up. We send our form with the dough to the heated oven for about 40-45 minutes.
  10. After the time has passed, remove the baking pan from the oven and place the finished cake on a large plate. We leave the finished dessert to brew a little and cool, after which you can treat your guests to it. Bon appetit!

Ingredients:

  • 2-3 apples to taste;
  • 3 raw eggs;
  • half a glass of sugar;
  • a glass of flour;
  • 90 g vegetable oil;
  • 2 tablespoons honey;
  • 2 tablespoons lemon juice;
  • 1 teaspoon baking powder.

Peeled apples and cut into small pieces are lightly moistened with lemon juice. Add honey, butter, flour and baking powder to eggs beaten with sugar and stir until smooth. Add apples, and then the resulting mass is laid out in molds and baked for half an hour in the oven.

  • flour – 300 gr.;

  • honey - 4 tbsp. l.;

  • milk – 250 ml;
  • oil (vegetable) – 80 ml;
  • vanillin – ½ tsp;
  • soda – 1 tsp;
  • vinegar (9%) – 1 tsp;
  • berries (strawberries, blueberries, raspberries) – 100 gr.

Using a whisk, beat eggs, melted honey, sugar, butter, milk into a foamy mass, add vanillin, flour and soda, slaked with vinegar, then mix the mass to a creamy consistency. Wash the berries and sprinkle with sugar. Place a little dough (1 tsp) into the muffin tins, then place a layer of filling (1 tsp), and again the dough on top so that the workpiece occupies 2/3 of the container. Bake the cupcakes at 200⁰C for 20-25 minutes.

Honey cake in the microwave oven

The dish includes:

  • 1 chicken egg;
  • 1 tablespoon granulated sugar;
  • 1 tablespoon honey;
  • 1 cup flour;
  • 2 tablespoons vegetable oil;
  • soda – ¼ teaspoon.

In a microwave-safe cup, mix everything and place in the microwave for 2-3 minutes. If it’s not ready, you can hold it for another minute, but no more. If you overdo it, the cake will turn out tough and its taste will deteriorate.

  • It is advisable to knead the honey dough manually, using a spatula to move from bottom to top and down.
  • Honey must have a liquid consistency before being added to the dough, so the candied honey must be preheated (melted).
  • For softness, use only egg yolks in the dough, but their quantity must be calculated according to the recipe. Most experts say that 2 yolks are equivalent to a full egg.
  • After the oven stops working, you need to keep the cake in it for a while, and then let it cool in the mold: it is not recommended to take it out hot.

You can make minor changes to any recipe: for example, instead of part of the flour (up to 10%), use starch, which will prevent the delicacy from quickly becoming stale. White sugar can always be replaced with brown sugar if desired, and cinnamon, cardamom, vanillin, and cocoa can be added to the dough itself.

A fluffy and delicious cake can also be prepared in a slow cooker. To do this you will need to take the following products:

  • half a kilo of flour;
  • 4 eggs;
  • 130 g each of honey and sugar;
  • baking powder.

Beat the sugar and eggs until an airy, light mass is obtained - the volume of the mixture at least doubles. Then add the remaining ingredients and stir thoroughly until smooth. The dough is poured into a pre-oiled multicooker cup and the lid is closed. Select the “Baking” mode and leave for 1 hour. After turning off the timer, leave to infuse for another quarter of an hour.

Prepare the glaze: grind butter (40 g) with sugar (2 tbsp) and cocoa, dilute with boiled water, mix and heat in the microwave for 2 minutes. Finished cupcakes should be brushed with hot glaze immediately after removing from the molds.

Advice! You can quickly and beautifully apply icing on cupcakes in the following way - pour the hot chocolate mixture into a deep plate, and then simply dip the finished baked goods into it.

Step No. 1. Break eggs into a bowl. Add sugar in the specified amount. Beat using an immersion blender. Add honey. Whisk.

  • “Brandy” - 50 ml;
  • three eggs;

  • 75 ml lemon juice;
  • sugar – 200 g;
  • a little vanillin;
  • 1.5 cups wheat flour (the variety does not matter);
  • a little bit of turmeric;
  • 1 tbsp. l. honey

Practical part:

  1. We put on the table everything from which we will prepare the honey cake. What are the next steps? Preheat the oven (180 °C).
  2. Combine softened butter with sugar. Whisk. Gradually add honey, lemon juice, egg yolk and kefir. That's not all. Place the zest of two lemons into a bowl.
  3. Separately mix flour with turmeric and baking soda. Add all this to the creamy mass. Mix. You also need to add whipped egg white to the future dough.
  4. Take a cake pan. Coat its bottom with oil and sprinkle with breadcrumbs. Pour out the dough. Place the form with the contents in the oven. We time it for 30-40 minutes.
