Cooking features
The process of preparing pasta with mussels and creamy sauce is not complicated, but to get the expected result, the cook needs to know and take into account several important points.
- To prepare pasta with them, mussels are used that have already been peeled and have undergone a certain heat treatment in production. They have a pleasant pink-orange hue. If you see suspicious yellow-green spots on shellfish, this may indicate that the product was stored incorrectly or for too long; it is better to refuse such a purchase. Also pay attention to how much ice covers the mussels. The glaze should not be thick, and it should not resemble frozen snow. If you purchase packaged mussels, pay attention to the expiration date of the product and the integrity of the packaging. The presence of water or snow inside the bag should alert you, as these are signs that the product has been defrosted and re-frozen.
- Before preparing the mussel appetizer, it is best to let them thaw at room temperature or in the refrigerator. It is not recommended to speed up the process using a microwave and warm water. However, if there is no time to defrost the shellfish, they can be cooked without defrosting. They are then fried over medium to high heat until the excess liquid has evaporated, and then cooked according to the directions that accompany the chosen recipe.
- Mussels in a creamy sauce go best with long spaghetti-type pasta, but pasta with them can also be made from small pasta.
- When cooking spaghetti, do not break it, but place it in a pan of boiling water and, as it gets wet, dip it to the bottom with a spoon.
- For any type of pasta, it is best to choose durum wheat pasta. Such products are healthier and less boiled during cooking.
- Pasta is cooked in a large amount of water, which must first be boiled and salted. During the cooking process, the pasta is stirred so that it does not stick together and does not stick to the bottom and walls of the pan. They will stick together less if you add a spoonful of vegetable oil to the water during cooking. You should not rinse pasta prepared for pasta with mussels in cream either before or after cooking it.
- To avoid overcooking the pasta, you need to follow the manufacturer's recommendations on the packaging. Cooking time depends on the size of the pasta and the type of wheat it is made from.

Pasta with mussels in creamy sauce
Grocery list:
- vegetable oil - up to 40 ml;
- spaghetti - 400 g;
- fresh cream - 200 ml;
- mussels - 600 g;
- ripe tomatoes - 3 pcs.;
- garlic cloves - 4 pcs.;
- cheese (preferably hard varieties) - 50 g;
- mixture of peppers, fresh basil.
To purchase pasta made from truly “durum” wheat, look for a special marking on the packaging with the designation “group A”.
Preparation procedure:
- Defrost the mussels and simmer in a frying pan for up to three minutes.
- Boil the pasta based on the following calculation: for every 100 g of product, use 1 liter of bottled water. According to the rules of traditional Italian cuisine, the degree of readiness of pasta is determined by the concept of Al dente, which means “to the tooth.” Simply put, when you bite into a piece of pasta, you feel a certain “click” (crunch).
- However, let's return to our process. Scald the tomatoes with boiling water, remove the thin skin, and chop the vegetables into cubes.
- Add chopped garlic and tomatoes to the already heated shellfish, season with a mixture of peppers and salt, pour in cream, and bring the mixture to a boil.
- Add the pasta, drained in a colander, into the container, mix everything, and simmer for up to 5 minutes. We complete the process by sprinkling the dish with cheese shavings and decorating with basil leaves.
List of components:
- olive oil;
- garlic cloves - 4 pcs.;
- onion - 2 pcs.;
- red wine - 100 ml;
- peeled mussels - 600 g;
- cherry - 15 pcs.;
- spaghetti - 400 g;
- tomato juice, preferably natural, homemade - 1 glass;
- brown sugar "Mistral" - to taste;
- lemon juice - 40 ml.
Cooking order:
- Fry finely chopped onion in oil, adding a pinch of brown sugar if desired. When the pieces of vegetables are browned, add previously defrosted and washed mussels, cherry halves, citrus juice, salt and pepper. Fry the sauce components over maximum heat, actively stirring the mixture.
- Place tomato juice, a little sugar and salt, and sifted flour in a saucepan. Again, quickly stir everything and heat until thick. Pour in the wine and simmer the food for 5 minutes under the lid.
- Boil the pasta according to the instructions on the package. Place on plates and place mounds of mussels in tomato sauce on top.
- basil, spices.
Cooking sequence:
- Boil the shellfish in a small amount of drinking water until the shells open. This will happen literally in 4-5 minutes.
- Peel ½ of the tomatoes (scald with boiling water). We divide the second part of the cherry tomatoes into halves so that they retain their shape during the cooking process and create bright contrasting shades in the dish.
- Fry chopped onion and chopped garlic in olive oil, add tomatoes, continue the process for another 5 minutes.
- We prepare the pasta in a familiar way. The main thing is not to overcook the product!
- Add cream to the vegetables, heat, but do not boil. Add the yolks, pepper and salt the products, mix them vigorously.
- Add the mussels to the sauce, simmer for another 2 minutes, then add the pasta. We finish cooking after 3 minutes of keeping the pan on low heat.
Quickly, while the aromatic sauce has not yet thickened, serve the dish to the table. Don't forget to decorate the dish with basil leaves.
