Cottage cheese of any fat content is suitable for making pancakes. If you take a fattier version of the product, the taste will be more delicate. But low-fat cottage cheese makes pancakes less nutritious.
It is best to use paste-like cottage cheese; it requires virtually no preparation, you just need to grind it with a spoon and mix it with the rest of the ingredients. If you use cottage cheese in the form of grains, then it is better to first beat the product in a blender, adding a little kefir. Or grind through a sieve, although this method is more labor-intensive.
The second ingredient of this dish is kefir. Any version of the product will do, the main thing is that it is natural and of good quality.
To make the pancakes fluffy, you must use either baking powder (soda) or yeast. The first option allows you to prepare the dish much faster, but the yeast dough is more porous.
In any case, the dough must have a certain consistency. It should be neither liquid nor thick. The most suitable consistency is the thickness of sour cream.
Fry the pancakes by spooning the dough into a frying pan with oil. There is no need to make the pancakes very large. Usually one tablespoon of dough is used for one pancake. You need to fry at medium heat. Over high heat, the pancakes will burn on top, but the inside will not have time to bake and will remain raw.
Serve cottage cheese pancakes with sour cream. You can serve sweet pancakes with berry or chocolate sauce.

The dish will acquire a particularly delicate taste if you replace 1/3 or ¼ of the flour with potato starch. Kefir-curd pancakes are sometimes prepared with semolina, which gives the pancakes a fluffy, special taste. Instead of 3 tablespoons of flour, add the same amount of semolina to the dough.
Prepare a frying pan - heat it and grease it with vegetable oil. If you fry in a non-stick frying pan, then you will need literally 1-2 tablespoons of oil. If you cook in a simple frying pan, the oil layer should be at least 5 mm. The semi-liquid dough can be placed in a frying pan only when the oil is hot. Now you need to pour the sprinkles into the dough, mix and immediately fry (bake) the pancakes. Everything must be done quickly; the topping should not dissolve in the dough (the dish will have an unattractive color).
Place the pancakes into the pan using a spoon. One serving of dough is one heaping tablespoon. When frying, the heat should be slightly less than medium. If you turn the heat on high, the outside of the pancakes will quickly burn, but the inside will remain raw. If the heat is very low, the pancakes will take a long time to fry and will absorb a lot of fat.
Fry the pancakes on each side for 3-4 minutes until golden brown. It is convenient to turn them over with a fork or spatula. Place the finished pancakes first on a napkin so that it absorbs excess fat, and then in a stack.
Serve 2 pieces per serving.
Decorate the finished dish with sour cream roses (or simply pour sour cream on top) and put a little sprinkle on top. Pancakes can also be served with jam, jam, honey, chocolate topping, condensed milk, sprinkled with crushed nuts. For drinks, I recommend warm milk or hot tea.
The dish turns out quite sweet due to the confectionery topping. You should not cook pancakes for future use; they are only good when hot. When reheated, the dish loses its taste.

You can make fluffy pancakes from cottage cheese and kefir using the simplest recipe.
- 250 gr. cottage cheese;
- 400 ml kefir;
- 2 cups of flour;
- 1 egg;
- 3 tablespoons sugar;
- 1 teaspoon of soda;
- 0.5 teaspoon salt;
- 5 tablespoons of vegetable oil.
We take the kefir out of the refrigerator in advance so that it has time to warm up to room temperature. To make the kefir warm up faster, the whole packet can be placed in a bowl with warm (but not hot!) water. Pour warm kefir into a bowl, add soda to it and mix. Let stand for 5-10 minutes so that the lactic acid of the kefir extinguishes the soda.

- 0.5 cups of kefir;

- 1 egg;

- 0.5 teaspoon salt;
- 1.5 cups flour (quantities indicated are approximate).
Lightly heat the kefir, making sure it does not curdle. Stir dry yeast and sugar in warm kefir, add a couple of tablespoons of flour and set the mixture aside so that the yeast is activated.
While the dough is rising, we prepare the curd mass. Grind the cottage cheese with the addition of raw eggs and salt. When the dough increases in volume, mix it with the curd mass. Then we begin to gradually add flour. Add this ingredient gradually, mixing well. We need to ensure that the dough acquires the consistency of sour cream.
Place the prepared dough in a warm place for about one hour. Do not mix the risen dough. Take it with a spoon and put it in a frying pan with heated oil. Fry on both sides.
Zucchini-curd pancakes
