Recipe 3. Plum-apple charlotte

When it’s difficult to choose between apple and plum filling, make this pie. It can be baked both in the oven and in a slow cooker.

Ingredients:

  • flour - 1 glass;
  • egg - 4 pcs.;
  • sweet and sour apple - 4 medium fruits;
  • sweet plums - 8 berries;
  • a glass of sugar;
  • baking powder - 10 g;
  • butter - 50 g.

Preparation:

  1. Beat the eggs with granulated sugar with a mixer until they form a white foam.
  2. Sift the flour and mix with baking powder.
  3. Combine flour with beaten eggs.
  4. Melt the butter in a water bath, cool slightly and pour into the dough.
  5. Wash the apples, remove the skin and seeds, cut into small pieces.
  6. We remove the pits from the plums and chop them too.
  7. Add fruit directly to the dough and stir.
  8. If we bake in a slow cooker: grease the bottom of the bowl with butter, sprinkle with semolina or breadcrumbs. Pour the dough into it, close the lid and set it to “Baking” mode. After 45-50 minutes the dessert is ready.
  9. If in the oven: prepare the mold in the same way, pour out the dough and bake for half an hour at 180 degrees.
  10. Charlotte with apples and plums goes well with cinnamon. Sprinkle it over the finished pie.

Ingredients:

  • 3 eggs;
  • 1 glass of sugar (200 g, maybe a little less - 190 g)
  • 70-80 g butter;
  • 1 cup of flour with a small slide (140g);
  • 1 teaspoon with a small top of baking powder;
  • 12-15 plums.

How to bake:

First, we will prepare the mold and fruit, and then the dough, because it is of a sponge type, very fluffy and, in order not to settle, it must be baked immediately after preparation.

Prepare the mold: cover the bottom with parchment, grease the parchment and the walls of the mold with a thin but even layer of vegetable oil. Thin - because excessive greasing will prevent the dough from rising, and even - so that the cake does not stick to the paper or pan.

We prepare the plums: wash them, dry them and divide them into halves, removing the seeds. It is better to take plums of a variety such as “Hungarian” so that the pits can be easily reached.

Turn on the oven to warm up to 200-220C.

Now you can start preparing the charlotte dough.

Beat the eggs (yolks with whites) and sugar with a mixer: first at low speed, then at medium and then at maximum, until the whisks begin to leave melting marks on the thick, fluffy mass. For charlotte, you need to beat the eggs well, like for a sponge cake, then it will turn out fluffy.

Add softened butter to the beaten eggs and beat with a mixer until smooth.

Now sift the flour into the dough, add baking powder and mix with gentle movements - from bottom to top and in a circle.

The dough turns out thick, spreading in a wide ribbon - like this.

Pour it into the mold and distribute it with a spoon. And on top we lay out the plum halves, slightly submerging them.

And put the charlotte in the preheated oven. Bake at 200-220C for 20-25 minutes, the exact time will depend on your oven. When the charlotte becomes fluffy and rosy, try it with a wooden stick. Doesn't the dough stick? The pie is ready!

You can let it cool in the oven so that it doesn’t settle due to a sudden change in temperature. Then we take it out, carefully remove it from the mold and place it on a plate. I do this: after cutting along the edge with a knife, I open the pan, cover the pie with a frying pan lid and turn it over. Now it’s easy to remove the bottom from the pan and the parchment. Then I cover the pie with a dish and turn it over again to its normal position. And the charlotte ends up on the plate.

Sprinkle it with powdered sugar through a strainer.

Cut the charlotte with plums into portions and enjoy!

Biscuit dough goes wonderfully with juicy, slightly sour fruits. Enjoy your tea!

Plums and poppy seeds in charlotte are the baker’s personal preferences and a tribute to the seasonal harvest. If blue stone fruits are too sour for you, and the crunch of poppy seeds in the porous crumb seems unnecessary, feel free to exclude them and replace them with other additives! But this will be a completely different recipe, not for collectors, but for students - using plum and poppy charlotte you can master the technology of making quick pies as such.

The universal viscous dough is ready to “embrace” slices of fresh or canned apples, pears, peaches, any dried and candied fruits, whole and crushed nuts. A few basic manipulations, precise proportions, a bit of imagination, and in half an hour homemade cakes will be the reason for another tea party.

Culinary tricks

To ensure that 10 out of 10 plum charlottes turn out perfectly, follow these tips:

  1. If the cake is being cooked in the oven, you do not need to open the door until the characteristic smell of finished baking appears. If you constantly release the heat, the charlotte will not rise.
  2. It’s the same with a multicooker: you don’t need to open the lid until the process is finished.
  3. Since the top of the baked goods does not brown in the slow cooker, when serving, simply turn the pie upside down.
  4. You only need to place the mold in a preheated oven.
  5. To make the charlotte even more saturated with fruit juice, leave it to simmer in a cooling oven for 10-15 minutes.
  6. There is no need to remove the skin from the plums; after baking, they become soft.
  7. The best varieties of plums are sweet: prunes, raisins and others. Any apple is suitable for pie, but hard ones retain their shape better.
  8. Always make sure that the white is completely separated from the yolk. This way it whips better to stable peaks.
  9. Only fresh eggs are used for baking.
  10. Wheat flour can be replaced with rice flour. The result is a more tender and less calorie dessert.

Easy to prepare, charlotte has long become a favorite of housewives. You need very few products, most of them are always available at home. Creating a delicacy does not take more than an hour, and the result exceeds all expectations. Plums are tasty, but not the only option for fruit filling. Charlotte dough is a base for experimentation.

Grated plum pie in a slow cooker

Plums themselves are not often sweet, especially if it’s not in season. Nevertheless, attractive fruits beckon to you from store shelves, and now you are the happy owner of a kilogram of plums, and... Not sweet. What to do? You can make grated plum pie from them in a slow cooker!

A tender shortbread pie, and plums that will add a piquant sourness - what could be better. Of course, baking is not the best option for cooking every day, but for a holiday or just a day off, this recipe can be prepared to please your household.

See our delicious photo recipe below, repeat all the steps step by step, and the fragrant pastries will become the main decoration of your table!

To prepare a fragrant plum pie in a slow cooker, we will need the following ingredients:

  • 1 Ingredients:
  • 2 Step 1
  • 3 Step 2
  • 4 Step 3
  • 5 Step 4
  • 6 Step 5

Step 1

First you need to prepare the shortbread dough. All ingredients for it must be cooled, including the cutting board where the base will be kneaded. Sift the wheat flour directly onto a cutting board or deep bowl.

Take the butter out of the refrigerator, and while it is cold, grate it on a coarse grater, or chop it with a knife and add it to a bowl of flour, as shown in the photo below.

Next we send granulated sugar, soda, slaked with vinegar, vanilla sugar. Lastly, beat in the eggs and knead the dough with your hands until you get a homogeneous matte mass.

Divide the dough into two parts - larger and smaller, roll them into two balls, cover with a napkin and put in the refrigerator for half an hour.

Place the smaller ball of dough in the freezer after 15 minutes for the remaining time until half an hour is up. During this time we will have time to prepare the fruit for dessert.

Note: when kneading shortcrust pastry, some recipes advise adding powdered sugar rather than sugar. Then dishes made from such dough will be softer and more crumbly. Also, it is permissible to reduce the amount of sugar in the dough so that the baked goods do not turn out too sweet.

Step 2

Wash the plums thoroughly, remove the seeds and stems, and cut them into small rings or slices - the recipe will not suffer from this. If desired, you can even grind the plums through a sieve to achieve a more delicate structure for the plum pie in the slow cooker.

If desired, add a teaspoon of cinnamon and 2 tablespoons of sugar to the chopped fruit. This will be enough for the overall sweetness of the dish - after all, we poured almost a glass of sugar into the dough!

However, if you like even sweeter baked goods, or the plums are too sour, then of course you can increase the amount of sugar. Within reasonable limits, of course.

Note: you can change the recipe a little and mix the plums not with sugar, but with honey. The dessert will turn out just as delicious, with a light honey note.

Step 3

We take out a large ball of dough, roll it out on the table using a rolling pin, focusing on the size of the multicooker container plus the amount of dough for the sides.

We try to complete this action as quickly as possible - we need frozen dough. As soon as it begins to shine and melt, the baked goods will be significantly spoiled.

Grease the bottom and walls of the bowl with butter, carefully lay out the sand pancake, and level the sides.

Step 4

Since plums are quite juicy fruits, sprinkle a little wheat flour or starch on the bottom of the plum pie base in a slow cooker so that they absorb excess moisture. This is a mini-recipe for a juicy pie.

Place chopped fruits with cinnamon on top (if you cut the plums into slices, it is better to place them more carefully to achieve a festive, beautiful look of the dish).

It's time to take a small piece of dough out of the freezer. Rub it over the plums to make delicious shavings.
