There are many options for making raspberry pie. I'm offering one of them today! Raspberry pie recipe can be changed. Cocoa can be added to the dough, or not. Start preparing the shortcrust pastry pie with raspberries by mixing flour with baking powder. Then you need to add soft butter and grind with flour. Then add the egg, sugar, cocoa powder, vanillin and knead the soft dough. Place the finished dough in the refrigerator for 20-30 minutes.
During this time, you need to prepare the filling for the raspberry curd pie. I prefer to buy ready-made sweet curd mass. It contains sugar, vanillin, and dried apricots (this mass is also sold with prunes). This mass is also sold simply with vanilla sugar. It has a soft, delicate consistency and without sour cream. And if you prefer to prepare the filling yourself, then you need to mix cottage cheese, egg, sour cream, vanillin and sugar.
Next, grease the baking dish with vegetable oil, roll out the shortcrust pastry for raspberry pie in a thin layer on the table and carefully place it in the baking dish. The layer of dough should not be thick and not exceed 1 cm, and also have sides 4 cm high. Since we put cocoa powder in the dough, we get chocolate dough. It must be baked separately if we have ready-made curd mass. And if we ourselves prepared the mass from cottage cheese, eggs, sugar, sour cream and vanillin, then it must be baked. In this case, when the dough is placed in a baking dish, you need to put cottage cheese mixed with egg and other ingredients inside, smooth it out and bake for 30 minutes in a preheated oven.
When the base for the pie is baked, it should be allowed to cool. Then you need to put the curd mass inside, smooth it out and put it in the microwave again for 5 minutes. Next, remove the curd pie base from the microwave and let it cool slightly. Place fresh raspberries on top of the curd layer, sprinkle with powdered sugar and serve with tea. This shortbread pie with raspberries can be eaten either hot, freshly baked, or cooled.

Be sure to keep the shortbread dough in the refrigerator for 20-30 minutes. It should be cold when you use it to make the base for a delicious raspberry pie and make the sides. Even if you make the sides, and the dough is not chilled enough, when you put the base for the pie in the refrigerator, all the sides will slide off. Of course nothing bad will happen. In order to prepare such a dessert, you need to make sure you have the following ingredients on hand: 200 grams of flour, 100 grams of butter and sugar, an egg and one teaspoon of baking powder. We will make dough from these products. To prepare the filling, we need half a kilo of cottage cheese, one hundred grams of sugar and sour cream, 10 grams of vanilla sugar, 1 egg, a glass of raspberries. For decoration we will use powdered sugar. We will also need oil to grease the baking pan.
Ingredients:
For the dough for 12 pies:
- premium flour – 250 g + 2 tbsp. spoons
- wholemeal flour – 150 g
- milk 175 g
- sugar – 2 tbsp. spoons
- eggs – 2 pcs. + 2 squirrels
- butter – 50 g
- dry yeast – 2 teaspoons (1 sachet 10 g)
- vanilla sugar – 1 sachet
For filling:
- cottage cheese – 350 g
- powdered sugar – 2 tbsp. spoons
- egg yolk – 1 pc.
- frozen raspberries - a handful
- powdered sugar for sprinkling raspberries - 1 tbsp. spoon
Additionally:
- butter for greasing the baking sheet – 20 g
- milk for greasing pies - 1 tbsp. spoon
- egg yolk for greasing pies – 1 pc.
- powdered sugar for sprinkling pies - 2 tbsp. spoons
Cooking process
Making a pie with raspberries and cottage cheese according to this recipe is not at all difficult. First, let's prepare the dough. To do this, sift the flour together with baking powder into a bowl. Cut the butter into small pieces and grind with flour until crumbly. Separately, beat the egg and sugar. Add this mass to the flour and butter. Mix the dough. Then wrap it in cling film and put it in the refrigerator for half an hour.
At this time you can start filling. Grind the curd through a sieve. Combine sour cream, eggs, sugar, vanillin and add this mass to the cottage cheese. Beat until a homogeneous consistency is obtained.
Grease the baking dish with oil. Place the chilled dough into it, leveling and forming sides about five centimeters high. Then add the curd filling. Place raspberries on top of it. We press the sides a little so that there are no empty holes left. Our pie with raspberries and cottage cheese should be baked for about 35-40 minutes in the oven at 180 degrees. When it is ready, it should be removed and cooled. Then the dessert can be sprinkled with powdered sugar and served.
Cottage cheese with raspberries and starch
The raspberry pie is tender, dense and delicious. The mold is sprinkled not with flour, but with ground almonds, to obtain a delicious nutty crust.
Beat: 75 g granulated sugar and 2 eggs to form a fluffy, light mass. Add the zest of 1 lemon. The cottage cheese is rubbed through a sieve and added there too.
Pour in 40 g of corn starch. Place the dough in a mold, place raspberries on it and sprinkle everything with ground almonds again. Bake for 45-50 minutes at 180 degrees.
